I
t seems like all the food he touches turns
into a Gourmet dish. Since Chef Mark
Lee Bolton began working at the Phoenix Club, the known German fare in the
Phoenix Club Restaurants has advanced
from very good to “extraordinarily, amazingly great”, according to regular diners
who could not hide their joy. Yes,
food can make you happy.

by the best as he was trained
by the first American born Master
Chef, Marvin Slaughter CEC, in the Culinary Arts Program. Chef Mark began his
training at age 17 and, after only three months,
was placed into a formal culinary apprenticeship by Chef Marvin at the Westin South Coast
Plaza Hotel in Costa Mesa, CA. During the three
year apprenticeship, Mark won many awards at various culinary competitions and was voted Apprentice
of the Year by the Chef ’s D’Cuisine Association in Los
Angeles, CA. Chef Mark graduated from the culinary apprenticeship in 1984 with a degree as a Certified Journeyman Chef.

takes the amazed food enthusiast
on a journey to culinary heights
that have to be experienced individually and in person.
Mark went on to work for the restaurants Ambrosia, Le Premier, Golden Truffle, and The Magic Island. Then, in 1989, he
decided to try his hand in the ever difficult catering industry at
The Turnip Rose Elite Catering in Orange, California. The Turnip
Rose, voted #1 in the “Best Of ” issue of Orange County Magazine
three years straight, is considered one of the most prestigious and high

German Cheese & Beer Soup
with Rye Croutons
Serves: 4 Ingredients:
1/2 cup unsalted butter, divided - 4 ounces German Black
Forest ham, diced - 1 medium yellow onion, chopped 3 shallots, chopped - 1 clove garlic, chopped
- 1/2 tablespoon chili powder - 1/4 cup all-purpose flour
- 3/4 cup German lager - 7 cups chicken stock
- Pinch of cumin seed - 2 cups shredded Allgäuer Emmentaler cheese - 2 cups shredded Tilsiter cheese - Sea salt
- Freshly ground white pepper - 4 slices Rye bread, chopped
- 2 tablespoons chopped cilantro
Preparation:

Chef of the Turnip
Rose in 1993.
In November 2010, Chef Mark joined the
award winning Le Chateau Restaurant as
the Executive Chef at the elegant Europeanstyled boutique hotel Ayres in Costa Mesa,
CA. While there, Chef Mark has earned rave
reviews and has been featured in many periodicals as well as the Orange County Register
for his innovative flair.
At the Phoenix Club, Chef
Mark is responsible for the
planning and directing of the
culinary operations of the
restaurant and banquet facility. He takes particular pride
in the superb quality of his
ingredients. His approach to
dining is simple, “good food is
all about simplicity and letting
the product speak for itself.”
In a stockpot, melt 1/4 cup butter over
medium-high heat. Add Black Forest
ham and sauté until golden brown. Add
onion, shallots, garlic and chili powder.
Sauté until glossy, about 2 minutes.
Add flour to create a roux. Whisk in German lager and stock. Add cumin seed
and lower the heat to medium. Cook
until liquid is reduced by half, about 35
minutes. Remove from heat and stir in
the cheeses. Season to taste with salt
and pepper. To make the croutons, melt
the remaining butter in a medium sauté
pan over high heat. Add the diced German whole grain bread and pan-toast
until crispy. Pour into serving bowls and
top with the croutons and the cilantro.
Serve immediately.

T
he Schützenfest for the
Phoenix Club Schützen will
be celebrated from June
8th through the 10th. On the
8th the Schützen will have their
Ritter party and on Saturday
the new King George Teepe and
his Queen Anamarie will be officially crowned. The Schützen
expect many guests from in and
out of state. After the Dinner
and the crowning, accordianist
Don Milek will be playing for everyone’s dancing pleasure.
On Sunday morning the guests of the
Schützen will be treated to breakfast
and then compete for shooting prizes.

The Phoenix Schuetzen Group was
founded in 1969 by members of the
Phoenix Club. It was to carry on the
old German Schützen tradition here
in California.
The Schützen participate throughout the year in parades and ethnic
events as honor guards. Once a year
they shoot for the honor of having
their own King and his knights (Ritters). The custom dates back many
hundreds of years in Germany.
Streit’s German Bakery
At
The Schützen meet every Wednesday at
the Schützen Haus for shooting and socializing. The Juniors meet every second
and fourth Sunday for practice shooting. During the year there is a very busy
schedule participating in the Oktoberfests and other Club events. The range
is then open to the public for shooting.
The members are present to assist.
The new King and his “Court” will be sworn
in at the annual Schützenfest.

“If you have ever looked up into the night
sky and wondered about the vastness of
the universe and what it all means, you
may be interested in Astronomy.”
Bob Miller is trying to bring an astronomy
group together. If you have ever given this
subject any thought or have a new found
interest in Astronomy, Space Exploration or
anything to do with outer space, you should
attend a “Star Party” Bob is organizing.
The event will be held on the Phoenix Club
grounds near the Soccer Field. A large telescope will be set up on the grounds where
everyone may view some of the planets in
our solar system, our moon and deep sky
objects (Galaxies, Nebulae). The date and
time of this event will be announced as soon
as there are enough interested members.
The group shall meet twice an month and
field trips to Southern California Facilities
engaged in Astronomical Research and interest (Mt. Wilson Observatory, Griffith Park
Observatory, Mt. Palomar Observatory etc.)
are on the agenda. If you have an interest
in Astronomy and would like to be notified
via email about the initial star party, please
email Bob Miller in advance so he has an idea

Phoenix Club Soccer’s two
Teams O-55s and O-62s
played great in the 47th Annual Memorial Day Wanderpokal Tournament in Stockton, California.
On Saturday, May 25, the O-62’s beat
Real Marin 2-1, and lost to Vancouver Alemania 3-2. To make the Final,
Phoenix 62’s had to win Sunday’s first
game by 3 goals, and not allow any.
They did just that by blanking Conejo 3 to 0. The other Finalist was Alemania which had beat Phoenix in the
first round 3 to 2. Our 62’s, instead
of playing hard for Revenge, lost the
teamwork, composure and Championship to Alemania by a score of 4
to 2. Udo Helferich and Al Ortega,
forwards, produced most of the goals
for our Team. Our 62’s brought home
the
Runner-Up
Trophy for second
place.
The Phoenix Club
O-55’s, a more refined and cohesive
Team, made it to
the Final by brushing aside Real Marin
by blanking them 3
to 0; beating Turn
Verein 2-0, beating Los Angeles S.C.
4 to 2, and blanking Juventis by a
score of 4 to 0.
In the Final our 55’s took on a more
determined Turn Verein, bent on revenge. They scored on Phoenix in
the Final, but Turn Verein could not
withstand the ensuing constant pressure from our determined Team, and
finally succumbed to
two goals by our forward Roger assisted
by Fregoso, and Defender/Captain Joe
Matkovic’s goal on a
Turners offer Fitness Program for
different Age groups at Phoenix Club
The Los Angeles Turners is proposing sharing today’s
version of their mission, A Sound Mind in a Sound Body,
with the membership of the
Phoenix Club.
Director of Fitness and Health,
Mesfin

will
arrange classes
for
youngsters
and adults at the
Phoenix
Club.
These fitness classes can consist of one or more
groups, people from all groups, guests of people from
groups, employees or their families.
For those interested in joining, the Los Angeles Turners will give a demonstration class featuring the best

Friday from September 14 to October 28 at 6:00 pm. On Saturday and Sunday we
offer Entertainment for the whole family. On Saturday afternoon - in October the
Oktoberfest opens already at 1:00 pm - and on Sunday (11:00 am to 6 pm) it is about
