PAC at Madison Farmer’s Market
Thursdays: July 10th & 31st, August 7th
& 21st, Sept. 4th, October 2nd & 16th
Park Avenue Club is heading to the Madison
farmers market. Our culinary philosophy is
very much farm to table and through our
relationship with the Park Avenue Foundation
it is centered around the “Spirit of Giving”. It is
our goal to give back and what better way to
give back than to break bread with our
neighbors who support the same culinary
philosophy as the club. This is a wonderful
opportunity for the Chef to educate the market
goers on unique and creative ways to utilize the
best of the fresh produce. We will also create
exciting dishes for children as well so that a
vegetable becomes a friend and not a foe. At
the market you may also take advantage of their
Buy Fresh/Give Fresh -”Madison Shares the
Bounty” program. This is an initiative to bring
farm fresh produce to soup kitchen recipients
in Morris County.
Every week this season, shoppers will have the
opportunity to buy produce at the market and
drop it off at the markets “Buy Fresh/Give
Fresh” wagon right in the middle of the
market. At the end of the day all the produce is
picked up by Madison volunteers and taken to a
local soup kitchen and food pantry.
When you visit on the dates above make sure
to drop by PAC’s stand and taste the
chef’s creation.

Jude M. Pfister's fourth book,
America Writes Its History, 1650-1850
has just released!
About the Book: By turns irreverent,
sympathetic and amusing, America Writes Its
History, 1650-1850 adds to the public discourse
on national identity as advanced through the
written word. Highlighting the contributions of
American writers who focused on history, the
author shows that for nearly 200 years writers
struggled to reflect, or influence, the public
perception of America by Americans.
This book is an introduction to the development
of history as a written art form, and an academic
discipline, during America’s most crucial and
impressionable period. America Writes Its
History, 1650-1850 takes the reader on a
historical tour of written histories--whether
narrative history, novels, memoirs or plays-from the Jamestown Colony to the edge of the
Civil War. The thread of history running
through these two centuries from Jamestown to
Fort Sumter is encapsulated by this question:
What exactly did we, as Americans, think of
ourselves? And more importantly; What did we
want non-Americans to think of us? In other
words, what was (and is) history, and who, if
anyone, owns it?

Grilled Skewered
Chicken Dipped in
Smoky Paprika
Garlic Sauce
INGREDIENTS:
12 wooden skewers
2 lbs boned, skinned chicken breasts, cut into 1 1/2-in. cubes
1/2 cup chopped fresh cilantro
1/4 cup extra-virgin olive oil
2 tbsp fresh lime juice
2 tsp minced garlic
4 tbsp minced garlic, sautéed until slightly brown in olive oil & chilled
2 bell peppers, large diced for skewers (optional)
2 Spanish onions, large diced for skewers (optional)
1 tsp coarse kosher salt
1 tsp smoked Spanish paprika
1/2 tsp freshly ground black pepper
3/4 cup peeled roasted red peppers (canned or fresh)
1 slice crusty bread, toasted and cut into cubes
1 tbsp sherry vinegar
DIRECTIONS:
1. Soak wooden skewers in cold water at least 30 minutes before using.
In a large bowl or re-sealable plastic bag, combine chicken, cilantro, 3
tbsp. olive oil, lime juice, 2 tsp. minced garlic, salt, and pepper. Toss to
coat, then marinate, chilled, 25 minutes.
2. Meanwhile, put roasted peppers, Spanish paprika, bread, vinegar,
sautéed garlic, and 1/4 cup olive oil in food processor and whirl until
puréed; sauce will be thick (take on Romesco).
3. Preheat a gas or charcoal grill to medium-high (you can hold your
hand 1 to 2 in. above cooking grate only 3 to 4 seconds). Thread chicken
onto skewers, alternating large diced peppers and onions if wanted,
discarding marinade. Lay skewers on grill (cover if using gas) and cook
4 minutes. Turn skewers over. Cook 4 minutes, until chicken is browned
and cooked through. Serve hot, accompanied by sauce and a squeeze of
fresh lime.

1 ¼ oz. to 2 oz. Pimm’s No. 1
1 Sprig of Rosemary
1 Sprig of Thyme
1 Sprig of Mint
1 Slice of Cucumber
1 Strawberry Quartered
½ oz. of Lemon Juice
Ginger Beer
DIRECTIONS:
In the bottom of a 10-14oz glass muddle
Cucumber, Thyme, Mint and Rosemary. Add
Pimm’s and Lemon. Stir. Add Ice and balance
with Ginger Beer. Garnish with Strawberry.
