Bunches of grapes are harvested by hand
for the base wines.

Aszú berries are harvested, berry by berry,
by hand. 1kg of Aszú berries can require
up to 5kg of healthy grapes to produce.

The Aszú berries are left in containers for
a period of time before pressing. A tiny
quantity (perhaps 2-3 litre pre 100kgs of
free run juice is collected).
The base wine is fermented in stainless
steel at 18-200c for approximately 3 weeks.

The Aszú berries are macerated with the
base wine for approximately 48 hours. The
ratio of base wine to Aszú berries dictates
the level of sweetness.

The blend, now “Tokaji Aszú” is run off into
old oak casks and fermented for 3-6 months.
This free run juice is the Essencia, or essence.

The Aszú wines undergo ageing in our cellars
for a minimum of 2 years. During this time
the wines harmonise & develop complexity.

The final blends are selected and the wines
are submitted for approval as Tokaji Aszú.
