1 Box Yellow cake Mix (extra moist)
3 Large Eggs
1/2 Cup Butter (melted)
1/2 Cup Pecans (chopped)
2 Cups Powdered Sugar
8 Ounces Cream Cheese
LEMON CURD:
• Juice of 3 Lemons or 5/8 Cup Lemon Juice
• 1/2 Cup Butter
• 6 Egg Yolks
• 3/4 Cup Sugar
Combine lemon juice and butter in sauce pan, simmer
then remove from heat. Whisk together egg yolks
and sugar. Pour 1/2 lemon mix into egg mixture and
whisk. Pour back into sauce pan with remaining
lemon mix and over medium heat, stir
constantly until thick
for 5 to 7
minutes.
Let cool then
refrigerate.
