Make the best pizza
known to man or
there about.
There are several areas that are key to
success and while all these areas are important any one is not the end all and be
all to a successful formula. I’m sure you
can think that local chain that has the
worst pizza in town and yet you see their
delivery vehicles everywhere you go.
My own personal mystery was a pizza
place in Brooklyn that was run by a guy
with no personality that I am sure inspired the soup Nazi years later with his
disrespect and rudeness to his customers. Aside from the pizza makers
smoking while they made pizza, he
would tell you to eat the unburnt part of
the pie if you dared to complain. How
about the places that are so far off the
beaten path you need a guide to find
them or better yet they have no name on
the joint? You can’t make this stuff up but
it gives one hope that there is room for all
of us to succeed. I want to qualify this as
my own personal opinion from working
with, knowing and visiting with hundreds of pizza men and women all over
the country. By no means is this THE
BIBLE OF PIZZA or to be taken as law but
it will give you a pretty good idea of what
to concern yourself with if your new to
the game, stale or in deep trouble.
1. Location, Location, Location. The
best way is to be the only game in town
Mandeville Beer Garden
focuses on the details
Sarasota - Florida’s first-ever beer
garden focuses on the beer and lets
the ELAN control system manage all
the audio, video, lighting, security,
surveillance cameras and HVAC.
Launching a restaurant is often a
sink-or-swim moment. It’s stressful,
exciting and demanding, so any help
keeping things organized and flowing smoothly is essential. Just ask
Rebekah Gelvin, the proud owner
and operator of the new Mandeville
Beer Garden in Sarasota, Florida.
With 30 draught beers, 150 bottles
and a classic beer garden-style food
menu, the last thing the staff wants
is to have to remember tricky procedures for operating TVs, stereos and
other utilities on site.
As the citys first-ever beer garden, Gelvin knew it might be popular, but was pleasantly surprised at
the community’s overwhelming response. Luckily, she thought ahead
and outfitted the establishment with
advanced technologies designed to
lighten the load for her and the staff,
centered around an ELAN control
system that automates the audio,
video, lighting, surveillance cameras
and HVAC.
“It’s nice not to worry about turning things on and off,” Gelvin said.
“It might seem like a little detail, but
there are hundreds of little details
that we need to nail every day, so
See BEER GARDEN page 5
or be in a tourist location where there are
no other options available or the ones
available are of no consequence due to
being very expensive or a different and
specialized category like a fish house.
Some the most successful places specialized in malls, theme parks, schools, military bases or small town USA.
2. Make the best pizza known to
man or there about. If you are making a
really top notch product people will find
you and not only that, people will talk.
Word of mouth is the best advertising it
has been said. The reason for this is that
people will trust the opinion of friends
and family over silly unfounded claims of
the best pizza in town and such advertised in the local paper.
3. Be unique. Examples of this are
everywhere but they may not seem apparent. Like making a Chicago pie
where there never was one, having a
wood burning brick oven, using insects
as a topping or having a pizza drive
through like OL Jose’s in Pineville West
Virginia where they are using a revolving brick oven.
4. Be a social maniac. Take pride in
being part of your community. Before
there was social media, there were social
men and women. These wonderful people actually cared about the people they
met and considered customers as
friends to share joys and sorrows with.
One very moving example of this is
when people would come to Goodfella’s
Pizza in Staten Island on their way home
from work in the days after 911 just to
get out of the house and be with people
who cared in a friendly and safe environment. There are many examples I
can think of; like the guy who coaches
the local little league, the girl who hosts
local heroes with pizza parties, the place
that supports boy scouts, the place that
sponsors Special Olympics or the guys
that collect donations for slices to feed
the homeless. There are so many ways to
build good will in a community and give
back while earning respect and loyalty
that I could write a book about it but you
get the idea.
5. Service. Run a tight ship that
gives service and shows genuine care for
the customer’s experience. I don’t know
about you but when I am ignored, the
host is not pleasant, the server acts like
he is doing me a favor, the table is dirty
when I am seated or my unfamiliarity
with ordering and the menu is treated
with impatience, you have lost me, and
more importantly, any future income
my patronage may have brought. This
may seem like a given but if you are not
on top of this and setting a good example for your crew it will never happen. A
little thing like a smile or help and directions can go a long way in building a relationship with your customers. One
terrible example I won’t forget was havSee 5 WAYS page 4

Gathering gold
OCTOBER 2015
Howard Appell
FLORIDA
Like it or not we are living in the age
of Social Media and all the changes it has
brought to the table. Facebook, Twitter,
LinkedIn and Instagram are essential
components to fully utilizing and profiting from Social Media Marketing.
Even if you don’t fully understand
how to use the above, you should try to
use them and learn on your own; the
ins and outs of what can help your
business. I have been using them for
years and I still find little hidden
nuggets of gold every day.
How should you use Social Media?
The first step in your use of this technology is still rooted in the dark ages of
business, personal contact and gathering information.

prospecting for

If you have customers walking
through your door you need to capture
information about them that will make
it easy to contact them in the future with
special sales you may run or to congratulate them on a birthday or anniversary.
How do you do the gathering?
In a restaurant, the wait staff is the
front line to prospecting for these gold
nuggets of data. You as the owner or
manager have the duty to provide each
table with cards to be filled out to capture your customer’s Name, Email
◆ Today’s Restaurant Publisher
Address, Birthday, Anniversary and any
other information you feel will benefit
your sales effort. You must train your
staff to make it part of their greeting to
remind guests to fill out the cards and
you may want to offer them a free item
on their next visit for doing so.
Once you start gathering the information, you should create a spreadsheet to enter items in the proper
columns. If you don’t know how to do
this ask for help or contact me at
[email protected] and I’ll send you
a sample. As you enter the data you will
see trends start to emerge like the age
of your customers or if your customers
are over forty or under forty, for example. This will lead to the type of promotion you may want to present to them.
I use data that I have collected
over the years to create special offers
at different times of the year. In fact if
you receive emails from me on a regular schedule you will notice that the
email is sent to you only twice a day,
once in the morning and the other in
the afternoon. If you have never
opened one of my emails you should!
We send you only information that
will be of benefit to you in running
your restaurant. We do not send you
offers for Viagra or to Meet Russian
Women, the emails we send you are
from companies that manufacture or
supply goods and services you can
use. The next time you see an email
from [email protected] open it
and let me know if this isn’t valuable
information for you.
If you want to run an Email
Marketing campaign and don’t want to
run it yourself there are companies that
do it all. I can direct you and help you
get started. Remember to Be Social to
be Successful.

“Bathrooms are for paying customers”
routine but sometimes being human
and having discretion can earn you a
great deal of loyalty. In other words, if it
isn’t costing you anything to be kind-always be kind. Believe it or not but this
also includes salesmen wasting your
time. Those salesmen are not only people but potential customers with family
and friends that also eat.
While no list will guarantee your success, if you follow these points your odds
will greatly be increased and if you
earnestly follow point 5 you will contribute to a better world by treating your
fellow citizens with courtesy. Happy pizza

“Another thing we knew going in is
that every customer wants WiFi. They
want to take pictures, upload them,

Gelvin added.
To satisfy this insatiable desire to
be connected at all times, van den
Broek installed Luxul networking

for customers. To keep customers informed of specials and restaurant info,
two commercial LG display panels

The installation includes a variety

and video zone can be controlled independently from the ELAN mobile

mounted behind the bar. To keep all
the equipment running smoothly and

anything that checks a couple items
off the list is a big help. As far as grand
openings go, ours has been wildly successful, but that does mean that the
staff can sometimes be racing around
to keep every customer happy. In that
environment, giving the bartenders
the ability to change TV channels or
turn up the music from their personal
smartphones is a big help. It saves time
and frustration, and even attracts the
customers’ attention when they ask
how we did that.”
Automating the utilities of the beer
garden was a core consideration during construction, according to Mark
van den Broek, owner of the Sarasotabased electronics integration firm
Smarthouse Integration.
Technology is basically a given for a
modern bar or restaurant, and Rebekah
knew that going in,” van den Broek
said. “But where legacy owners might
see TVs and speakers as the end-all beall, she recognized that more could be
done to simplify operations and free up
staff to attend to customers quicker and
more effectively. In addition, the energy
savings can be considerable. For instance, the beer garden’s lights, TVs and
speakers all automatically turn on 30
minutes before opening and off 30
minutes and after closing. This eliminates the need for a worker to be responsible for these duties, and ensures
that it always happens. Even if someone did turn on a light after closing,
Rebekah can see that and turn it off
using the ELAN mobile app on her
smartphone or tablet.”
In addition to the automated
on/off settings, van den Broek worked
closely with Gelvin to create a smart
lighting timeline that self-adjusts the
lighting levels throughout the day to
match ambient light. Combine that
with an intelligent HVAC schedule, an
integrated security system, 10 IP surveillance cameras and three separate
zones of audio and video, and it’s clear
the ELAN control system plays an essential role in the beer garden’s operations. It even gives the staff instant
control over the beer garden’s func-

The sharing economy is booming
right now and will only continue to
grow. According to PwC, it’s estimated
to hit $335 billion by 2025, up from
$15 billion today. As the sharing economy takes off, restaurants are starting
to get in on the action. Restaurants
are increasingly outsourcing their delivery and e-commerce services to
third-party services like Postmates
and DoorDash. While these services
allow restaurants to finally enter the ecommerce market without creating
additional overhead costs or work
for managers, they also put the
brand’s customer experience at risk.
According to a study by
Acquity Group, 52% of
consumers blame the
brand the product is
ordered from (rather
than the shipping
company) when a
deliver y fails to
arrive on schedule
and as expected.
And of those who
indicated an order
hadn't arrived on
time, 63% claimed it influenced future
shopping decisions in some way.

restaurant that originated in South
Florida on Las Olas Boulevard and expanded to downtown Miami, has announced a new location will launch in
Tampa. Lisbeth Alvarez of High Street

negotiated
the lease of
the 12,000 plus

being repositioned by Convergent

Island Blvd., contains more than 8,000
square feet of interior space and more
than 4,000 square feet of bay front patio

Lamb Weston® provides operators
with the ability to know where their
fries originated and then share that
information with patrons. A growing
number of consumers want to know
where their food comes from. In fact, a
recent study noted that “65 percent of
consumers indicated that knowing
where their food comes from is of high
importance”* and “72 percent of
Millennials believe they should learn
more about the food they’re consuming”**. Lamb Weston’s new website solution, TraceMyFries.com, brings
operators together with the information they need, allowing the operator to
be more transparent
with their patrons about
one of the top selling
items on their menu.
“We’re helping our customers tell the story of
their fries – and it all
starts with the potato”,
said Ashley James,
Director of Strategy for
Agriculture Services at
Lamb Weston. “The
farmers we work with take great pride
in growing our high quality potatoes
and we are excited to share their story
with our customers.” First into the

relationships with their patrons by offering the unique opportunity to trace
their fries back to one of five growing
regions. Using a code found on Lamb
Weston branded french fries, customers can visit the website to see the
area that the potatoes
in their fries come
from, along with
some of the
farmers who
grow those potatoes. “As a collaborative partner,
Lamb Weston shares resources that will
help customers grow their business.

Ferrero Foodservice, the North
American foodservice division of the
international confectionery company
Ferrero, has released a new 35.2 oz. (1
kg.) piping bag of its Nutella® hazelnut spread. The new packaging format
allows foodservice operators to easily add Nutella®
to baked goods and other
menu items. The new piping bags are available in
12-count cases, and each
piping bag contains more
than two pounds of
Nutella® hazelnut spread.
Foodservice operators can
use the piping bags to top, fill and layer
baked goods, crepes and breakfast
foods. Whether operators want to decorate a cake, enhance waffles or crepes,
or fill a croissant, it’s easier than ever
with these Nutella® hazelnut spread
piping bags. When the bag is empty,
clean-up is easy: each bag is disposable,
so there is less clean-up time compared
to traditional canvas or polyester pastry
bags. Nutella® is also available to foodservice operators in 6.6 lb. containers,
26.5 oz. jars, 0.88 oz. mini jars, and 0.52
oz. single-serve packets. For production information, distributor information visit www.nutellafoodservice.com.

Figuring out how to save money
without giving something up can be a
tough trade-off for food and hospitality
establishments, but not when it comes
to signage. According to Bright White
Paper Company, Palm City, Florida,
their unique, affordable magneticlined frames for windows,
can be changed and different inserts such as menus,

magnetic lined frames come
in seven sizes between 8½"

standard color is black, but
custom colors are available. Easyboards
also come in variations such as display

Because Presentation Matters
OCTOBER 2015
Phoenix, AZ - Go To Containers™
recently announced the launch of a revolutionary new product line in response
to consumer demand for improved
take-out packaging. The company's first
product, the Sani-Stak™ container, is a
patented and unique container that addresses challenges faced by take-out,
such as reducing the incidences of
foodborne illnesses, reducing chances
of contamination of food from allergens, making meals easier to transport,
keeping food crisper, and simply providing a better overall presentation to
the diner. Sani-Stak™ containers are
sure to promote customer satisfaction
and give food service operators an edge
in the market place.
According to Business Insider,
Americans spend $70 billion a year on
takeout with 60 percent of Americans
ordering food for takeout or delivery at
least once a week. The market has become highly competitive with food
service operators looking for an edge
over their competitors.
How does Go To Container's SaniStak™ products improve the take-out
experience? Well, typically, souffle cups
with dressings or condiments are placed
inside a take-out container with a salad,
appetizer, or meal. This is a common
practice, but not the best choice when
considering food safety. The goal was to
design a takeout container that would
give restaurants another option without
the increased expense of having to bag

multiple items. The Sani-Stak™ container was created to:
u Allow portion cups ranging from
1 to 3.25 oz. to securely nest on top of the
container and separate from the meal.
u Allow for two or more containers
to stack and nest on top of each other
preventing them from sliding.

The Diestel Family Turkey Ranch,
sustainably raising turkeys for over four
generations, is introducing a NONGMO Project Verified Natural Whole
Turkey to its family
of holiday offerings. These slowgrowing birds are
given plenty of
time and space to
develop naturally
in the clean Sierra
Nevada foothills,
resulting in a juicy,
tender turkey with old-fashioned flavor.
Known for “all that white meat,” these
turkeys provide excellent value with
more meat, less fat and less water than
some other turkeys. Diestel’s turkeys
are fed a 100% vegetarian diet of premium grains enhanced with vitamins
and minerals. Milled daily on the ranch,
Diestel’s feed is completely free of antibiotics, growth enhancers, hormones,
gluten, animal by-products and DDG’s
(dried distillers grains). The NON-GMO
Natural Turkeys are now available to
foodservice customers nationwide.
Owned and operated since 1949, the
Diestel Family Turkey Ranch is proud to
be one of the last small, family owned
turkey grower-processors in the United
States. Visit www.diestelturkey.com for

Whitelabel Platform, a full suite of
technologies for restaurants to run
their business on the internet. The key
feature on the platform is the ability for
restaurants to launch custom-branded
native mobile apps to
help them connect with
and engage their customers, and operate at
internet scale. Ashish
Goel, Chief of Product &
Design, Zomato said
"While speaking with a
lot of restaurant owners,
we realised that most of
them do not have an app or digital presence and they want to harness the
power and distribution of the internet
and mobile to grow their business. And
that there is no one single service
provider for restaurants which can give
them the entire suite of technologies required to run an internet presence
closely integrated with the operations of
their business. We see this as an opportunity to have a larger impact on the
food-tech ecosystem, as well as create a
larger overlap between tech and food."

Restaurant Vendors
The Restaurant Vendors Association is a South Florida networking group
concentrating on the hospitality industry. What makes the RVA unique and
successful is members do not compete with each other. Only one company
is allowed for each business category - this insures a free flow of information
and leads between members and creates a win-win situation for everyone.
Members generate business for one another and are assured of quality
product and services in return. Food and beverage operators recognize RVA
members as fair, efficient and reliable. New members are always welcome!
