Message From the Board-
Welcome!
Ron Botello, Board Chairman
Mario Roman Executive Chef
HOT! HOT! – I guess we should have figured all
that wonderful rain we received in
April and May wouldn’t continue. July and August
were extremely dry and hot, which did have an
effect on our courses, but they are holding up
rather well. As you may be aware we are in the
process of hiring for the positions of GM, and Director of Member Services. I have been meeting with the owners as
they interview for these positions and the plan is to have these positions filled before the end of August. These positions are vital to our
success and they are working diligently to obtain the best persons
available. We now have a new Chef (Mario Roman) and new Director
of Operations (Antonio Pastrana), besides excellent resume’s they
previously worked together at The Plaza Club and are a welcome addition to the Sonterra family. September is always a busy month, with
not only activities at the club, but kids going back to school both locally and out of town. Patience is a virtue for those parents sending
kids away to college; they will make it through with a few ups and
downs. My two did and I couldn’t be prouder (and relieved). I hope
everyone had an awesome summer and are prepared to experience
our new management team as we continue to work to make The Club
at Sonterra even better. Thank you for being a member.
I started my career with ClubCorp in March
1979, at Lancers Club in down town Dallas.
I trained under master chefs, took culinary
classes at Centro College and also earned a
food and beverage certification. I later attended Grey Stone Culinary School in Napa
Valley California for a continued education
in culinary skills, where I earned my certification in 1998. I then
worked as a sous chef at a five star private dining club, The Tower
Club, in Dallas from 1984 until 1993. I moved to Mission, Texas, in
1993 to manage Cimarron Country Club as an executive chef until
2010. After leaving Cimarron, I managed The Plaza Club in down
town San Antonio as the executive chef from2010 until December
2014. I then managed Fair Oaks Country Club beginning in January
2015 until August 2015.
My experience has been training other chefs to successfully take
over a new position within a company. During the time that I
worked at the Plaza Club, I created 165 lunch and dinner menu
recipes and cooking class recipes. One of my many passions is creating new recipes. I love pairing wine with food, using fresh market
products, proteins, produce and grains to incorporate into our
daily lunch and dinner menus.
In my free time, I love dancing with my wife, Ariadne Roman, playing golf and spending time at the gym. I am excited to be a part of
Sonterra and I look forward to meeting all of our great members.

Message From the Ambassador CouncilDwight & Rita Parscale
As a club, we are about to embark on what we believe will
be a bright future with our new ownership. Our club is a
wonderful place and our members make it special.
The owners have recognized this and appreciate it. The
changes that are taking place reflect a new positive attitude
and culture that will benefit both members and owners.
You could not have picked a better time to be a member
and to be in position to witness what we will be a Phoenix
moment in our future.

Golf Corner
On the Greens– Donny
Latham,
With the month of August behind us, it is
time to start thinking about fall. It is very
hot and dry out, but the cooler weather
will be here soon and I am pleased with
how we made it through the summer.
Our North Course greens healed very
well after aerification and they should be very good throughout the fall and winter. We plan to fertilize the fairways and
rough once more in September before winter begins. This
time, with a higher Potassium load. Potassium helps the turf
be better prepared for cold weather. It would be beneficial to
do the same in your lawn at home. September is a great month
to set up your lawn and our golf courses for a good winter and
an even better spring.
During the month of September, we will do a small aerification of the South Course emerald greens. This will help us
alleviate compaction and remove some organic material that
has built up over the summer. They should recover quickly
and not be a big disruption to play. Our plan is to overseed all
of the South Course greens again, just like last year. We will
also overseed the par 3 tees on both North and South courses.
The reason for not over seeding all tees is to allow us to complete a fall pre-emergent spray on those tees. Hope to see
many of you at the member-guest and club championships.
Looking forward to a great fall!
Golf News– Jeff Hunter,
Director of Golf
As summer morphs into fall and the weather turns a little
cooler, a little wetter, and the golf courses green up all
over, please remind yourselves that this is the best time of
year for golf. The SWGA, MGA, and Sonterra have multiple
events planned for the fall including the Classic Affair, Member Guest, Sonterra Cup and the Club Championships. Both
golf courses have come through another dry summer very
well thanks to Donny Latham, the deer on the South
Course have grown their antlers and we as a staff look
forward to great things.
The golf and greens committee along with the board of directors have given us a few
projects to do on the golf courses this fall and winter and we are enjoying their input.
Along with both parties we remind you to please pair up, sand fill your divots and
repair ball marks. We are truly lucky to have two such diverse golf courses so let's
take care of them. Please remember to drive carts in the fairway at all times and not
too close to tees or greens, and please avoid the mounds.
Looking for the perfect place to have a holiday party? Why not play golf then have a
little get together. We would love to host golf members and their guests whether
your group is 4 or 40. We can create packages for your groups for 9 holes or 18 holes
along with food and beverage of your choice. Call the golf shop and we can reserve
your times.
We also still have a few Mondays open for corporate outings so please let us know if
we can help you with ant charity events you may be involved in.
Lastly, and I hate to say it, but Christmas is right around the corner. If you need any
special orders, logoed items, or something that may need some lead time, call us.

Our Junior Golf Teams got off to a great start this Summer with lots of good

tournaments in the area at venues such as Sonterra, The Dominion, San Antonio
Country Club, and Alamo Golf Club and placed in their respective age groups in
every tournament . The highlight of the season was the tournament staged here
at Sonterra. Playing to the “home course” advantage the Sonterra teams swept
the competition and took first place in every age group, and first and second
place in two other age groups. Several members of the Sonterra junior golf team
also competed throughout the summer in various STPGA junior individual tournaments and placed throughout the summer. Some of these junior golfers were
Treniss and Tristen Evans, Skylar Thomas, Stevie Albright, and Payne Stewart.
Our fall program will consist of several Inter-Club Matches played on Saturday
and Sunday afternoons beginning mid-September running through November.
Some of the competing clubs will be River Crossing, Oak Hills, San Antonio CC,
Fair Oaks and Cannon Springs. The entire goal of the program is to prepare
each junior with the tools necessary to play competitive golf.

Parents Benefit From Kids Going Back To School
When kids go back to school, parents get valuable time back and a chance
to kick start a fitness and workout plan with quick and easy fitness programs. There are hundreds of different strength-training exercises, but
don't let the abundance of options confuse you. If you're feeling overwhelmed, there are eight moves that will accomplish everything you need.
The Basic Eight strength-training moves hit all the major muscle groups and
ensure that you develop strength, power, and endurance equally. Together
these exercises give your muscles the ability to perform quickly and efficiently while also preventing the loss of muscle tissue that occurs naturally
through aging and disuse.
The Basic Eight are simple to perform and, best of all, don't take much
time; you can go through them in less than 20 minutes. That's little time to
invest for what will be a huge payoff! Whether you've never lifted weights
before or are an experienced exerciser who has never found the right
strength-training regimen, you'll find the Basic Eight a simple and efficient
exercise routine.

too late to jump in – even as a sub. Just a little heads up about September—there
is a lot going on this month!

We just got back from the spring buying show and oh my goodness-- what a beautiful collection of spring wear. Better start making room in your closet for additional clothes. Just saying!
We have a lot to tell you so please remember to jot down dates and times and
read those emails we send you so you don’t miss out on something fun.
