Recipe & Wine Pairing
DIRECTION:
Chorizo and Eggs
Serves 2
Preheat oven to 375 degrees.
Place the chorizo sausages in a baking dish and cook for 10 to 15
minutes, until thoroughly heated through.
Pair with tess
To cook the eggs, heat butter in a nonstick or cast iron pan over
medium heat. Crack two eggs into the pan, being careful not to break
the yolks. (If desired, you can first crack the eggs into a small bowl or
ramekin to ensure that the yolk remains unbroken and then carefully
transfer to the pan.) Cook for a few minutes, without flipping, until
the whites are cooked, but the yolk remains runny. Season with a dash
of salt. Repeat for the last two eggs.

Point Reyes Farmstead only uses milk from cows that they raise on their property from birth. Their focus allows them to have
complete control over the quality of the milk, the source of all great cheese. Paired with our Chardonnay, this all natural,
pasteurized, semi-hard table cheese is creamy and buttery with a grassy tang finish.

Based out of Paso Robles, Central Coast Creamery is dedicated to using hormone free milk from California cows. Their
“Seascape” cheese is a semi-soft cheese made from blended goat and cow milk. Aged for a minimum of four months, it is
creamy with a complex tanginess that makes it a perfect pairing for our red and white blend, Tess.

Emigrating from Switzerland in 1919 to the western Marin town of Nicasio California, the Lafranchi Family has been
making cheese in Northern California ever since. Their Nicasio Reserve is a classic Swiss- Italian mountain cheese with a
