Long Island Farm to Preschool news
Long Island Farm to Preschool’s last few
weeks are upon us. We have had a
wonderful season and have immensely
enjoyed being able to bring farm fresh
produce to you and your families.
We realize that some families are just now
joining us, so hurry down and take
advantage of what LI Farm to Preschool
has to offer. Each week at our markets we
cook a new recipe and provide tastes and
recipes to take home. Parents also receive
a new kitchen tool weekly, as well as a $2
coupon to spend at the market. All of our
markets accept cash, debit, credit, SNAP
benefits, and WIC and Senior FMNP
checks. We also have Fresh Connect
checks, which are $2 coupons given for
every $5 spent in SNAP benefits.
Last week’s recipe for Lemony Garbanzo
Bean Dip was a nice, lemony twist on
hummus, with cumin and cilantro added to
spice it up. If you missed it, stop by the

Many families are busy with their
transitions to fall and back-to-school, but
that is no reason to let summer’s healthy
habits slip away. Be sure to check out our
sidebar this week for a few tips on how to
stay healthy and active as a family.

wayside! Finding a few
simple things that you can do
as a family will help everyone
stay consistent and motivated.
Here are some great tips for
staying healthy and active as a
family:
-Share meals when possible.
Serve a variety of whole
foods, but keep mealtime
simple and relaxed.

Take advantage of the markets as late
summer produce turns to fall in our
remaining couple of weeks. We should
soon see the addition of apples and winter
squash, both of which store well. So come
on out and stock up today.

your home, but don’t forbid
any foods.

some other type of exercise as
a family.
-Get kids in the kitchen to
help with the cooking.
-Be a role model for your
children. Let them see you
eating a wide variety of foods,
exercising regularly, and
appreciating the body you
have.
Melons
Have you ever come
home from the grocery
store with a melon you
felt certain was going to
be delicious, only to open
it up and find it to be
underripe, flavorless or
mealy? Melons are often
picked underripe for shipping and then never seem to ripen
up enough to be sweet. Purchasing your melons at the
farmers market will ensure that the melon has been picked at
just the right time to deliver much better flavor. Aside from
watermelon, which is best served ice-cold, melons should be
served slightly chilled to experience the full fragrance.

on a hot day.
When shopping for melons, choose ones that are free of
cracks, bruises or dark spots. Cantaloupe should smell
sweet and be soft to the touch on both ends. The
background color should be golden tan, not green.
Honeydews should have a creamy rind with a touch of
yellow and should feel slightly soft. Watermelons should
feel firm with a waxy sheen on the skin. Those that
sound hollow when tapped are not yet ripe, and those that
sound dull are filled with juice and ready to eat. All cut
melons must be kept in an airtight container in the
refrigerator and used within five days.

Melons are a member of the gourd family and are cousins of From Just Say Y es to Fruits and V egetables
squash and cucumber. They are a good source of vitamins

Ingredients
3 cups cubed watermelon
2 cucumbers, thinly sliced
1/2 chopped onion
1 carrot, thinly sliced
1/4 cup apple cider vinegar
1 teaspoon red pepper flakes
2 tablespoons chopped mint
1 tablespoon chopped cilantro (optional)
salt and pepper to taste
Directions
Combine all ingredients in a large bowl and toss gently.
Chill, serve and enjoy!
Refrigerate leftovers.
