Sugar and Spice Salmon,
Avocado Mash + Black Beans

–2 small mixing bowls
–Measuring spoons
–Heavy skillet

What You Need
–Canola Oil
–Kosher or flake sea salt
–Coarsely ground black pepper
1. Mix the rub: In a small bowl, stir
together the chili powder, brown sugar,
coriander, minced garlic, ½ teaspoon salt
and ¼ teaspoon pepper.
5. Cook Beans: In a small sauce pan, stir
together the beans, red onion, remaining
spice mixture and juice from 2 lime
wedges. Salt to taste. Cook until just
heated through.

to balance out the spicy chili.

met with the roasty, sweetness of a Stout.

heat, until hot. Add 2 tablespoons canola
oil. When oil starts to shimmer, place
the salmon in the pan (skin side down).
Cook without moving for 3 minutes then
flip over. Cook until crispy on the outside
and just cooked through in the center
(about 3 more minutes).
To Serve: Top each salmon fillet with
a dollop of the avocado mash and
serve black beans on the side. Squeeze
remaining lime wedges over. Garnish
with the reserved cilantro-jalapeno mix.
