Luck of the Irish in the Produce Department
When you think of St. Patrick’s Day, one
of the first things to come to your mind
besides beer and leprechauns, is the color
green. Luckily for the produce department, this is easy as many fruits and
veggies are this signature color.
One of the most popular Irish foods is
green cabbage. With only 25 calories in a
cup, this veggie is an excellent source of
vitamin C and K, as well as fiber. This is a
key ingredient in corned beef and cabbage, a St. Patrick’s Day favorite.
While not green, red potatoes are one
the preferred vegetables to consume on
St. Paddy’s Day. They are said to have

first been brought to the US by Irish
immigrants, and is the known culprit in
the Irish Potato Famine in the 1800’s.
Eat these boiled like a “real” Irish this St.
Patrick’s Day!
Also not green, but included in the list
of top Irish foods, is the carrot. Slieve Na
Mban carrots is a traditional recipe of the
Irish, which is, simply, carrots and cream.
Give it a try as a side dish!

Colcannon
Prep Time: 2 minutes
Cook Time: 40 minutes
Serving Size: 4
Ingredients:
• 1 Pot O’ Gold Kit from Crazy Fresh
• 1/4 pound of butter
• 1/2 cup of cream
• 1 cup beef stock
• Salt and pepper to taste
Instructions:
1.Rough chop the cabbage from the
Pot O’ Gold Kit. Add ingredients from
the kit to cold water in a large pot.
2.Bring to a boil and simmer for
30 minutes. Drain and mash the
ingredients.

3.Add cream and butter; stir well.
Add stock as needed to get desired
consistency. Add salt and pepper to
taste.

March 17th is St. Patricks Day
Blarney! This annual holiday could become a good one-day sale!
Saint Patrick was so-named because he
introduced Christianity to Ireland in the 4th
century. These days, people all over the US
also celebrate the holiday in some way whether
they’re among the 33 million with Irish ancestry
or not. This means a reasonable opportunity
for some extra sales and profits in the produce
aisle.
St. Patrick’s Day is always March 17th, the day
of his birth, and this year it falls on a Thursday
so a one-day sale fits just ahead of weekend
business.
Whether your store writes its own ad or is part
of a circular program, these are the traditional
items for the holiday:
- Green Cabbage
- Red Potatoes
- Carrots
- Yellow Onions
Especially if you have a refrigerated fixture in
your center aisle, you can build a ‘one-stopshop’ display with these items which are basic
to corned beef and cabbage and Irish beef stew
recipes.
The reason green has become the color known
for St. Patrick’s Day is that it also signals the
coming of spring, which this year looks to be
early. So other ‘green’ items carry through this
theme. Here are some other items (and also

Certainly, use whatever items work for you in
your department. If you store doesn’t have a St.
Patty’s Day themed ad, put shamrocks on signs
and make it an in-store special sale. The point
is to do something different and fun other than
just the usual items which fit into the traditions
of the holiday. Remember that this is also
tournament time for high schools for a variety
of sports, including the NCAA Men’s Basketball
Tournament with 10 millions viewers per day,
on average.
Don’t forget organic items if your department
has room and traffic to support movement.
On average, about 6-8 percent of consumers
purchase only organic items, and another
15-20% are crossover shoppers who will
occasionally buy them.
