1. Background
Stinging Nettle (Urtica dioica) is perennial shrubs, which is rich in vitamins A, C, iron,
potassium, manganese, and calcium. Nettle leaves Powder is consumed as vegetable paste and
also used for medicinal purpose. It is assumed that consumption of nettle leaves powder is
beneficial to people having diabetes, stomach acid, diarrhea and dysentery, asthma and acts as
blood purification agents. Due to increasing health consciousness and diabetes problems, the
demand of the nettle leaf powder is increasing in Nepal.
There is abundant source of Stinging Nettle available in national forest of mid and high hills of
Nepal but the resource is underutilized. The enterprise can be established in rural area where
there is abundant source of nettle leaves and the product is sold in urban area.
2. Introduction of the Technology
To prepare the nettle leaves powder we need electric dryers, Leaf grinders, weighing machine
and sealing machine. Operation of electric dryer and grinder is simple and can be handled by
anyone with 2-3 days orientation training. Leaf is dried at 50-55 °C about four hours until their
moisture content is below 10% (until it gets very bristle). Over drying should be avoided since it
burns the leaves and destroys the color and taste of the powder.

the leaves destroying the color and taste of the powder
If the grinder is used for other purpose (to grind other material), it should be properly
cleaned by using blower
Toolbox should be available for general maintenance work like tightening of bolts etc.
6. Suggestions for safety
•
•
•
Mask and gloves should be used while Picking, Heating, Grinding and Packaging to
avoid dust hazards and for hygienic purpose

Manually operating Leaf Cup Making Machine
Tapari
1. Background
Leaf cups and plates (Tapari, Duna and Bota) are traditionally made by hand in Nepal. These
leaf plates and cups are made up of Saal trees (Shorea Robusta) which are most commonly found
in the mid hills and Terai regions of Nepal. The plates are disposable and commonly used for
serving food at marriages, religious functions and social functions. The laborious craft can now
be converted into a machine operation to make these containers in elegant shapes and sizes.
These have good dimensional stability and are inexpensive, hygienic and biodegradable.

2. Introduction to the Technology
The leaf cup machine is a simple pedal operated machine, manually operated with minimum
power consumption. It requires 300 watts of electric power. It can also work without power by
kerosene oil blow lamp. The leaves are washed and dried to retain their pliability and kept in a
polythene bag to avoid drying before use. The leaves are placed on the lower die platen; the
pedal is pressed down and released after a few seconds. All the operation like folding, trimming,
pressing into shape and drying are done in a single operation by pressing the pedal lever. The
leaf cup, subjected to heating to 150 degree C for 10 seconds also gets sterilized.

Wilting of the tea
1. Background
There are different types of tea with different taste, smell, and visual appearance, tea processing
for all tea types consists of a very similar set of methods with only minor variations. The tea
processing in the small scale is not usual in Nepal but very few tea producers have been
practicing the processing of tea in a small scale with some specialty like as herbal and green tea.
The catalog describes the technology and the procedure of small scale tea production which are
very applicable in the tea growing areas.
2. Introduction of the Technology
This technology uses simple process of manufacture. For small scale processing, a set of Hot air
– Heater, Rolling Machine, De-enzymer- Vaporizer, Dryer and sorting machine are required.
One skilled man power and two unskilled manpower can operate to its full capacity.

Tea leaves and flushes, including a terminal
bud and two young leaves, are picked
typically twice a year at early spring and
early summer or late spring.
Withering is used to remove excess water
from the leaves and allows a very slight
amount of oxidation. The leaves can be
either put under the sun or left in a cool
breezy room to pull moisture out from the
leaves
The leaves are left on their own in a climatecontrolled room where they turn
progressively darker. Oxidation is highly
important in the formation of many taste and
aroma compounds, which give a tea its
liquor colour, strength, and briskness.
Kill-green is done to stop the tea
leaf oxidation at a desired level.
Lightly heated in a closed container, which
causes the previously green leaves to turn
yellow
Rolled to be formed into wrinkled strips, by
hand or using a rolling machine which
causes the tea to wrap around itself. This
rolling action also causes some of the sap,
essential oils, and juices inside the leaves to
ooze out, which further enhances the taste of
Drying is done to "finish" the tea for sale.
This can be done in a myriad of ways
including panning, sunning, air drying, or
baking.

Rice Milling (Cellar)
Rice cellar Machine (De-husking Machine)
Rice polisher
1. Background
A rice huller is an automatic machine used to removing the chaff (the outer husks) of rice grains
Rice milling removes the husk and the bran layers, and produces an edible, white rice kernel.
The by-products in rice milling are rice hull, rice germ and bran layers, and fine broken. This
technology is very much useful in the rice producing areas of mid-hills, river-basins and the
foothills of the mountains.
2. Introduction to the technology
Rice huller is commonly used for rice husking in rural area. This catalogue related rice cellar
technology has comparative advantage over rice huller. This type of methods requires two
machine i.e., rice huller and rice polisher. Rice huller removes the husk of the paddy and rice.
Rice polishers are abrasive machines that use talc or some other very fine dust to buff the outer
surface of rice kernels. Operation of this technology requires one skilled man-power. Paddy
should be well dried in sun for 1 day before husking.

Cold Storage
1. Introduction
Cold storage ideal environmental condition for storage of fresh fruits and vegetables is the lowest
temperature which does not cause chilling injury to the product. The cold storage space of the
proposed project shall be primarily used for storing fruits and vegetables for short duration
storage of around 1-4 weeks.
Temperature control in cold storage is very important. In mechanical refrigeration, the
refrigerated gas (e.g. Ammonia, Freon etc.) takes out the heat from the chamber/store as it
expands. The expanded gas is then compressed and the heat removed from the compressed gas
by means of running water or circulation air over the tubes containing the hot gas. The gas is
liquefied and the cycle is repeated. With such system accurate temperature control is maintained.

Lapsi Titaura Making Enterprise
Lapsi Titaura
1.
Introduction of the enterprise
Lapsi are a native fruit of Nepal. It is extremely sour, rich in vitamin content. The fruit has a
tough fibrous skin and pale yellow flesh, which is firmly attached to a large brown seed. There
are several lapsi products available in the market. The catalogue relates with Lapsi titaura
making produce and technology.
Lapsi titaura - sweet lapsi nugget is prepared by first boiling the fruit until the pulp separates
from the seed and skin. The pulp is mixed with sugar, salt, cayenne pepper, ground cinnamon,
cardamom powder, pinch of ground asafetida, and other spices, and made into nuggets. Lapsi
titaura production can be done in the area where there is abundant source of lapsi available.
2. Introduction of the technology
In Nepal, Lapsi titaura is made manually, which is tedious, time-consuming. With the
introduction of simple technology such as Pulper, mixture and electric drying efficiency of the
production increases fivefold. One skilled manpower and five unskilled manpower are needed to
operate the enterprise at full capacity.

2. Introduction of the Technology
To operate a handmade paper enterprise, we need Beater Machine, Rolling machine and Cutting
Machine. Bitter Machine is used to make a pulp from Lokta bark. Lokta Digester is basically an
electric cooker used for cooking lokta bark. It is fitted with 3 heating elements of 3 kW each,
thermometer, pressure gauge and safety valve. Two thirds of the digester is filled with water and
an iron cage is kept inside it to hold lokta bark. Paper sheet is dried in sun or shed; electric
drying is not recommended since it requires huge space and low temperature to dry. Operation of
beater machine, rolling machine, and cutting machine is simple and can be handled by skilled
person. Lokta is beaten, boiled, pulped and dried at 50-60 °C about five hours until its moisture
content is removed.

about Semi-automatic loom which operates with electric power. The pre-weaving process is
carried out with the help of a warping drum. One warping drum can warp for many looms. The
length, width and texture of the cloth to be woven are set at this stage. After warping, the beam
with warped yarn is shifted to the loom. Then, the yarn warped in the beam is again passed
through Koka and comb and anchored in cloth beam. At the same time, shuttle fitted with Tuki is
kept ready. Once these processes are completed, the loom is switched on and the weaving takes
place automatically. After weaving, the remaining processes like unloading and inspection are
again done manually.

Dried Fruits
1. Background
There are several limitations associated with traditional sun drying. During periods of
intermittent and particularly during continuous rainfall, Sun drying is not possible and the risks
of crop losses are high. Sun drying is slow and weather dependent compared to other alternative
drying systems. Sun drying also suffers from a high labor requirement and excessive crop
handling particularly in periods of inclement weather which can result in high costs, crop
damage and a loss in quality. Therefore, electric drying is recommended for semi commercials
scale drying.
2. Introduction to the Technology
There are several types of electric drying is available in the market. This catalogue relates with
Dehumidifier dryer which is specifically designed for use in high temperature process drying
applications. The unit can operate in temperatures up to 70˚C used in conjunction with a scan air
process drying control panel to create the perfect drying environment for fresh fruits. Drying by
dehumidification is the most effective, energy efficient and economical way to dry fresh
vegetable and fruit products. The dehumidifier is designed to dry raw material absolutely dry air
with lowest dew point completely independent from the ambient condition. The drying and
dehumidifying of hygroscopic. It requires one skilled manpower to operate this technology to its
full capacity.
