I often hear the exclamation,
"There's mold on my sprouts!" While
possible, it's unlikely you'll get mold
when you follow the directions on
our sprouts packets. The "mold" is
actually part of the growing sprout
called root hairs (see picture). These
incredibly fine filaments can resemble
mold and often show up between
rinsing, giving the impression that
something other than sprouts is
growing. As long as you practice
good sanitation, rinse frequently
and there are no bad smells, you
can safely enjoy your fresh, delicious
sprouts.

Flourless Beet Torte

Ingredients:
2 1/2 c peeled, grated beets
1 c agave nectar
4 eggs
1/2 c grapeseed oil
1 T pure vanilla extract
1/2 t almond extract
1/2 c cocoa powder
1/2 t sea salt
Preheat oven to 350°F. In a medium
saucepan, combine beets and agave;
bring to a boil. Reduce heat and
simmer 30 minutes or until beets are
soft. Remove from heat and allow to
cool slightly. Transfer mixture to food
processor or blender and purée on
high until smooth. Allow to rest until
cool enough that eggs will not cook
when added. Add eggs, oil, vanilla,
almond extract, cocoa and salt and
blend until incorporated. Pour batter
into a well greased 9-inch round cake
pan. Bake for 20-25 minutes or until
a knife comes out clean from the
center. Cool and serve.

Super-Food Smoothies!
There are a million smoothie recipes out
there. They are a great way to include the
benefits of fresh, raw food into our diet.
Here’s the general formula I use to make
my smoothies. In a blender, lightly pack about 1/3 with
leaves of kale, chard, spinach or beets…I skip the lettuce.
The remaining 2/3 of the smoothie can be any combination
of fruit you like. I personally like banana and frozen
blueberries but try any combination of apples, mangoes,
pineapple, melons, peaches, or whatever you like. Add a
small amount of your favorite supplement, such as protein
powder or flax seed oil, plus liquid to facilitate the blending
— water or juice is best. Blend until smooth. Enjoy then

A SPICY BITE OF HISTORY

grows is Community Food
Share,
a
great
local
organization that helps feed those in need. One early fall
day she grabbed a basket full of Swiss chard, kale and basil
and headed out.
Community Food Share in Louisville, Colorado, distributes
over 8 million pounds of food each year to local agencies
and families. They’re a dependable source of help for
community members in need. During Judy’s visit, Tom
Reed, Food Procurement Manager, told her donations of
fresh produce from local gardeners are “the best produce we
get” and “highly coveted,” because they increase the
nutritional value of their offerings. She also learned that
anyone and any size donation makes a difference. Tom

assured her that donations of all sizes are welcome, saying,
“You’re not going to feed everybody we serve, but you’re
going to feed somebody.”
A few tips from Tom made it obvious that anyone could
donate. Produce that is fresh and whole overshadows any
superficial flaws they have. Bundled stems of herbs and
greens and boxed fruits and vegetables make them easier to
handle and distribute. Tom also suggested considering
delivery part of the donation. Many food banks can’t pick
up food so delivering your donation is a blessing to them.

Drying the herbs from your garden is a great way to
ensure your spice cabinet’s contents are fresh, flavorful
and free of pesticides and preservatives. Herb drying
is easy, and best of all, you can share these herbs with
friends in prepared combinations perfect for cooking.
Making your own drying rack is easy and inexpensive. Materials include:
an 8’ piece of wood trim, plastic screening (window material), nails, staple
gun and cooking twine. Cut the trim into pieces of 2 ½’ x 1 ½’ to make a
rectangle. Nail the trim pieces together and then use a staple gun to secure
the screening material to the bottom of your rack.
Cut your herbs first thing in the morning. Bundle them together with
cooking twine and rest on drying rack with adequate spacing between
varieties. Let the herbs dry for a week in a
cool location inside. Once dry, place the herbs
on parchment-lined plates.
Next, gently rub the leaves, seeds and flowers
off the stems of the dried herbs. Measure out
the portions by sliding them from the
parchment to a measuring cup. Transfer the
completed blends into recycled sterilized jars.

Diane Strong, owner of Niwot Florist, in
cozy Niwot, Colorado, is a big believer in
the power of flowers. She says, “You don’t
need a big bouquet to show someone you
care—it’s the little things that let people
know they’re loved and flowers say it
best.”
During a recent visit, Diane shared some tips for creating her
popular mini bouquets:
• Start with a small vase or other cute miniature container.
• A few larger focal flowers finish the arrangement and add a
spectacular pop of color. Try cosmos, butterfly flower,
delphinium or mini sunflowers.
Some bouquets are naturally whimsical in design when
inspired by a hodge-podge of flowers collected from the
garden and chosen for their unique color, texture and size.
Any flower leaning towards the petite side is fair game. Once
your imagination gets rolling you’ll find that the possibilities
are endless!
• Always use a sharp knife rather than scissors to cut the
stems at an angle. Using scissors crushes the stem and hinders
water uptake.
• Create the base of your arrangement from foliage, herbs, or
seed heads like dill, fennel or parsley.
• Next, layer in filler flowers. Choose petite varieties like
forget-me-nots, yellow buttons daisy, scarlet or blue flax, and
cottage pinks.

with the usual tomato, cucumber,
