April was an incredible month at Salina Country Club! I hope you were able to come out and be a part of all of the
fun, there was something for everyone:
Membership – Since our last newsletter we have welcomed 12 new members to Salina Country Club. Congratulations are in order for our new Membership and Sales Director, Julie Schott. Make sure you check out her article for a
full list of the names of the new members so that you can greet them and make them feel welcome.
Golf – The course is green and the flowers are blooming. Superintendent, Chris Rice, and his crew have done an
amazing job preparing the course this spring. The sod projects completed on #6 and #11 were very well done!
Randy and the Robs have started clinics, as well as Men’s and Ladies Leagues. Make sure you stop in and check out
all of the new gear available.
Dining – Chef Eric and his team were certainly busy in the kitchen! Sunday Omelet Bar, the grill on Wednesday
nights, Burger Night, and one of the finest Tasting Menus produced at Salina Country Club, Food and Beverage is creating new traditions and memories.
The Ladies had lots of options in April as well, from Ladies Golf Clinics, to a Ladies Tennis Social, and finally a really
cool trip to the Greenhouse for Ladies Night Out.
May is going to be even better! Pool, Tennis and Junior activities kick off, look for signup sheets soon. Additionally,
we have another full Social Calendar. The month starts out with a scrumptious Mother’s Day Brunch and continues
with all of your favorites…Burger Night, Tasting Menus, Omelet Bar, Couples 9 and Dine, and a very special Ladies
Night Out. The highlight of the month will certainly be the Summer Kick Off on May 21 st. Come out for a full day of
food and entertainment, rain or shine. Activities will include a petting zoo, bouncy house and face painter for the
kids, a fabulous Pig Roast and live band for the adults. Make your reservations now and come and enjoy everything
your club has to offer.
Thank you all for being members of Salina Country Club! It’s a very exciting time for our Club and I’m very grateful

Bash Party, Ladies and Junior Tennis Programs starting up, and Golf Season in full swing; now is a great time to invite
your friends to the Salina Country Club!

Randy’s Corner
The new tee time policy went into effect in April. You may now reserve tee times 1 week in
advance, and for Monday holidays you may get tee times the previous Sunday. So Memorial
Day tee times may be reserved on the Sunday May 22 nd. We will begin taking tee times on
that day at 7:00am, and alternate taking times in person and by phone.
The new Cart Policy is also now in effect. Carts may exit the path once they have passed the
Green stake, and must return to the path at the Red stake. Use the 90 degree rule when not
on the path and keep carts out of the rough as much as possible.
The Dress Code will go into effect on May 1st. Golfers must wear a collared shirt with khaki
pants or shorts. No cut offs, t-shirts, or jeans will be allowed.
May is filled with golf events for the whole family. The last of the “Get Ready to Golf” series
of clinics for the ladies will be on Wednesday May 4th at 5:30pm. Next is Beat the Pros on the
12th, Couples 9 & Dine on the 13th and the Ladies Team Tournament on the 24th and 26th. Call the Pro Shop for more information
and to sign-up for these events. Also, as a reminder the course will be closed for aerification on Monday, May 2nd and Tuesday,
May 3rd
Make plans to attend the SCC Summer Kick-Off event on May 21st. There will be all kinds of fun family activities, contests, food
and drinks. We will also have sign up and schedules for all SCC junior summer activities.
Junior Golf Camp is scheduled for May 26th and 27th. Junior camp is for all levels of junior golfers and is a great opportunity for
kids to get more one on one instruction. Open to SCC kids ages 5 and up. Sign up in the Pro Shop or call for more details.
SCC Junior Golf schedules and program details will be available in the Pro Shop this month. SCC Junior Golf will begin on
Wednesday June 8th. The SCC Junior Golf program is open to all SCC juniors ages 5 and up. This year will include the most
thorough instruction on swing, short game and etiquette. Also, I will offer the “Tournament Preparation” program each
Wednesday which will feature more in depth instruction and is open to all juniors interested in improving their tournament play.
It’s going to be a great month at SCC. As always, please let me know if there is anything myself or my staff can do to help enhance
your enjoyment of the club.

Calling All Lady Golfers!
The SCC Ladies Golf Association would like to extend an invitation to all lady golfers, beginners and experienced alike, to
join them for the new and fun weekly events and activities planned for this year. There are morning and evening groups,
groups that keep score and groups that don’t, and groups that have tournaments and ones that just play for fun. No matter
which kind of golf you’re looking for, the Ladies Golf Association wants you to join them.

Chris’ Comments
I am not sure about the “April showers bringing May flowers” thing, but I do know that Wanda will
bring the flowers to the course this month. In a couple weeks she will be very busy brightening up the
property with flowers and different foliage from the greenhouse. This is one of my favorite times of year
when the course is ready for the new season and everything is awake and growing. This is also the time of
year that aerifying the greens is done, which will take place on May 2 nd and 3rd. The greens have already been
through a lot this year, especially the areas that have struggled due to the unseasonably warm winter/spring
and lack of rain. These areas will greatly improve with the warmer weather and the increased oxygen that
aerification provides. The problem areas on the greens are being taken care of and I am confident they will
bounce back when they recover in the weeks to come. I would ask for every player to fix your ball mark
during this time to help the greens recover fast, this is especially important after aerification. The fairways,
tees and approaches will also be aerified this month. We will start with the fairways the same time as greens when the course is closed and
continue on Mondays when the course is closed until 1pm to not disrupt play. This seems like a lot to accomplish but with the new assistant
superintendent Dan Ortiz I feel we can make some great progress during that time. Dan comes to us from Colbert Hills where he worked in
the same position. He is very excited to be a part of the Salina Country Club team. Please welcome Dan as you see him on the course. In
addition to all the aerification, the brick project to the tee boxes will be completed this month that will include the new tee signs and the ball
washers. Once that project is competed we will continue with sodding out the bare areas along with preparing the course for daily play.

The Setup
I want to say thank you to all the members who signed up for the Chef’s Special Tasting & Ladies Night Out with
Wanda in April. Chef’s special colors tasting was a huge success and we have had great feedback from those
who attended. As we are gearing up for summer I want to welcome back the snack bar staff as well as our new
leader for the snack bar McKenzie Welsh. Chef is putting together a special new menu for the pool this year and
we are changing a few aspects to enhance the overall service and experience for our members who utilize it. I
am also looking forward to our Summer Kick Off Party on May 21 st ! It will be a day and night to remember for
the whole family. Featuring an exotic petting zoo, live music, and a hog roast as well as several other activities
for the kids. Come spend the day with us! Can’t wait to see you all here.
As a reminder, Mother’s Day is just around the corner so please make your reservations today. We want to
make sure we have a spot for you so you can spoil your Mother with a great meal and special surprise from the
club. I also want to mention our TWO Burger nights this month, May 10 th and May 24th. Burger Night has really been a huge success and if you
haven’t tried the lamb or wagyu burger you are missing out.
I want thank you everyone who is using the website to make reservations. You can go to the site from home or easily navigate the
site from your cell phone. Whether it is one our special events, or just a regular reservation in the Grill Room or Johnny’s, we have made it so

Hello everyone!
The month of April was very busy for the department but we have managed to keep a steady pace with the
growth of business. This month we are finalizing details for a few clients in the catering department as well as
the Summer Kick Off Party on May 21st. Revisions for the Grille Room and Johnny’s are almost complete. We
are just sourcing the right vendor to ensure they have the products we are looking to receive in great
condition and at a reasonable price. The new pool menu will be available following the Summer Kick Off Party,
and if you have some suggestions on what you would like to see, please feel free to email me at your earliest
convenience.
Just this last week we had another themed wine dinner. I would like to thank Brad, Justin , Steven, Mike, Tim,
James, Jennifer, Paula, and everyone that helped plan and execute that event. We are excited to host the next
installment of the series and hope to see you there!

Ingredients:

2 1/2 tablespoons unsalted butter

Freshly ground pepper

1/3 cup finely diced carrots

Parsley stems

1/3 cup finely diced onion

Celery leaves

1/3 cup finely diced celery 1 teaspoon
thyme, savory
or mixed herbs, or 2 fresh thyme or
savory sprigs

Six 1/8-inch-thick lemon slices

1/2 cup sliced onion

1/2 cup sliced carrots

One 3 1/2- to 4-pound chicken

1 tablespoon fresh lemon juice

Salt

3/4 cup chicken stock or broth
Method of Preparation:
1.
Preheat the oven to 425°. Melt 1 tablespoon of the butter in a skillet. Add the diced carrots, onion and celery and cook over moderate heat until softened.
Stir in the herbs.
2.
Wash the chicken rapidly inside and out with hot water and pat thoroughly dry. For easier carving, cut out and discard the wishbone. Pull the neck skin up
over the breast and secure it to the back with a toothpick. Salt and pepper the cavity and spoon in the cooked vegetables, a handful of parsley stems and
celery leaves and the lemon slices. Massage the chicken all over with 1 tablespoon of the butter, then truss it. Alternatively, tie the ends of the drumsticks
together and tuck the wings under the body.
3.
Choose a flameproof roasting pan that is about 1 inch larger than the chicken. Salt the chicken all over and set it breast up on a rack in the pan. (Thoroughly
wash all surfaces and utensils that have been in contact with the raw chicken.)
4.
Roast the chicken in the oven for about 1 hour and 15 minutes, as follows:
At 15 minutes Brush the chicken with the remaining 1/2 tablespoon of butter. Scatter the sliced onion and carrot all around. Reduce the oven temperature to
350°.
At 45 minutes Brush the lemon juice over the chicken. If necessary, add 1/2 cup of water to the vegetables to prevent burning.
At 60 minutes Baste with the pan juices. Test for doneness: The drumsticks should move easily in their sockets; their flesh should feel somewhat soft. If not,
continue roasting, basting and testing every 7 to 8 minutes, until an instant-read thermometer registers 165°.
5.
Spear the chicken through the shoulders; lift to drain; if the last of the juices run clear yellow, the chicken is done. Let rest on a carving board for 15 minutes;
discard the string.
6.
Spoon all but 1 tablespoon of fat from the juices in the pan. Add the stock and boil until lightly syrupy, 5 minutes. Strain; you will have just enough to bathe
each serving with a fragrant spoonful
