Name: Alison Houghton Recipe Title: Grilled Chicken Drumsticks with Rice and Beans Recipe Ingredients: For a serving of 6 people Grilled Chicken Drumsticks (per 2 lbs of chicken drumsticks) Marinade: • 1 cup of extra virgin olive oil • 1 clove of fresh, finely chopped garlic • 1 tablespoon of sea salt • 1 tablespoon of herbs de provence • 1 tablespoon of black pepper • 1 tablespoon of oregeno • 1 teaspoon of kosher salt Rice and Beans: • 1 bag of yellow rice • 1 chopped onion • 1 chopped red bell pepper • 1 fresh finely chopped clove of garlic • 1 can of Goya Black beans • 1 tablespoon of garlic salt • 1 tablespoon of red pepper flakes Recipe Instructions: Chicken Marinade Chicken drumsticks for at least 30 minutes before cooking in a pan. Cook in Pan on medium heat for around 20 minutes, flipping half way through, and until no pink in middle and meat thermometer reads ok, Rice and beans: Cook rice and Beans separately, then add them together in one pot and stir until they are one. Then add the onion, bell pepper, garlic salt, and red pepper flakes. Then serve.
