Brewed traditionally with coriander, citrus, wheat,
and oats for a creamy, bright, and refreshing beer.
The Blue Moon Story
®
After studying brewing in Belgium and earning his Ph.D. from the University of
Brussels, brewmaster Keith Villa returned to Colorado to craft ales inspired by
classic styles, but with a twist. He brewed Belgian White, a Belgian-Style Wit, with
coriander and Valencia
orange peel versus
the traditional tart
Curaçao orange.
This gave the beer
a subtle sweetness
instead of bitterness.
Then he added oats
to create a smooth,
creamy finish that’s inviting
to the palate. As a final touch,
he garnished his beer with
an orange slice to heighten
the citrus aroma and unique,
unfiltered color of the beer.
Once the first batches were
brewed, Keith held an informal
tasting at the brewery. After a
couple sips, as luck would have it, an
administrative assistant exclaimed,
“You know, a beer that tastes this
good comes around only once in a
blue moon.” And with that, the Blue
Moon Brewing Company was
officially born.

First brewed in 1995, it has grown to be America’s
best selling craft beer. Made with coriander and
Valencia orange peel for spicy, citrus brightness
with wheat and oats to add a creamy mouthfeel,
this is a complex and refreshing beer. Style and Brand Characteristics
Style: Belgian Witbier
History: The witbier dates back over 400 years, but
the style died out in the 1950s. Pierre Celis is credited
with reviving the style. Due to the success of Blue
Moon Belgian White, Belgian Witbiers are increasing
in popularity worldwide.
Overall Impression: Bright and refreshing as the
biscuity flavors of pale malt and unmalted wheat are
elevated with elegant spices, most notably, coriander
and orange peel. The end result is an unfiltered
beer that is both light and complex, with a creamy
mouthfeel.
Food Pairing: The beer’s rich, zesty taste pairs well
with seafood.
