What is Byram River Rum?
The Byram River runs past our distillery in Port Chester, NY
and flows into the Long Island sound. In the 1800’s
Port Chester was an important stop for transatlantic steam
ships. These days you’ll find commercial fishing boats and
marinas with pleasure craft docked along its banks. One day,
the commercial fishing boat captain who docks nearby stopped
by the distillery and chatted with Ed Tiedge, our distiller.
While they were talking and tasting our honey spirits he asked
why we didn’t make rum too. That caused Ed to think,
“Since we’re pretty good at fermenting and distilling sugar
collected by honey bees, why not ferment cane sugar
and molasses?” Right there Byram River Rum was born.
What makes Byram River Rum unique?
After dozens of fermentation and distillation experiments
we settled on a special blend of cane juice for its floral notes
and sweet molasses for its hardiness. We then selected a
unique strain of wine yeast to bring out the best in the cane
and molasses and create a “cane wine” that is delicious in its
own right. After careful temperature controlled fermentation
we conduct a precise distillation to extract only the most
flavorful heart of the spirit that makes rum with real depth
and character. We know you’ll enjoy Byram River Rum neat
or in your favorite rum cocktail. And where did we find the
mermaid on our label? Tattooed on the leg of our distiller
of course.
