Eating the Mediterranean Way
While there is no shortage of fad diets promising weight loss and other health
benefits, the Mediterranean diet pre-dates
these, and research repeatedly associates
the Mediterranean diet with reduced risk for
several chronic diseases. The Mediterranean
diet is not a specific diet plan. Instead, it
is a style of eating that features foods
traditionally eaten in countries surrounding
the Mediterranean Sea. Overall, the
Mediterranean style of eating is characterized
by a high intake of fruits, vegetables, beans,
whole grains, fish, nuts, and olive oil. Intake
of meats, dairy, and sweets is limited. The
combination of these foods is responsible
for numerous health benefits, including
weight loss and reduced risk of cancer, Type
2 diabetes, heart disease, and Alzheimer’s
disease. Here are some tips for eating the
Mediterranean way:
• Eat more vegetables. Fill half your plate
with vegetables at lunch and dinner. Try
experimenting with different ways of
preparing your vegetables, such as grilling
or roasting.
• Choose fruit for dessert. The natural
sugar in fruit can satisfy your sweet tooth
while also providing fiber, vitamins, and
antioxidants.
• Eat seafood twice a week. Oily fish
like salmon, sardines, mackerel, lake
trout, and albacore tuna are good
sources of omega-3 fatty acids, which
fight inflammation and improve brain
and heart health.
• Go vegetarian one day per week. Some
of your favorite meals like soups, pasta, and
tacos, can easily be made vegetarian by
swapping the meat for beans and extra vegetables.
• Switch to whole grains. Whole grains offer more fiber, which promotes fullness, stabilizes blood sugar, and helps lower cholesterol. Barley, brown rice, couscous, and farro are some traditional Mediterranean
options.
• Use good fats liberally. The Mediterranean
diet is 30-40% fat with olive oil as the primary
source of dietary fat. Other heart-healthy fat sources include nuts, sunflower seeds,
avocados, and olives.
• Flavor your foods with herbs and spices.
Set the salt shaker aside and instead try basil, oregano, thyme, or mint to season your meals.

The Kennedy Health Care Foundation creates a critical link between Kennedy Health and the
people in our community who rely on Kennedy for their health and wellness.
When Phyllis White saw first hand how the cold impacted her late sister Priscilla McClure –
a Kennedy Dialysis patient–during her treatments, she came up with a solution. She designed
a sweatshirt that allows access via zippers for treatment, keeping the patients warm. White
and her family and friends began donating these specially-made “Pris-Zippity” sweatshirts (so
named in Priscilla’s memory), to Kennedy’s Dialysis Centers. Pris-Zippity’s donations are currently helping more than 200 patients at Kennedy’s Dialysis Centers.

While most inguinal hernia repairs
are still done as open surgeries, using
robotic assisted laparoscopic surgery for
hernias offers several key advantages,
according to Dr. Sandau.
Nick Demayo (above), 76, had a
simple goal from his hernia surgery:
He wanted to make sure the procedure
didn’t disrupt his life too much –
including his weekly golf game.
The retired aircraft mechanic and high
school aviation instructor had bad
memories from a prior hernia surgery
in the 1980s. After that procedure, he
suffered extreme pain, and had to miss
a few months of work to recuperate.
This time around, Demayo got a
recommendation for a surgeon from
his son, Nick Jr., who works in medical
device sales. The elder Demayo opted to travel from his home in Jackson, N.J.,
to consult with Roy

Dr. Sandau pioneered the use of
EndoWrist Stapler technology on the
da Vinci® Si™ System, making Kennedy
the first hospital in New Jersey (and
one of the first in the nation) to deploy
this advanced robotic technology.
The technology enhances surgical
capabilities and provides an alternative
to many traditional, open surgeries,
as well as conventional laparoscopic
procedures.
“Robotics makes more delicate surgeries
easier for the patient and the surgeon,”
Dr. Sandau says. “It makes the surgery
more fluid and easier than you would

procedure; mimics the surgeon’s
hand-motions, allowing for faster
suturing; and ultimately provides
more control to the surgeon.
“The camera is controlled by the robot,
which is controlled by me,” Dr. Sandau
explains. “It only moves when I tell it
to move.”
“It really is a surgical tool – it’s not
something that teaches me how to
operate. I know how to operate, it’s making my surgeries easier to do.”
For Demayo, who has four children
and nine grandchildren with his
wife, Florence, the same-day hernia
procedure went so smoothly that he
only had to take one dose of pain
medication, post-operation.
“Dr. Sandau was terrific and very
personable,” Demayo says. “He
explained everything he was going
to do.”
On the day of his procedure, Demayo
was back home, almost before he
knew it.
“They prepped me, I went in for surgery,
and when I came out, I didn’t even
realize they had operated on me,”
Demayo says. “I had no pain whatsoever.”

New, Cutting-Edge Technology Helps Spot
Lung Cancer Earlier
By Dr. Peter Saccone, Kennedy Health Pulmonologist
Over the past 50 years, we have seen little advancement in
the survival of patients with lung cancer. Most cite a five-year
survival rate of around 20 percent, and, like all cancers, early
detection is vital.
Kennedy Health now offers Electromagnetic Navigational
Bronchoscopy (ENB), a procedure using a combination
of conventional and CT-virtual bronchoscopy. This new,
innovative process – which only a few area physicians are
proficient at – allows doctors to look at airways through a
thin viewing instrument called a bronchoscope. Because
of this, physicians can safely navigate a catheter into the
outermost areas of lungs to safely perform biopsies.
Completed as an outpatient procedure, patients are able to
go home afterward. There is no cutting, and most patients
return to their normal level of activity by the next day.
Biopsies are immediately reviewed, and most patients have
answers and a plan of action before they go home.
ENB safely reaches any area of the lung with minimal
risks, and can be further combined with endobronchial
ultrasound (EBUS), which lets doctors sample lymph nodes
and other areas of the chest surrounding the lung. EBUS also
allows for further diagnosis of lung cancer and correct cancer
staging at the same time. Previously, additional testing,
procedures and/or surgery was required. This immensely
shortens the time between diagnosis and treatment,
increasing survival rates.
The greatest benefit of this procedure is the ability to routinely catch
early stage lung cancer. When cancer is found in a low stage (I or II),
the chance of CURING it, rather than just treating it, is now real. ENB and
EBUS can also be used for diagnosing non-malignant conditions, such
as sarcoidosis, vasculitis, and infectious etiologies, to name a few.
Anyone with a nodule larger than 8mm can be considered for ENB. The
procedure is ideal for high-risk patients with a nodule greater than 8mm,
or low-risk patients with a suspicious-appearing nodule. However, any
patient will gladly be evaluated for ENB.

GPS-style tools help surgeons remove brain tumors with greater precision
When Madeline “Vicki” Romer, 65,
arrived at the Emergency Department
at Kennedy University Hospital in
Washington Township in March 2016,
she had no idea she would immediately
require brain surgery.
For several weeks, the Runnemede resident,
had suffered from severe headaches and
some memory loss.
The Kennedy ED team jumped into action,
ordering a CAT scan and MRI. Within an
hour, their quick work revealed a tumor
the size of a small egg.
The tumor was putting pressure on the
frontal lobe, the part of the brain that
controls memory and personality,
and had to be removed,
according to Eddy
Garrido, MD, FACS
(right), an Associate
Professor of Neurosurgery at Thomas
JeffersonUniversity
whose medical practice is based in Sewell.
Dr. Garrido performed the four-hour
procedure at the Kennedy Neuroscience
Center in Washington Township, using
a neuro-navigation MRI system, which
acts like a GPS to guide the surgeon to
the tumor.
“It shows you how much of the tumor
you have removed and whether you
have removed it completely,” Dr. Garrido
says. “We used the tool to guide us,
and were able to completely remove
the tumor.”
The technology, used in conjunction with
an ultrasonic aspirator, allowed the tumor
to be broken down gently during the
course of the procedure. The additional use
of magnification and a microscope “makes
the surgery even safer,” Dr. Garrido explains.
Romer proved a model patient – she was
up on her feet the day of her surgery, got
discharged two days later, resumed driving
after recuperating at home for two weeks
and returned to work less than six weeks
later. She works as a claims processor for
Kennedy in Cherry Hill.
“I feel great – I’m doing everything right
back to the same level,” Romer says.
Having been previously treated for cancer
at Kennedy, Romer came away impressed
by the combination of state-of-the-art
technology and hands-on care. The nursing
staff in the Critical Care Unit seemed to
anticipate her every need, and after surgery
found time to help her back on her feet.
“The care I received was excellent, and
I don’t know if they were even aware I
worked at Kennedy,” Romer says. “All the
patients on the floor received treatment
as excellent as my own.”
For Dr. Garrido, who came to Jefferson and
Kennedy in September 2015, after a 35-year
career at Lancaster NeuroScience & Spine
Associates in Lancaster, Pa., the “team
approach” involving acute and critical care
specialists is crucial to successful patient
outcomes. “From the doctors to the nurses
to the imaging people, it’s really state-ofthe-art care,” he says.
Kennedy’s team gets back up from telemedicine robots that allow critical care
doctors at Jefferson to evaluate patients
with the help of on-site staff. “It’s like an
extra layer of security,” Dr. Garrido says.
For Romer and her family, little touches, such
as the presence of a harpist, who volunteers
her time to play for patients, made a big
difference. “It was such a surprise to see a
lady with the harp,” Romer says. “It was very
soothing and relaxing.”
Most of all, they credit Kennedy’s dedicated
staff with helping her heal so quickly.

Can you explain a little bit about what Osteopathic Manipulative
Medicine (OMT) entails?
Osteopathic Manipulative Medicine focuses on the skeletal system, including
the muscles, bones/joints and soft tissue structures in the body. I use a lot
of hands-on treatment techniques in conjunction with conventional medical
care. It is a more holistic and integrative approach to patient care.
How long is a typical session and how often is it usually needed?
A brief list includes: neck pain, back pain, headaches, scoliosis, pregnancy
related pain, fibromyalgia, knee & hip pain, multiple sclerois and other
neurologic problems, etc. Typically, the first visit is 45 minutes during
which time I will take a thorough history and do a full exam. Most treatment
sessions are between 10-25 minutes, depending upon the problem.
Is Osteopathic Manipulative Treatment painful?
It should not be painful. You may experience some pressure or mild
discomfort with certain techniques, but I try to tailor each treatment to
the specific patient’s tolerance. I always have patients give me feedback
during treatment so if they are in any pain we adjust what we are doing.
