A note from Dick Vermeil
My passion for wine
began while helping
my grandfather Albert
Vermeil to make our
family wine. In 1999,
to honor the family
heritage, we crafted the
first “Jean Louis Vermeil”
Cabernet Sauvignon.
It turned out to be a special year in more
ways than one, with the magical 1999 season
culminating in victory for the St. Louis Rams
at Super Bowl XXXIV in January 2000.
While my football days are now fond
memories, my best wine days lie ahead.
Working with Paul, we feature fruit from the
highly-acclaimed Frediani Vineyard. This is
particularly special to me, as the friendship
between the Vermeil and Frediani families
runs as deep as the roots of the most
ancient of vines.
The game is different, but the commitment to
excellence is the same; we look forward to
earning your patronage with everything we do.

New releases coming under the Vermeil Wines label:
2005 Zinfandel, Frediani “1956” Vineyard
2007 Sauvignon Blanc, Frediani Vineyard
These wines have been held back for release closer to their peak
of optimal drinking. These wines are showing nicely and they
will continue to benefit from additional cellaring, including our
“Graves/White Bordeaux-styled” Sauvignon Blanc.

I crafted the 1999 Jean Louis Vermeil Cabernet
Sauvignon, Frediani Vineyard, as a tribute to our
dear friend Dick Vermeil and his Calistoga ancestors.
It is with considerable excitement that we are now
expanding the lineup of Vermeil Wines.
As a tireless supporter of OnThEdge Wines, it was
destiny that Dick and I would join forces as we share
a passion for fine wines.
We will continue to aim high by using the same fruit
sources, barrel regimen and winemaking techniques that have garnered us
kudos from the press and, more importantly, a dedicated base of customers
who appreciate artisan wines with genuine soul and individuality.

MarySue is the Manager of our Calistoga

know MarySue for her boundless energy;
she is also the spouse of winemaker Paul Smith
and a co-owner of Frediani Family Vineyards,
the source of most of our spectacular fruit.

launch a new career in the wine business where, prior to joining Vermeil

This wine is opaque-purple, black and blue, slowly
opening with the restrained aroma of blueberries,
lavender, toasty vanilla oak and a shake of black
pepper. All these rich and full flavors finish long
with lushness and power. An additional 5-10 years
of cellaring will be rewarded.

The 2005 Charbono may well be our best yet.
An inky red-purple color with aromas of
blueberries and violets lead into a full-bodied
wine of great structure, balanced acidity
and substance with characteristic soft,
lingering tannins.
For over a dozen years Anne Hood has led the
wine program at Harry’s, a Wine Spectator “Award
of Excellence” winner every year since the founding
of the restaurant! She is a Certified Sommelier and
has passed the Advanced Level of Wine and Spirit
Education Trust (with merit), giving her two
international levels of education and expertise.
She is well known for making wine accessible to

½cup olive oil
½cup bourbon
4tablespoons soy sauce
4cloves of garlic
2teaspoons Worcestershire sauce
Pinch ground pepper
Instructions:
Marinate meat
in seasoning
for 10-20 minutes,
baste as cooking.
