The 2016 Australian Distilled Spirits Awards (ADSA) received
154 entries from 42 Australian distilleries, judged by leading
industry experts who blind tasted and assessed gins, whiskies,
rums, brandies, vodkas and liqueurs to find the best of the best.

Limeburners Distillery has taken home a total of three major
trophies at the 2016 Australian Distilled Spirits Awards, including
Champion Small Batch Spirit, Champion Whisky as well as the title
of Champion Australian Distiller. Limeburners has been distilling
whisky for 10 years and has a solid reputation for producing
sublime, world-class whiskies and spirits.
Limeburners Heavy Peated Whisky uses local peat sourced from
near the Valley of the Giants and premium WA malt. Released at
cask strength, last year’s expression won Australia’s Champion
Whisky Trophy at the 2015 ADSA and Australia’s only Gold Medal
for any spirit in the London International Wine and Spirits Awards.

INSPIRATION
The Old Fashioned is an absolute classic whisky cocktail and a
beautiful expression of the essential characters of the whisky.
INGREDIENTS
60mL Limeburners Single Malt Whisky Heavy Peat M226
7.5mL sugar syrup (2:1 sugar:water)
3 dashes Angostura Bitters
1 dash Orange Bitters
METHOD
Add all ingredients into a mixing glass
Stir and strain into rocks glass over ice
Garnish with orange twist

create premium gins and other traditional spirit products using a
“slow spirit” philosophy.
kis Old Tom Gin is lightly aged in small re-charred French oak
barrels. The addition of local aniseed and lemon myrtles adds
sweet characters to this classic old-style gin.

INSPIRATION
Australia is home to some of the most unique botanicals in the
world, and the masters at Kangaroo Island Spirits are well versed
in infusing those fierce flavours harmoniously. A zingy and
herbaceous variation on the Tom Collins, highlighting the candied
aromatics of lemon myrtle.
INGREDIENTS
45mL kis Old Tom Gin
15mL Lemon Myrtle tisane & thyme infused syrup
15mL Fresh lemon juice
Dash of soda
METHOD
Build over ice in a rocks glass
Garnish with rosemary sprig

2016 AWARD WINNING COCKTAILS
INSPIRATION
The inspiration for this cocktail was the prevalent use of trees,
namely oak for barrels, in the production of spirits around the
world. The “Martini on Elm St” makes use of Elm tree bark, leaf
and seed infused in a local fortified wine. From there it is a simple
3:1 Martini with a dash of Cacao & Macadamia Bitters.
INGREDIENTS
60mL Pure No. 1 Vodka
20mL Elm tree infused fortified wine
2 dashes of Cacao & Macadamia Bitters
METHOD
Stir and strain into Martini Coupette
Use smoking gun to place smoke on top of martini and
then seal in with Elm leaf cover
Garnish with Elm smoke/Elm Leaf

Joshua Crawford is a New Zealander by birth who has spent the
last six years working in Melbourne bars including Cookie, Eau
de Vie Melbourne, Lui Bar at Vue de Monde and The Boilermaker

Founded in 1925, the St Agnes Distillery and Barrel Halls carefully
and characterfully handcraft brandy that is testament to the
rewards of time, age, ambition and craft.
St Agnes XO is double distilled in small batch pot stills from
carefully prepared base wines. St Agnes XO is matured in small
barrels for a minimum of 15 years prior to blending and bottling.

The Japanese is a classic brandy cocktail that highlights the
fruitiness of the spirit. First mentioned in 1862 in Jerry Thomas’
bartender’s guide: “How to mix drinks: a bon Vivant’s companion”
INGREDIENTS
60mL St Agnes XO Brandy
10mL Orgeat syrup
2 dashes Angostura Bitters
METHOD
Add all ingredients into a mixing glass
Stir and strain into Martini Coupette
Garnish with lemon twist

in the far north of Western Australia. The Hoochery stands proud
of being 100% Australian owned and operated and wherever

Ord River Rum is a blend of six-ten barrels aged for two-six years
in recycled barrels from the Australian wine industry.

Using inspiration from a favourite rum classic, the Royal
Burmuda YC, this cocktail was created to highlight and showcase
the flavour found in this award-winning rum.
INGREDIENTS
40mL Ord River Rum
30mL Fresh lemon
20mL Spiced Pineapple Syrup (clove, star anise & black pepper)
10mL Grand Marnier or Pierre Ferrand Curacao
3 dashes of spanish bitters
METHOD
Shaken over cubed ice & served into a chilled coupette
Garnish with a dehydrated lemon wheel

Natural” wine, liqueurs, beer and distilled products. Castle Glen
Australia is located on the Granite Belt of Queensland, at 938m
above sea-level, with an amazing Cellar Door – “The Castle”.
Castle Glen Distillery’s Golden Knight is a Peppermint
Schnapps Liqueur with notes of herbal root. Its most prominent
characteristic is the 24kt Gold Flakes, a practice dating back to
the 16th Century. Drink straight or on the rocks.

INSPIRATION
The inspiration for the Good-Knight Stinger was a classic stinger
cocktail. During the “Stinger’s” heyday it was considered an ideal
nightcap for a night out in New York City
INGREDIENTS
30mL Bourbon
15mL Golden Knight Schnapps Liqueur
15mL Fernet Mentha
15mL Maple syrup
25mL Lemon juice
METHOD
Build in double rocks glass, top with crushed ice
Swizzle and crown with crushed ice
Garnish with mint sprig with powdered sugar dusted over

Kevin Peters has experience working in Sydney, Melbourne and
New York City. Whilst in the States, he had the opportunity to work
with a number of different liquor brands, creating recipes for a
number of renowned distilleries.
