Nice Rendez-Vous 17 avril 2015 Var Terre Blanche Resort le chef Philippe Jourdin aux commandes du Restaurant gastronomique Le Faventia Tags : Restaurants, Provence, Var Écrit par SG Vendredi, 17 Avril 2015 08:27 Philippe Jourdin, le chef Meilleur Ouvrier de France a profité du week-end de Pâques pour lever le voile sur la cuisine qu’il proposera dès le 21 avril 2015 au Faventia, le Restaurant gastronomique du Resort Terre Blanche à Tourrettes (Var). TERRE BLANCHE RESORT VAR- Le chef Philippe Jourdin a devancé de quelques jours l’ouverture officielle du Restaurant Le Faventia le 21 avril 2015 pour les clients qui séjournaient à Pâques à Terre Blanche. Ceux-ci ont eu le privilège de goûter, en avant première, la cuisine du chef. Le repas commençait autour d’une brioche de partage accompagnée d’une huile d’olive de Callas puis d’une vive en bouillabaisse. Les parfums d’une Provence et d’une Méditerranée toutes proches s’imposaient aux papilles. Suivait un amuse-bouche gourmand composé d’une morille farcie accompagnée d’un agnolotti à la burrata et d’une chantilly au vin jaune. Le plat mêlait tout à la fois simplicité et sophistication, les goûts et les textures se mariant avec une grande délicatesse. L’entrée présentait un « Foie gras Andignac mi-cuit au muscat de Saint Jeannet, marmelade de fruits frais et macaron au citron », accompagné d’un Jurançon domaine de Souch. L'audacieuse combinaison de douceur et d’acidulé pétillait en bouche. Le poisson était un « Bar de ligne cuit sur bois de fenouil, asperges vertes de Villelaure déclinées de la pointe à la queue, émulsion d’une d’olive fruitée noir ». Les jeunes asperges de Provence avaient la fraîcheur d’une rosée printanière et composaient avec le poisson un ensemble aux lignes sobres et aux saveurs subtiles. 1 Cliquez sur les photos pour les agrandir. 2 Pour fêter Pâques, le chef avait mis au menu un agneau du Limousin, le carré rôti au pèbre d’aï, l’épaule confite en petit Parmentier, courgette-fleur farcie, jus tranché au pistou que le chef sommelier avait choisi d’accompagner d’un Château Miraval 2007 cuvée Natouchka. La cuisson du carré était un modèle de perfection, la viande était tout à la fois moelleuse et suave et invitait à s’attarder dans ce si joli coin de Provence. Le pré dessert offrait un granité au Rinquinquin, mousse au fromage et pour le dessert, Richard Guérin, le chef pâtissier proposait un Émincé de poire rôtie au miel de Terre Blanche, sabayon au chocolat Grand Cru, glace de petit épeautre. La fraîcheur sucrée de la poire balançait la rondeur du chocolat alliant les notes florales du miel aux arômes boisés du chocolat. Quelques jolies mignarises accompagnaient le café. Le repas s’était déroulé comme dans un rêve dans une harmonie parfaite et l’on avait pu apprécier l’équilibre délicat des saveurs, la justesse des asssaisonnements et la rigueur élégante des assiettes. En salle, le service sous la direction de Thierry Demolliens (Meilleur Ouvrier de France), était une chorégraphie bien huilée où chaque acteur maîtrisait parfaitement son rôle. David Bisque, le maître d’hôtel et Alexandre Pauget, le chef sommelier s’employaient à sublimer ces moments de plaisir gastronomique. 3 4 Cinq anq après quitté Terre Blanche alors dirigée par le groupe hôtelier Four Seasons, le chef Philippe Jourdin revient aux commandes des cuisines avec l’ambition de reconquérir les deux étoiles qu’il avait accrochées au Faventia. Une ambition que partage Gilles Fouilleroux, le directeur de Terre Blanche qui met tout en oeuvre pour satisfaire une clientèle internationale qui recherche l’excellence. Même s'ils peuvent l'être par ailleurs, les entraîneurs ne sont pas des théoriciens enfermés dans une tour d'ivoire à concocter des concepts aussi objectifs qu'efficaces. Ils ont affaire à des joueurs ou joueuses plus ou moins doués. « Ce qui peut être mesure, pense Benoît Ducoulombier, est la faculté d'un entraîneur d'exploiter les capacités d'un joueur. L'évolution de ce dernier dans Reclassement mondial en découle. » rn Pro au golf de Terre Blanche, Alain Alberti (a droite) dispose de peu de temps et n'entraîne que doux joueurs sur le Tour, Alexander Levy (à gauche) el Raphael Jacquelin « Nous échangeons en permanence avec Benoît Ducoulombier et Alain Alberti. » olivier Léglise L'expérience constitue également un facteur clé. Un entraîneur aura d'autant plus de chances d'être efficace qu'il aura de la bouteille, et de la bouteille à haut niveau. « J'ai la chance énorme de faire ce métier à plein-temps depuis 12 ans, de me déplacer régulièrement sur les tournois, ce que je n'aurais jamais eu la possibilité de faire sans la Fédération, reconnaît Olivier Léglise. D'autres entraîneurs ont des capacités aussi ou plus importantes que les miennes, mais ça fait 25 ans que j'ai débuté dans ce métrer. L'expérience est un avantage énorme, à condition qu elle ne soit pas synonyme de confort. » Benoît Ducoulombier confirme, en mettant en avant l'avantage d'entraîner des joueurs ou joueuses qui évoluent sur des tournois majeurs, qui participent à la Ryder Cup ou à la Solheim Cup, qui font partie du top 50 mondial... Leur expérience et leur savoir viennent également de la carrière de joueurs professionnels qu'ils ont eue avant d'être entraîneurs. «Je sais, pour l'avoir vécu ce que représente le fait de batailler pour passer un cut, ou le fait de mener un tournoi sans arriver à le gagner », précise Olivier Léglise, L expertise de nos entraîneurs provient également des échanges très fréquents qu'ils pratiquent entre eux. Il suffit de les observer lorsqu'ils se retrouvent sur les mêmes tournois pour le constater « Nous apprenons beaucoup les uns des autres, nous partageons beaucoup de choses avec Benoît et Alain [Alberti], admet Olivier Léglise. Indeed, a newly published report by the prestigious Royal & Ancient Golf Club of St Andrews shows there are 34,011 golf facilities in 206 countries. The R&A study, conducted by Florida-based National Golf Foundation, reports 79 percent of these facilities are located in ten countries: the United States, Japan, Canada, England, Australia, Germany, France, Scotland, South Africa and Sweden. Although the U.S. is home to nearly half of the world's golf facilities (49 percent), and Europe accounts for 22 percent of the world's supply, the report also states there are 50 countries with only one golf facility compared to 30 countries with more than 100 facilities and eight with more than five golf courses (not including the U.S.). http://www.worldpropertyjournal.com/real-estate-news/dubai-uae/top-international-go... 20/04/2015 Top International Golf Resort Communities Revealed - WORLD PROPERTY JOUR... Page 2 of 12 The report tracks the development of golf worldwide and finds 696 golf courses are under construction or in advance planning. While 80 percent of these new projects are in Asia, Europe and North America, there are clear signs the sport is spreading with countries such as Belarus, Azerbaijan and Georgia opening their first golf courses in the last two years and initial courses under construction in countries as diverse as Macedonia and Sao Tome and Principe (see new projects below in Montenegro and Tenerife). Of course, one of the newest high-profile courses under construction is the Gil Hanse-designed Olympic Course cut out of a nature reserve in western Rio de Janeiro for the 2016 Olympics. Until then, here's a collection of some other medal-contending courses outside of the United States.
