Originally a small fisherman’s village, Saint-Tropez has become the most famous summer destination in the world and
today the Hotel Byblos hosts many international clients as well as jet set visitors looking for a festive atmosphere at the
Caves du Roy nightclub or aboard the private new sleek Algandra yacht. Opened last year : the new elegant « Rivea
at Byblos » restaurant conceived by chef Alain Ducasse.
A MAGICAL ENCLAVE IN A MYTHICAL VILLAGE
Since 1967, when entrepreneur Sylvain Floirat bought the Hotel Byblos
from Prosper Gay Para, this exceptional hotel has become a deluxe
milestone of the Riviera, especially after the surface of the hotel was
doubled following the purchase in 1983 of a piece of land leading
right down to the famous place des Lices.
Embodying the casual spirit of this mythical village, the Hotel Byblos
was the first hotel implementing the “Prestige Hotel Management”
philosophy of Groupe Floirat.
Today, its casual luxury continues to seduce a demanding international clientele by offering exclusive services and
festivities in swinging Saint-Tropez all summer long.

High-end service is the master-word of the Hotel Byblos, recently nominated in the official Palace category,
managed by Christophe Chauvin and his staff, many of whom have been there for years.
Conceived like a colorful provençal village perfectly integrated in the landscape, the hotel fans out around
the olive tree patio, the two restaurants, the new Rivea at Byblos and the B., as well as the pool and the Spa.
Enhanced by their own private terrace, each of the 41 rooms and 50 suites of the hotel feature a unique
decor, reflecting the high quality decoration orchestrated by Mireille Chevanne (Chairman of the Byblos
Hotel).
Carefully selected antiques are set off by exclusive fabrics in bright hues. All the bathrooms have been designed
in the most outstanding marbles with utmost care for comfort creating a haven of quiet luxury for guests.

THE NEW « RIVEA AT BYBLOS » RESTAURANT
The recently opened sun-bathed Rivea at Byblos restaurant, with super chef Alain Ducasse as consultant has
become the new gourmet destination of Saint-Tropez.
Designed like a village inside a village, both the decor and the cuisine embody French and Italian cultures.
Enhanced by a stunning terrace, the sober and comfortable interior of the Rivea was conceived by Antonio
Citterio (who recently designed the Hotel Bulgari in London), in wood and metal with terra cotta hues,
including a piece by Ingo Maurer literally floating on the bar.
The open cuisine runs the gamut of essential flavors from Provence to Nice, passing from Liguria to Piedmont
as well as Monaco: a delightful savory escapade to be discovered from April to October.
The restaurant is open every evening from April 16th to October 25th 2014.

THE « B » RESTAURANT
Located right next to the pool, the « B. » adapts to the whims
of its clientele : breakfast under the lemon trees, lunch around
the pool, a snack while admiring the waterfront, a cocktail at
the bar, an aperitif while watching the sunset, a dinner on the
terrace, a midnight nibble …
The snacking Byni’z concept of light bites is inspired by
mezze, antipasti or tapas.
This year, one classic Med recipe has been reinterpreted
to showcase the Groupe Floirat’s « Signature » dish of the
season …
THE 2014 « SIGNATURE » DISH OF THE « B. » RESTAURANT
This year, the rice is being honored by the Chefs of the Groupe Floirat
restaurants. Four « Signature » dishes have been elaborated. Each
Chef has worked out with Vincent Maillard a receipt rooted in local
traditions, with a common leitmotif : origin and original …
This year, the « B. » restaurant propose the Arancini ! Sicilian fried rice
balls coated with breadcrumbs, crispy on the outside and rich and
creamy on the inside. We fill them with mozzarella and truffle ... Deliziosi !
THE CHEF AT THE BYBLOS, VINCENT MAILLARD
At the helm, Vincent Maillard, Chef at The Byblos since 6 years, is also food consultant for all the
kitchens of the Groupe Floirat.
Originally from Burgundy, Vincent Maillard, 40 years old, has an impressive culinary background :
Guy Savoy, Pyramide in Vienna, the Louis XV in Monte Carlo, the Bastide de Moustiers where he
was awarded a star by the famous red guide.
