Making stellar wine is
the sole focus at Bodega Septima, a pristine winery situated in the acclaimed
Mendoza winemaking district of Argentina. Founded in 1999, the winery was the
seventh (in Spanish “septima”) winery introduced by the Codorníu Group, known
for its world-famous cava and still wines from Spain and Napa Valley. Imported
exclusively by Aveníu Brands, Septima produces authentic wines that are modern,
with a nod to tradition.
The Septima Winery –
Inspired by Incan Architecture The inspiration for the Septima winery came from a blend of ancient Incan monuments and Spanish winemaking
ingenuity, as interpreted by the foremost Mendoza-based architectural team of
Eliana Bórmida and Mario Yanzón. True to the native traditions of the area, the
winery was built from natural stone hewn from the Andes range, then piled
in the “Pirca” tradition found in the sacred places of the local Huarpes Indians.
Deep foundations provide for a sustainable approach, which follows the natural
slope of the land, while also protecting the building from the area’s exposure
to earthquakes. State-of-the-art technology perfected by the Codorníu Group’s
global teams provides a modern complement to Septima’s authentic architectural
treatment.
The Wines
Bodega Septima produces an outstanding
range of 100% varietal wines sourced from
vineyards in Luján de Cuyo and Valle de Uco.

The winery’s Septima Gran Reserva, a blend
of Malbec, Cabernet Sauvignon and Tannat
sourced from three premier vineyard sites,
represents the pinnacle of Bodega Septima’s
production. Only made if outstanding conditions and wines prevail in a given vintage
year, the wine is vinified and aged separately
in French and American oak for twelve
months, prior to blending and bottling.

Vineyards
Codorníu realized a longstanding goal to establish
a winery in Argentina
with the purchase of 470
acres in the Luján de
Cuyo area of Mendoza.
Planted in the shadow of
the Andes, the Septima
vineyards are located at
3,400 feet above sea level, and are situated in an
ideal microclimate for the planting of Cabernet Sauvignon, Chardonnay, Malbec and Tempranillo grapes.
An additional 376 acres, planted in the Valle de Uco
area of Mendoza, were acquired in 2007.
Consistent with a commitment for working with the
local Mendoza winemaking culture in every facet,
Codorníu appointed Rubén Calvo, a native of Mendoza with a profound understanding of Argentine
winemaking as well as global experience, head winemaker. Under Calvo’s direction the Septima team
practices a minimal intervention approach in the
vineyards that maximizes the influence of the unique
growing conditions afforded by the nearby Andean
Mountain range reaching heights of over 22,000 feet.
The slopes and valleys of Mendoza are almost completely arid due to the shortage of water and high
dust levels in the region.The result is a prime area for
grape cultivation characterized by considerable differences between day and night temperatures (ideal
for color, tannin and polyphenol development), and
a substantial layer of stony humus soil well-suited for
the rooting of the vine
Winemaking
Harvesting takes place between January and April;
with white grapes typically harvested in February
and reds following from March to April. Manually
harvested, the grapes are transported in bins to the
winery.
White grapes are gently pressed with a pneumatic
press and the juice is transported to fermentation
tanks through a heat exchanger that maintains a
consistent, low temperature. Red grapes are placed
on the wine press and carried by conveyor belt to a
destemmer that separates grapes from clusters. The
grapes are then sent to the crusher and the juice,
skin, and seeds are placed in fermentation tanks under strictly controlled temperatures. Most wines also
undergo malolactic fermentation before transfer to
storage tanks for fining, stabilization and clarifying.
After fermentation the wines are stored in oak barrels under strict temperature and humidity control.
Septima has over 2,000 oak barrels, 70% American
and 30% French oak (usually reserved for the highest
end wines).

Bodega Septima
The production of high quality wines in Septima Winery is a constant challenge for
our team. We strive for constant improvement in the quality of our vines heightened by the most gentle treatment of the grapes at every phase. We believe in
“natural and healthy” winemaking, in touch with tradition but also in keeping with
international taste preferences. The proper application of modern technology is
a fundamental ally in our management of quality. Our meticulous attention to
the wines through the ageing and bottling process allows us to offer consumers
thousands of miles away a genuine, distinct expression of our terroir.
- Rubén Calvo
Born in Mendoza in 1963, Rubén Calvo has firm roots in his native Argentina.
He began his career in oenology upon graduation as an Oenologist-Fruit
Expert at the Colegio Vitivinícola Don Bosco in Mendoza. With a desire to
continue expanding and elevating his knowledge of wine, Calvo took additional courses in winemaking and completed a post-graduate degree in
Quality Planning and Management from the Vineyard to the Wine.
Calvo’s first job was as a wine and grape distillate analyst at Márquez y Cia
in 1985. In 1990 he joined Bodegas Baudrón in Mendoza as their assistant
winemaker, where he honed his skills and experienced all aspects of vinification, eventually rising to the primary winemaker position. He joined Bodega
Septima in 2000 as the head winemaker, responsible for the elevation of the
winery to the top of Mendoza’s fine wine production.
Calvo’s winemaking and harvesting experiences have taken him to Verona,
Napa Valley, Ribera del Duero, Priorat and Beaune.
