A sifter separates desirable elements from unwanted material using a filter such
as a mesh or net. A strainer is a type of sifter, or sieve commonly used to separate a
solid from a liquid much as it did since the 1800’s.
Historically used as a simple, convenient method of separating particles of various sizes, particularly with food,
the sifter, or sieve has existed since the beginning of recorded history. Especially noted since the turn of the 19th
century, the flour sifter, once the most common, has very small holes which permit the finest of particles to
pass through them. The coarse particles are kept in the sifter and are broken apart by the mechanical process
performed on this tool. Its history during this era indicates that Native American tribes and the military made
the most use of this instrument in cooking.
During that era, the tea strainer, or sifter appears to be the most popular of the sifters. Such a strainer is placed
over or in a teacup to catch tea leaves. When tea was brewed traditionally in a teapot, the tea leaves were not
contained in tea bags, but rather freely suspended in water. Such strainers used to, and still do, fit into the top
to catch the leaves as the tea is poured. Their use declined in the beginning of the 20th century with mass
production of the tea bag. During the 19th century, they were made of either tin or stainless steel. For the
wealthy, such sifters were made of sterling silver or china. Other types commonly used during that era through
today include a colander, which is a bowlshaped sifter used as a cooking strainer and a mesh sifter generally
consisting of a fine metal mesh screen on a metal frame.
