at French Lick Resort
One expects that a luxury resort would employ bellmen, valets, a
housekeeping staff and cooks. But the unsung creative geniuses behind
the seasonal glamour at French Lick Resort is an army of French Lick Resort
associates led by a carpenter, a pastry chef and a florist.
Master carpenter Dan Ping and his team restored the bar at Hagen’s Club
House Restaurant and the trolley once used to travel between the cities of
French Lick and West Baden. A true craftsman he restores various pieces of
furniture and fixtures around the property. His talents are called upon in
preparation for the holiday season as well. Ping designed and built a Victorian
village and giant ‘Twas the Night Before Christmas storybook for Santa Claus.
He added Scrooge’s house, a reindeer barn and this year, built a new form for
the gingerbread house.
French Lick Resort’s gingerbread house is a holiday season main-stay and in
need of a restoration of its own. Ping built a new foundation for this resort
tradition. This year’s gingerbread house is three times larger than last year’s.
Potentially the largest gingerbread house in the state, this structure will
transform into a six foot tall Cape Cod-style home. Baker Tia Hanke, with the
assistance of the Pastry Department, will cover the house from top to bottom
with 100% edible treats.
Included in the design of the gingerbread house is a chocolate bar-brick
chimney, gingerbread brick-siding, poured sugar windows with window
boxes, Oreo cookie crumb dirt and royal icing flowers. Baked gingerbread
sheets, windows, candy and other decorations are “glued” to the structure
with gallons of icing. Isomalt baking sugar is used for the windows and
flaked sugar called Sugar Dust is perfect for snow. The “house” is wired
for electricity, so lights can be placed inside for an extra special touch. It
will take Hanke three to four days a week for one month to complete the
decorating process. She hopes to add bright colors and a bit of whimsy.
Once the rest of the decorations are put into place, the gingerbread house
will go on display.
Kim Holland, Resort Floral Manager, oversees the task of transforming
the resort into a holiday spectacular. She works closely with our grounds,
construction, facilities and conference service departments to ensure the
resort is all decked out for the holidays. Planning begins in January and
doesn’t stop until every last piece of tinsel, glimmer of glass and strand
of lights has been placed in just the right location. New decorations this year
include Santa’s Christmas train window scene, several new Santas, Christmas
trees for the Power Plant Bar and Grill, icicle curtains, 48 wreathes for the Grand
Colonnade Restaurant and 12 cases of new net lighting.
The entire team works tirelessly to ensure guests find their holiday spirit the
moment they arrive at French Lick Resort. Make plans now to see in person

Kids’ WinterFest

The kids are looking for fun during their school break, while mom and dad
are craving some post-holiday down-time. Face it, children and parents have
different ideas of fun. Visit French Lick Resort between December 26 and 31 for
Kids’ WinterFest, a winter day camp for children ages 6-12 years open from 8
am to 7 pm. Activities includes photography, bowling, obstacle course, puppet
theatre, making birdfeeders, healthy snack making, movies and gaming (cost $15
for up to 4 hours per child).

clam chowder, Waldorf salad, grilled filet mignon and New York-style cheesecake plus
cocktails kick-off the evening. Entertainment provided by the high energy Superfecta
Band. At the stroke of 2014, sip a champagne toast – and revel in a fabulous New
Year’s Eve to remember.
If you have been dreaming of a soirée pour deux, bid 2013 adieu and say salut to 2014! New Year’s
Eve will be all Romance and Revelry in the West Baden Springs Hotel Atrium. For starters, enjoy
a savory five onion soup – a resort signature recipe – salad of mixed winter greens followed by
grilled filet mignon and prosciutto-wrapped chicken ballotine. Finish your last meal of the year
with white chocolate espresso crème brûlée, a spun-sugar garnish and griottines. Music will be
provided by the incomparable Sarah Stivers and the Pendulum Orchestra. Dinner will be served at

Taste of Scotland event and Chocolate Festival
Our world-class chefs work hard to make sure that we serve a variety of meals, snacks and sweets. Food
and spirits are an important part of the resort experience. Using fresh ingredients always and locally grown
whenever possible, our food and beverage staff plans menus and events that satisfy as well as entertain and
please the taste buds. This winter, enjoy buffets and special menus filled with holiday favorites, The Taste of
Scotland and the return of French Lick Kitchen Live! cooking demonstrations.
A festive destination regardless of the season, the winter holidays provide a special opportunity for chefs to
take tried and true traditions and add a gourmet flourish or a comforting perspective (just like mom used to
make) to food. This year, on Sinclair’s holiday menu, find a first course that ranges from soup and foie gras or
soft winter greens drizzled with roasted shallot vinaigrette to chicken, lamb and lobster entrées with a light
brandied cherry and white chocolate ganache cinnamon soufflé for dessert. Enjoy this three course holiday

A Robert Burns Tribute Dinner will be held at French Lick Resort in conjunction with the Malt Guild. Above and
beyond honoring Scotland’s favorite son, with toasting and song, the entire weekend will consist of Scottish
cultural immersion. Guest speakers, scotch, whiskey and brown spirits tasting will make for a lively way to
spend a winter’s weekend. Special pricing includes dinner, tasting classes and overnight stay for two adults.

Back by popular demand, French Lick Kitchen Live! Spice up your new year with exciting, healthy, indulgent
and comforting dishes demonstrated by our topnotch chefs. There’s a little something for everybody. This
event takes place in The Grand Colonnade Restaurant every Saturday, January 18 – February 22, from 1:30pm
to 3pm. It’s just like being in the audience of your favorite television cooking show.
Another oldie but “goodie” is just for the chocolate lovers. Our annual Chocolate Festival takes place this year
in the Clifton Ballroom on February 15 from 1pm to 4pm. If you were head over heels with last year’s fare, you
won’t want to miss this one. Savor milk and dark chocolate drizzled over everything from the everyday to the
unthinkable. From chocolate dipped bacon to chocolate soda, indulge in an array of mouthwatering cakes,
pies, fudge, drinks and more. Admission is $25.00 per person at the door.

Perhaps best known as one of the Neville Brothers and as Linda Ronstadt’s duet partner, Aaron
Neville has been performing for more than fifty years. From his first number one hit in 1967, Tell It Like
It Is to 2013’s My True Story release, Neville’s sheer vocal refinement, clarity and style remain distinctly
his own. His 1993 offering, The Grand Tour, debuted in the Top 10 on the pop, R&B and country charts
thanks in part to a remake of the George Jones hit of the same name. Aaron Neville appeals to a
varied audience and promises a show that is out of this world with four Top 20 hits, three number
ones and four platinum certified albums. Songs like Don’t Know Much, Everybody Plays the Fool, Don’t
Take Away My Heaven and more are uniquely Neville’s sound rooted in doo wop with a dash of Cajun
spice from his native New Orleans.

John Anderson’s first musical influences were Jimi Hendrix and The Rolling Stones. At 15, he
discovered George Jones and Merle Haggard and the rest is history. Anderson showed up

honkytonks at night. Club gigs paid off with a recording contract and the single I’ve Got a Feelin’
(Somebody’s Been Stealin’) that hit the Billboard Country Hot 100 chart. Anderson’s career highs
include The Girl at the End of the Bar, Swingin’, I’m Just an Old Chunk of Coal (But I’m Gonna be a Diamond
Someday), She Sure Got Away with My Heart, Straight Tequila Night and When it Comes to You. Anderson’s
