Dedication
Lyme Ambulance
Forty years ago, Lyme relied on a doctor who made house
calls to treat an emergency, or an ambulance might be called
up from Old Lyme, with considerable delay. In 1975, while
serving his second term as First Selectman, John Yeomans
envisioned the need for a hometown ambulance unit that
could respond more rapidly. John was able to secure
generous donations, non-profit designation, and enough
volunteers to make his idea a reality. The Lyme Ambulance
Association, Inc. was officially founded and registered as a
non-profit corporation with the state on July 8th of that same
year. By the summer of 1976, they were ready to go: an
ambulance was stationed in Hadlyme, volunteers had been
trained, a dispatch system was in place, and contributions
began coming in to sustain the service.
Lyme Ambulance Association remains one of New England’s
few remaining “no-cost to the patient” emergency and basic
care ambulance services. For forty years, it has remained an
independent, all-volunteer organization, sustained by the
generosity and vision of the Lyme community.
State-certified crew members are on call day and night,
providing aid not only to Lyme residents, but sometimes to
neighboring towns. Lyme Ambulance is always present at
fire calls, joins the Lyme Fire Company for some training
events, provides “Friends and Family” CPR classes, and offers
standby coverage for a number of community events, most
notably the Hamburg Fair. More information is available at

Just as the Hamburg Fair exemplifies the commitment
of Lyme to preserving its agricultural heritage, the Lyme
Ambulance Association exemplifies the community vision and
volunteer spirit unique to Lyme’s small town quality of life.

Lyme Grange #147, Inc.
The Grange is a program rich in fellowship, which focuses on
and is dedicated to supporting and helping our families in an
ever-changing world.
Lyme Grange members are always busy with community
service, helping those in need with transportation, meals, a
cheery visit with shut-ins; collecting labels for education, Bikes
for Kids, local food bank/soup kitchen and much more. Lyme
Grange sponsors Lyme Cub Scouts Pack 32. The cubs then go
on to the Lyme/Old Lyme Boy Scout Troop. The Lyme/Old
Lyme Scout Troop has the MOST Eagle Scout candidates in
the State of Connecticut. The Grange thanks the Scouts for all
their hard work and continued support.
Lyme Grange meets the 1st Thursday of each month. Come
visit, join the Grange or the Junior Grange. Enjoy the

Rules & Regulations
Entries and Exhibits
Entries and exhibits accepted at the Grange Hall during
these times only: Thursday 7:00-9:00 pm and Friday 1:00 4:30 pm.
All entries and exhibits must be picked up PROMPTLY at
5:00 pm on Sunday. Fair is not responsible for entries and
exhibits after 6:00 pm.
NO late entries accepted.
Judging will take place in the Grange Hall on Friday night
5:00-8:00 pm. The Grange will remain closed during this
time.
Chairman will make final decision should there be a judging
conflict of any contest.
Exhibits and entries will remain until Sunday at 5:00 pm
and are to be picked up promptly at that time. Fair
committee is not responsible for items left after 6:00 pm.
NO professionals allowed to compete or exhibit.
NO alcoholic beverages allowed on premises.
NO sleeping allowed on premises.
NO cars allowed on premises.
NO pets (except service dogs) allowed on premises.

General Rules
1.Entries will be accepted in the Grange Hall Thursday from 7:00 to
9:00 pm and Friday from 1:00 to 4:30 pm. Judging will take place
Friday at 5 pm during which time the building will be closed.
2. In fairness to all fair goers and other exhibitors, photographs must
remain on exhibit until 5:00 pm Sunday and may be picked up
beginning at 5:00 pm.
3. No professional photographers may exhibit.
4. Photography committee reserves the right to re-classify entries.
5. No picture frames/glass will be accepted.
6. Exhibitor’s name, address, phone number and category must
appear on the back of each entry. Please indicate if the photo is
being entered for the Youth (ages 14 and under) judging.
7. No photo previously entered in the Hamburg Fair will be
accepted.
8. Exhibitors may enter a maximum of two (2) exhibits per category.
9. Photographs must be 8"x10" or 8"x12" in size and must be
matted or mounted to no larger than 12"x14".
10. Nature photos may not show people, domestic animals or
anything man-made.
11. No photo enhancement. Computer altered, laser or scanned
photos are not accepted.

2016 CT Photo Contest
Sponsored by the Association of Connecticut Fairs
The theme for the annual photo contest is “Connecticut Fairs.” The
photos submitted should show general scenes around our member
fairs. Photos must have been taken after September 30, 2015. The
photos entered do not have to be exhibited at any member fairs to
be eligible.
See Association of CT Fairs website (www.ctagfairs.org) for all
rules and official entry form. They will also be printed in the annual
Association of Connecticut Fairs listing booklet.
New This Year: Junior Digital Photo Contest
Take photos on your phone, pad or camera at any of our member
fairs and send via email, text or facebook to [email protected].
All photos must have been taken by someone who has not reached
19 years of age by July 1, 2016. Number of photo submissions is not
limited. NO SELFIES.

State Quilt Contest
Sponsored by The Association of Connecticut Fairs
**State specifications are different than Hamburg Fair**
This contest is open to all residents of CT: men, women and juniors.
If entered by juniors, they will be judged with all adult entries. Any
entry that is entered at the Hamburg Fair is automatically competing
in the local contest.
Contestants may enter a contest at as many member fairs contests
until they win first prize. They will then represent that fair in the state
contest. Judging will be based on overall appearance, workmanship
and originality. Decisions of the judges are final.
The winner of Hamburg Fair Quilt Contest will receive a blue ribbon
from The Association of CT Fairs and will become eligible to submit
their entry to the state contest. The state contest will be held at The
Association of CT Fairs Fall meeting (check www.ctagfairs.org for date
and location).

Rules
1. All work must be completed by an individual quilt maker.

CT State Baking Contests
Sponsored by Association of CT Fairs and King Arthur Flour
General Rules
The contest is open to all men, women and juniors who are CT
residents. Commercial and professional bakers are not eligible.
Divisions: Junior (ages 7-15 as of July 1st) Senior (age 15 & up)
Contestants may enter the contest at as many fairs as they wish until
they win first prize. They will then represent that fair at the state
baking contest. Please submit entries to both the local and state
contest on disposable plates. The Association of CT Fairs and the
local fairs are not responsible for the return of baking containers.
Local Contest: The winner of the Hamburg Fair will receive a blue
ribbon from the Association of Connecticut Fairs and will then
become eligible to submit their entry at the state contest.
State Contest is held as part of the Fall Meeting and Convention of

Chocolate Cake
1.Preheat oven to 350 degrees F. Grease three 8-inch round cake pans, line
the bottoms with rounds of parchment paper, grease the parchment, then
flour the insides of the pans, tapping out excess; set aside.
2.In a large mixing bowl, sift together the flour, sugar, cocoa powder,
baking soda, baking powder and salt. In a medium bowl, whisk together
the eggs, buttermilk, coffee, oil and vanilla.
3.Add the wet ingredients to the dry ingredients and mix for 2 minutes on
medium speed. Scrape the sides and bottom of the bowl and mix for an
additional 20 seconds (the batter will be very thin).
4.Divide the batter evenly among prepared pans. Bake for 20 minutes and
rotate the pans in the oven. Continue to bake until a toothpick inserted
into the center of one of the cakes comes out almost clean (with a few
moist crumbs), about 12 more minutes. Cool the cakes (in the pans)
on wire racks for 20 minutes, then carefully turn them out onto cooling
racks to cool completely.
Toasted Marshmallow Filling
1.Place the marshmallows on a baking sheet lined with aluminum foil and
sprayed with nonstick cooking spray. Place on the lowest rack of oven,
and broil marshmallows until nice and brown on top, keeping an eye
on them the entire time so they do not burn. Remove pan from oven
and gently turn the marshmallows over, and broil until the other side is
golden brown.
2.Beat the butter and powdered sugar on low speed until blended together, about
1 minute. Add the vanilla extract and increase the speed to medium-high;
beat for 3 minutes. Stop the mixer, add the Marshmallow Fluff and toasted
marshmallows, and mix on the lowest speed for about 1 minute, scraping the
sides of the bowl as necessary.
Malted Chocolate Frosting
1.Beat the butter and powdered sugar on low speed until blended together, about 1
minute.
2.Add the Ovaltine, vanilla and salt, and continue to beat on low until well
combined, about 1 to 2 minutes.
3.Add the melted chocolate and beat on medium speed until smooth, about 2
minutes.
4.Add the heavy cream and beat on medium-high speed for another minute.
Cake Assembly
1.Slice each cake layer in half horizontally so you have six cake layers.
2. Place your first layer face-up on a foil-covered cardboard* and cover with onethird of the Toasted Marshmallow Frosting.

3.Place another cake layer face-up and cover with about 3/4 to 1 cup of Malted
Chocolate Frosting.
4.Repeat, alternating marshmallow and chocolate filling layers, until you come to
your final layer, which you will place face-down.
5.Frost the entire outside of cake with the remaining Malted Chocolate Frosting.
*Foil-covered cardboard should be no more than one inch from edge of cake.

Blueberry Filling

temperature, about 30 minutes.
3.Roll out the chilled dough to 1/8 inch thick. Using a round 4 1/2 inch
cutter, cut 8 discs from the dough, re-rolling scraps as necessary. Transfer
the discs to prepared baking sheet and refrigerate for 10 minutes.
4.Remove the dough discs from the refrigerator. Place 1 tablespoon of the
filling in the center of each disc. Lightly brush water around the edge of
half of the disc, and then fold the other half over the filling to create a
half-circle. Seal and add a decorative border by pressing the edges of the
dough together with a fork.
5.Brush them with egg wash. Using a paring knife cut a few steam vents
into the top of each pie.
6.Bake until filling is bubbly and thick and the crust is golden brown, 2025 minutes.* Remove from the oven and place them on a cooling rack.
Let cool completely.
*It is customary for blueberry filling to ooze slightly in baked pastries.
Lemon Icing Glaze
1.In a small bowl, mix together confectioners’ sugar and vanilla.
2.Add the lemon juice, then the milk, and stir to combine. If necessary, add
more milk, 1 teaspoon at a time, until the glaze is smooth and fluid.
3.Drizzle glaze over the top with a fork.
Yield - 8 hand pies. Submit 6 hand pies on a white paper plate.
