If you are offering a selection of over 150 brands of Bier from
over 30 countries, you have to believe that Bier is beautiful –
and we do. Inspired by the Brasseries of Northern Europe,
we found a passion for European hospitality, entertainment
and Bier. We have created a selection of the best of Europe’s
most established and traditional Bier offerings with the most
unique selection of Canadian, American and local craft Bier.
From brewing to storing to pairing
and pouring, caring for Bier is
something we take seriously. For us
each step is a labour of love. Take a
look at the brewing process, the
craftsmanship involved in adding
just the right amount of malt, hops,
water and yeast – it really is an art!
Rest assured that when the Bier
rolls through our doors we know
what to do! It starts with our unique
keg system – probably the only one
of its kind in Canada – which uses
three different gas blends to help
make the perfect pour without
contaminating the liquid within.
The varying nitrogen and C02
concoctions help produce a pour
with the perfect levels of
carbonation. And the carbonation
has to be perfect, because those
tiny bubbles dictate how the foam
will form. If that frothy top is too
little or too much, then the Bier’s
beautiful bouquet of aromas can’t
bloom, which means the flavours get
all out of whack, which means the
entire glass is shot. Fine Bier is in
the details. And every little detail,
especially those as minute as
bubbles, counts.

into our food and Bier pairings. We
don’t just choose pairings. Each
item on our menu is created from
scratch and designed to pair
perfectly with a selection of our over
150 Biers. From schnitzels and
charcuteries to pasta and ribs,
each dish is designed to enhance
the Biers on our menu. Our staff
will take you on a guided journey,
ensuring each dish reflects and
complements the Bier we work so
hard to serve right.

BIER TERMS.
ABV — ABV or Alcohol by Volume denotes alcohol content.
Ale — One of the two main families of Bier; Ales are top-fermented at warmer
temperatures and require less conditioning time than Lagers.
Belgian-Style Abbey Ale — Inspired by Trappist breweries, Abbey Ales come in many
styles, and are characterized by bold flavours with alcohol by volume ranging from 6%
to 12%.
Bock — Germanic term for strong Bier. Usually dark, Bock can also be used to describe
strong Lagers and Weissbiers.
Bottle Fermentation — This process is also known as bottle conditioning. These Ales
are bottled with live yeast and sugar to produce a final fermentation. Typically, but not
always, this produces a stronger, more flavourful Bier.
Doppelbock (Doppel=Double. Bock=Strong.) — These “double strong” Biers are
usually quite malty in flavour, have immense complexity, and have an ABV of 7% to
10%.
Dubbel — A Belgian-style Ale that is rich and malty with spicy and dark fruit aromas.
Flavours are often sweet in the finish. This Bier usually has a relatively high alcohol
content of 6% to 9%.
Eisbock — This style is created by partially freezing a Doppelbock and removing the ice
to concentrate the flavour and alcohol content, which ranges from 9% to 20%.
Farmhouse Ale/Saison — Historically produced in the winter months for consumption in
the summer. This style was popularized by farmers along the borders joining France
and Belgium, who used the “last cut” from the final harvest. A very complex style of
Ale with fruity aromas and flavours, yeasty undertones and moderate tartness. Not
long ago this was an endangered style, but it is now seeing a revival thanks to Belgian
and North American brewers.
Fruit Bier — Any Bier flavoured with fruit, fruit syrup or fruit extract.
Grand Cru — French for “Great Growth.” Brewers use the best possible ingredients for
what is often a brewery’s signature Bier, produced only in small batches for limited
release.
Hefeweizen (See also Wheat Bier ) — A Bavarian style of Wheat Bier. The prefix “Hefe”
means “with yeast,” and so it is normal for a Hefeweizen to appear cloudy. This Bier is
characterized by the family of Bavarian yeasts that yield clovey, spicy banana aromas
and flavours. Also known as Weissbier or “White Bier” – White being an international
brewing term denoting Biers brewed from wheat. Weizen often, but not always, means
that the Bier has been filtered.
Hops — The cone of the plant Humulus lupulus, originally added to Bier for its
preservative effect. Today it is used mainly for bitterness and aroma. There are
numerous varieties of hops used nowaday.
India Pale Ale (IPA) (See also Pale Ale ) — Developed to withstand the sea voyage from
Britain to India, IPAs are pale or light amber in colour with elevated levels of hops.
India Pale Lager (IPL) — Rather than an Ale yeast, a Lager yeast is used for
fermentation, giving the Bier a cleaner, smoother, crisp finish.
India Style Session Ale (ISA) — A new Bier style that retains all the IBU power but with
a lower ABV. ISA are kettle-hopped (for bitterness up front) and dry-hopped (for flavour
and aroma after the boil) using quantities and varieties similar to those in a standard
American IPA. The ISA achieves a good flavour balance as well as a low ABV that
ranges between 4.2% and 4.5%.
Kölsch — Kölsch is the local brewing style of Cologne, Germany. This Bier’s unique style
is achieved through its brewing process. It is first top-fermented and then coldconditioned. This style is often known as Lagered Ale.
Lager — Along with Ale, Lager is one of the two main styles of Bier. It is bottomfermented and requires greater conditioning time than Ales. Lagering refers to the
process by which Biers are fermented and conditioned at cooler temperatures to
increase drinkability.
Lambic — Spontaneously fermented Bier from Belgium. Lambic is fermented with wild
yeasts and then aged in wood for up to three years. Left unsweetened, Lambics are
typically complex, tart and aggressive in flavour. Lambics can be served “straight”
while still young, blended and/or bottle-conditioned to create Gueuze, or refermented

with fruit. In the latter case, the traditional Biers are known as Kriek (cherries) and
Framboise (raspberries). Very little Bier in the Lambic style is produced outside of
Belgium, but it is becoming an increasingly popular trend in North America. True
Lambics come only from the Senne Valley in Belgium.
Malt — A foundation ingredient in Bier in which barley (and/or adjuncts) is steeped in
water, germinated and then kilned during the brewing process.
Mash/Mashing — A stage in the brewing process in which barley (or adjuncts) is added
to water and held at a constant warm temperature to allow the natural starches to
convert to sugars. The sugars then provide yeast with its necessary food to convert
into alcohol.
Pale Ale (See also India Pale Ale ) — A well-hopped Ale of British origin. Typically amber
or copper in colour, Pales were so named because of their lightness and clarity
relative to the popular Porters and other dark Ales of the era. Modern Pale Ales
brewed in North America tend to be assertively hoppy and bitter.
Pilsner/Pilsener — A style of Lager that includes Bohemian, German and Continental
Pilsners. Originating from Pizen, in the Czech Republic, a Pilsner is an all-malt Bier with
a pronounced flowery hop aroma and dryness created by its native Saaz hop, lagered
for drinkability.
Porter — A characteristically dark brown Bier of English origin, Porter is said to have
been popular with transportation workers of Central London, hence the name. Black
and chocolate malts are typically used in this well-hopped, medium-bodied Bier.
Quadrupel (Quad ) — A Belgian-style Ale originated by the Trappist brewers at La Trappe.
This is a dark Ale that ranges in colour from deep red to brown with garnet hues.
Offering rich and deep fruity notes and little hop character, these are very strong Ales
with ABV ranging from 9% to 13%.
Reinheitsgebot (Bavarian Purity Law ) — The Reinheitsgebot, or Bavarian Purity Law,
signed by Duke Wilhelm IV of Bavaria on April 23, 1516, decreed that “the only
ingredients used for the brewing of Bier must be water, barley and hops.” Upon its
discovery, yeast was added to complete the list of only four ingredients allowed for
brewing.
Red Flanders – Flemish Sour — Two styles of Belgian Ales brewed with special yeast
strains producing a Bier that is often sour from being aged and matured in oak casks
or stainless steel over extended periods of time.
Session Bier — A British term used to describe a Bier that may be consumed during a
“drinking session” because of its high drinkability, thanks to its relatively low alcohol
content.
Stout — A very dark Ale, originally called Stout Porter. Several styles exist, including the
classic roasty, coffee-ish Irish Dry Stout, rich and creamy Oatmeal Stout, strong
Imperial Stout and the sweet and strong Caribbean Stout.
Sugar — Sugar gives yeast the “food” it needs to produce alcohol in the brewing
process. Sugar is naturally produced during the mashing process, but sugars are also
occasionally added in various forms, from raw to fructose and syrups. Sugars are also
added to Biers that are bottle- or keg-fermented; these are often known as priming
sugars.
Tripel — Belgian-style Ale that is bright yellow to gold in colour with a dense creamy head
and spicy, yeasty fruity aromas and flavours with a sweet finish that comes from its
high alcohol content, typically ranging from 8% to 11%.
Weissbier (See also Hefeweizen, Wheat Bier or Witbier ) — This term is used almost
exclusively in the southern German state of Bavaria. Weiss is German for “white,”
referring to the colour of the foam that arises during the top-fermented brewing
process.
Wheat Bier (See also Hefeweizen, Witbier or White Bier ) — Used generically, this term
describes any Bier with a portion of wheat in the mash. Unless a specific style is
identified, a Wheat Bier is usually a light Ale with a faintly citrusy flavour.
Wet Hop Technique — A method using fresh or “wet” hop flowers rather than the more
commonly used dry or pellet version of this key ingredient. This expensive brewing
process offers fresh hop flavour and aromas.
Witbier (Also known as a White Bier ) — Belgian style of Wheat Bier brewed with a
large portion (30% to 50% of the total grain) of unmalted wheat and flavoured with
coriander and orange peel.
Yeast — One of the four main ingredients in Bier, yeast is a single-celled fungus,
capable of fermenting sugars to produce alcohol, carbon dioxide and other trace byproducts. Brewers’ yeasts are broadly divided into two categories: Ale yeast and Lager
yeast.

The Ontario Craft Brewers is an association of 45+ small brewers dedicated
to making great tasting, high-quality craft Bier in Ontario. Ontario Craft
Brewers brew their Biers locally using fresh, all natural ingredients in
communities throughout Ontario — from the Ottawa Valley to Windsor and
Niagara to Muskoka and as far north as Kenora. Handcrafting more than
450 premium Biers, Ontario Craft Brewers employ almost 1,000 people in Ontario,
accounting for almost 30 percent of the overall brewing employment in the province.
OCB's long-term vision is to make Ontario a North American Centre of Excellence for
Craft Brewing. Funding provided by the government of Ontario.

distillery district, this organic brand pays
homage to Canadian farmers West of the
100th meridian.
Brewing in Ontario since 1985, the
veteran Brewmaster Charles MacLean is
still at it, now in Hanover, Ontario. The
Farmhouse Blonde showcases Ontario
hops and malted barley.

Great Lakes Pumpkin Ale
Brewing since 1996, Muskoka Brewery
takes a left turn from the traditional IPA
with this “India Session Ale.” This style is
meant to have the flavours of an Americanstyle IPA but at a more “sessionable” ABV.
This limited release is brewed for
the fall with real pumpkin, cinnamon,
clove, nutmeg and allspice.

A mix of a unique base Bier and
house-made blood orange soda. The Bier
and soda is first created then mixed with
blood orange juice. Finally blood orange
and grapefruit zest are added.
Ken Woods started the brewery
back in 1999 in Oakville, Ontario. In 2008
the brewery headed east to Etobicoke and
has been there ever since. Dubbel
Entendre is Black Oak's version of this
traditional Belgian style.

home brewers, Blue Point is Long
Island’s first microbrewery. Their flagship
Bier, “Toasted Lager,” is the recipient of a
World Bier Cup Gold Medal.

LAGERS.
The word Lager comes from the German “Lagern,” which means to
store. In the early days of Lager brewing, many brewers would store their
Bier through the summer in the caves of the Bavarian Alps. These caves
were cooled with blocks of ice taken from frozen lakes in the winter
months. The long maturation over the summer let the yeast settle to the
bottom and left the Bier with a cleaner taste and paler colour than other
Biers of the time.
These Bavarian Lagers were much darker than the golden Lagers
that dominate the market today. These dark brown or black Lagers,
known as Dunkel or Dunkles, are still produced in Bavaria today.
Today, Lagers come in all shapes and sizes, from crisp, golden
Pilsners to dark, roasted Dunkels.
BLONDE LAGERS.
In the early 19th century, Bavarian brewers began experimenting with brewing
techniques that involved storing their Biers in cold Bier cellars for prolonged periods,
using bottom-fermenting yeast. After an initial fermentation, the Bier would be given a
second lagering period at a low temperature, and then would be stored in refrigerated
Bier cellars. They could be kept for a few weeks or several months, during which time
the drink would mellow and clear.

The Amber Lager was first introduced around 1840 in Vienna Austria by Anton Dreher,
the renowned brewer of the Schwechat Brewery. He lightly roasted a new type of malt
in his kilns and was rewarded with an elegantly reddish new Bier style that came to be
known as Vienna Lager. This technique was soon adopted by his friend and fellow
brewer Gabriel Sedelmayr Jr. of the Spatan Brewery in Munich and thus the Märzen, or
March Bier, style was born. In modern times, Amber Lagers are brewed all over the
world, by brewers following the blueprint of this classic style to create wonderfully
sophisticated Biers full of toasted bread and caramel notes.

PILSNERs
The town of Plzen in Bohemia had been making Bier since the 1200s and, in 1842, the
Bavarian brewer Josef Groll travelled there and tested a new Lager recipe. Groll’s new
brewing techniques produced the very first golden, clear Bier in Europe. This drink
became known as Pilsner, which means “from Plze” in German. The town began
producing this golden Bier on a large scale, with enormous cellars cut into rock for the
lagering process.

BLOND ALES.
Although the first incident of fermentation is lost to the pages of history,
our favourite tale of Bier’s beginnings is as follows: After baking bread, a
young woman got caught in a rainstorm and abandoned her loaf to the
elements. When the woman returned after the storm, she found the
bread soaked in water. After tasting the water-soaked bread, a mild
sense of “happiness” came over her — and the rest is brewing history.
One of the two main families of Bier, Ales have been around much
longer than their Lager counterparts. Ales are fermented with a topfermenting yeast strain that usually performs well at warmer
temperatures. This made Ale ideal for brewing in the days before
refrigeration. Ales tend to be more complex and bolder than Lagers, and
are credited with starting the craft Bier movement.

The Tripel style as we know it today can be attributed to the Westmalle Trappist
Abbey in Belgium. Both Trappist and other monastic brewers had been producing
high-quality Biers for years, but it wasn’t until after the Second World War that the
abbey of Westmalle produced this golden, fruity, extremely dry elixir to try to compete
with growing popularity of Pilsner and Pale Ale in Belgium. This style has since been
taken up by many other Belgian brewers, as well as craft brewers in North America.
Triples are refined but bold Biers that pack a punch both in flavour and alcohol content.

PALE/AMBER ALES
Like many Bier styles, Pale Ale resulted from an innovation in brewing technology.
The brewers in Burton-on-Trent in England were looking for a way to produce a more
consistent and paler Bier. The kilns of the time used wood, which was difficult to
control and often resulted in dark roasted or even scorched barley. They found that
coke, a processed form of coal that burns hot and steady, gave them the desired
effect — a clear, amber or copper coloured Ale.

INDIA PALE ALES
In order to provide Bier to British soldiers stationed in Bombay, India, in the late
1700s, the brewer George Hodgson, decided to create a Bier to weather the sea
voyage. George increased the hop (a natural preservative) content in the Pale Ale,
which he knew would help the Bier in transit. He also understood the impact of
increased alcohol as a preservative and brewed his Bier accordingly to accommodate
the long journey. IBUs (International Bittering Units) are also used to describe these
Biers. This scale is based on the bitterness of Bier upon completion of aging and
ranges from 0 to 100.

The name Porter was first used in the 18th century because of this style of Bier’s
popularity with dock and hotel porters. Originally created from a blend of Brown Ale, Pale
Ale and “stale,” or well-matured Brown Ale, Porter has gone through many style and
colour transitions over the years but has come to be known as a dark brown to black Bier
with a nice roasted malt character. The term Stout was applied to stronger, darker
versions. Stout flooded into Ireland from London and Bristol when a Dublin brewer named
Arthur Guinness decided to fashion his own interpretation by blending Porter with some
unmalted roasted barley, and in so doing produced a style known as Dry Irish Stout.

WHEAT BIERS
Wheat Biers are traditionally part of the Ale family, but unlike most other
Biers, they have a grain base largely made up of malted and or unmalted
wheat. Fermented with specific strains of Wheat Bier yeast, these Biers
can range from pale, light and fruity, to dark, bold and spicy.
WITBIERs
Witbiers are usually brewed with a minimum of 30% malted wheat. The rest of the
malt bill can include barley, malted and unmalted wheat. They are almost always
bottle-conditioned. Orange peel and coriander are staple ingredients, to which brewers
often add a secret spice.

CIDERs.
Apple trees were growing in the UK well before the Romans came, but they were the
ones who introduced organized cultivation. Cider was produced in substantial
quantities on farms across England and it became customary in the 18th century to
pay a portion of a farm labourer’s daily wage in Cider. A typical allowance on a farm
was three to four pints per day. Labourers were rated by the amount they drank;

Ginger Bier has been brewed in England since Victorian times. True Ginger Bier is a
mixture of sugar, ginger, often lemon juice, and a bacterial agent called Ginger Bier
Plant, which ferments the mixture. Production of Ginger Bier peaked in the early
20th century, but fell drastically during the Second World War. There are still a few
traditional Ginger Bier producers in the world, but what most people know as Ginger
Bier or Ginger Ale is just flavoured soda that is artificially carbonated. Ginger Bier can
be either alcoholic or alcohol free.

Although brewing was once commonplace at abbeys across Europe,
today there remain but a handful of these monastic breweries. The most
famous are the celebrated Trappist breweries of Belgium and the
Netherlands – Achel, Chimay, Orval, Rochefort, Westmalle, Westvleteren
and La Trappe. While the size of the breweries and the types of Ales
produced vary dramatically from abbey to abbey, each one must meet
stringent criteria in order to maintain its Trappist designation.
1. The Bier must be brewed within the walls of a Trappist abbey,
by or under control of Trappist monks.
2. The brewery, the choices of brewing, and the commercial
orientations must depend on the monastic community.
dUBBELs
“Double” Bier. Dubbels are a strong brown Ale with low bitterness, a heavy body and
a malty, nutty finish. These Biers have an ABV of 6.5% to 8%, a colour that runs the
range from dark amber to copper and bitterness from 15 to 25 IBUs.
STRONG DARK biers
Most Biers in this style range from 8% to 11% ABV and are deep amber to copperbrown in colour. These Biers are dark and complex, with a pronounced richness and a
low bitterness of about 20 to 35 IBUs.
TRIPELs
“Triple” Bier. Tripels run from 7.5% to 9% alcohol by volume, and are brewed with high
carbonation and high attenuation yeasts to reduce the taste of alcohol. Colour runs
lighter than Dubbels and bitterness ranges from 20 to 40 IBUs, though most Tripels
have greater than 30 IBUs.
QUADRUPELs
Inspired by the Trappist brewers of Belgium, a Quadrupel is a Belgian-style Ale of great
strength with bolder flavour compared to its Dubbel and Tripel sister styles. Typically a
dark creation that ranges within the deep red, brown and garnet hues. Full bodied with
a rich malty palate. Sweet with low bitterness and an ABV range of 9% to 13%.

Brewed by De Koningshoeven Brewery, the name meaning the “King's Gardens.”
The land was donated by the Dutch king to monks who had moved

The Abbey of St-Remy, in the southern part of Belgium, was founded in 1230

SOUR STYLE.
The Flanders Red Ales of West Flanders and the Oud Bruin Ales of East Flanders are
Biers that get their signature sweet and sour flavour from the blending of young and
aged Biers that have been exposed to wild yeast strains during the brewing process or
during maturation. These Biers are often described as wine-like and fruity, with
refreshing tartness and acidity.

Brewed in the style known as “Old Brown” or “Flemish Burgundy,” this
wonderfully sour Bier is matured in oak casks for more than a year before
bottling. This imparts a wine-like, slightly acidic flavour balanced with just the
right amount of malt.
LAMBICs.
Brewed in the Zenne Valley of Belgium, Lambics are Biers brewed through
spontaneous fermentation thanks to the presence of a specific wild yeast. Probably
the oldest recognizable style of Bier, they date back to 1559. Lambics are loved by
connoisseurs but an acquired taste for many, as the wild yeast gives them tart, acidic
qualities that make them unlike most other Biers. Lambic-style Biers can take years of
aging and careful blending of multiple batches before they're ready to drink. Lambic
can be drunk direct from the barrel, but usually it is used as base for these six other
Biers (Geuze, Faro, Kriek, Framboise, Pecheresse and Cassis).

Radlers.
Radler, which means cyclist in German, was invented on a hot summer day in June
1922, when a local innkeeper found his Bier garden (the Kugler Alm) inundated with
13,000 cyclists. When supplies started running low, Kugler decided to stretch what
was left by mixing the remaining Bier with a poorly selling lemon soda in a 50:50
ratio. Radler was born.
