The Restaurant Managers welcome you back to
RiverCrest for another great season of golf, dining
and social events with friends & family. For 2016,
the managers will be publishing a bi-monthly article
for the newsletter to provide some insight into
ongoings here at the Clubhouse. Let’s get to it!
SCALLOPS: WET VS. DRY
DIVER VS. DREDGING
Anyone who has eaten a scallop at RiverCrest knows, it can be
a very special experience. Scallops are delicate and it takes a
skilled hand to get them just right, but like everything we serve,
it starts with sourcing the best possible ingredients. Our scallops are no exception, we use only the highest quality U-10
(which is a weight class meaning 10 scallops to a pound) Dry
Diver Scallops, what does that mean exactly?
Dredged scallops are harvested in huge nets which trawl the
ocean floor, indiscriminately destroying huge areas of seabed
and disrupting wildlife. Scallops harvested by dredging tend to
be sandier and grittier as the sediment is stirred up in the
dredging process.
Diver scallops are harvested by hand by actual divers. This is
incredibly labor intensive, but far less damaging to the environment than dredging the ocean floor with nets. Scallops harvested by this method are cleaner as the surrounding sediment
is undisturbed by this method.
Wet scallops are shucked on the boat, directly into a container
filled with cold water, often containing preservatives such as
phosphates (or more precisely- sodium tripolyphosphate),
which preserve the scallops, and add water weight. These
scallops also tend to be older by the time they get to the seller.
Dry scallops are also shucked on the boat, but they go into a
dry container with no water or preservatives. Their flavor is
more pure and concentrated. They have a shorter shelf-life,
and are much harder to find.

January hiatus, some changes were made to our
menu, our wine list and our service. One change
which we are proud to introduce is to our complimentary bread service, in lieu of rolls and butter, we will now be serving herb-infused extra virgin olive oil alongside a sliced warm baguette
with every dinner, of course butter will still be
available by request, but we’re confident you will
fall in love with our bread and oil, just TRY not to
fill up before you’re food arrives!

celebration: weddings, holidays, anniversaries — but the
time has come for that to change. Boneless buffalo wings

on it. Steak au Poivre? We’ve got a great Blanc de Noirs
for you. The fact is, sparkling wine goes with everything;
sure some styles may be better suited to some flavors
than others, but the effervescence, the brightness, and
complexity of these wines make them culinary
chameleons.
The latest addition to our sparkling offerings comes from
the Mâconnais district in the world renowned wine region
of Burgundy of France, and is made from 100%
Chardonnay grapes.. De Perriere Blanc de Blancs, is terroir driven, bright, complex, and has an elegant and long
finish. At $9 a glass (yes, it’s available BY THE GLASS)
and $30 a bottle, this is an easy choice, a great value for
such a fantastic and unexpected wine. Try it with the
Icelandic Cod or the Sea Bass. Or, ask your server or bartender for the perfect bubbly pairing.

The Senior Opening Day Tournament is moving back a week to
allow the snowbird migration north to be completed. The event
will now be held on Wednesday, April 20th. The event will feature
a fun format with an 8:30am shotgun start. Prior to golf there will
be a breakfast, then lunch and awards following golf. Signups are
open online. The event is open to Men 50 years and older. We
look forward to another great year of Senior Golf at the Club!

Before the season starts we recommend checking your grips to see
if they need replaced. Throughout the month of March all grips will
be 15% off. Bring your clubs by and have the Professional Staff

MEN’S GAP SIGNUPS AVAILABLE ONLINE
The 2016 Men’s GAP Matches will be held on Sundays, April
10th, April 17th and May 1st. RiverCrest will have 4 teams
representing the Club. Each team will have 12 players competing each week (6 home and 6 away for each team.)
Therefore we will need 48 players each of the three weeks.
Signups for each of the weeks is already open online. If you
are interested in participating please sign up for the weeks
you are available to play. For more details about the matches
please contact the Professional Staff.

TAYLORMADE DEMO DAY IS COMING!
Mmmmmmmm……Demo Day!! On April 23rd from 11:00am
until 3:00pm, a specialized tech representative will be bringing
the latest and greatest products that TaylorMade makes for
everyone to test out on the Practice Range. The clubs will
include the new M1 and M2 lineups of metal woods and irons.
The rep will bring a launch monitor and fitting equipment to
find the best club for your game. The Professional staff will
also be on the range to assist Members with swing tips to help
you play your best. All TaylorMade purchases and orders will
be 10% OFF that day only. Hope to see you at the

March Madness Cross-Country
Tournament Added!
After the tremendous success of the first ever cross-country
golf tournament in December, we are adding a spring “March
Madness” cross-country tournament as well. The event will be
held on Saturday, March 19th. Players will play an individual
format for 9 holes that crisscross fairways, mounds, ponds and
go through the woods. It will be a walking only tournament.
There will be Men’s and Ladies designated tees. The fee will
be $15 per person and will have both gross and net divisions
(64% or your handicap) for both Men and Women. Starting
times will begin at 9am. To sign up, please make a starting
time online or call the Professional Staff.

QUALIFYING FOR MEN’S MATCH PLAY EVENTS
Begins April 1st
Qualifying for all major Men’s Match Play events begins on April 1st.
The following is the list of Match Play Events and the deadlines which
qualifying must be completed by:
Men’s Handicap Championship – deadline April 30th
Men’s Better Ball Championship – deadline April 30th
Scratch Match Play Championship – deadline May 30th
Senior Handicap Championship – deadline May 30th
Senior Better Ball Championship – deadline May 30th
Super Senior Handicap Championship – deadline May 30th
Qualifying consists of 18 holes and is limited to one chance to qualify
per event with a fee of $25 per event. Players must declare their
qualifying round to the Golf Shop prior to teeing off. Qualifying
rounds must be completed by 6:00pm on the designated deadline.
Once qualifying has been completed each round has a one month
deadline to complete all matches.

MEN’S LEAGUE SIGNUPS BEGIN MARCH 7TH!
Men’s League will start on Wednesday, April 27th. The
League features 32 two-man teams competing in a Better
Ball of Partners Match Play format. The 9-hole matches
are played bi-weekly on Wednesday evenings with 5:30pm
shotguns. The season consists of 7 matches thru July 20th
followed by the Playoffs. Signups will begin online March
7th. This has become a great addition to our tournament
calendar. Find a partner and get signed up!
LADIES OPENING DAY TOURNAMENT
APRIL 14th · SIGN UP ONLINE
The 2016 Ladies Golf season kicks off witht this fun event,
meant to get Ladies together and rekindle friendships while
getting the golf season off and running. The event is open
to players of all ability levels. The Golf Shop will make the
pairings and have a fun format. It is a 9:30am shotgun start
with breakfast before and lunch and awards following golf.
Signups are open online, so get registered & come on out.
Rule 21 Cleaning Ball

against Carl and I. Turns out gambling is
illegal at Bushwood, so we just played for a
hamburger, no a cheeseburger. Carl and I
were getting the bejeezus knocked out of us.
We were 3 down after 7 holes.
While we were in Florida this January,
Colby was allowed to pick what he
wanted to do for his last day there. His
Mother and I were wagering which
amusement park he was going to pick,
Disney, Universal or Legoland? Turns
out, we were both wrong. Colby wanted to go to BUSHWOOD!!
(Seriously?? WOO HOO!!) Off to Ft.
Lauderdale we headed!
Bushwood Country Club is the home of such
prestigious Members as Judge Smails, Ty
Webb, Dr. Beeper and Al Czervik. It ranks
right up there with Augusta, Pine Valley and
Merion in exclusiveness. And it’s also where
they filmed the best movie ever,
Caddyshack. It wasn’t going to be easy to
get on, but I know people. With my great
connections I was able to get us out there
on a closed Monday, and we had to play
with Carl one of the greenskeepers (he’s a
little unique, but a nice enough guy.)
I introduced Carl to Kelly and Colby. We set
up a $5 match between Colby and Kelly
The 8th hole at Bushwood is a long straightaway Par 5 with out of bounds and a lumber
yard on the left. Since they had the honors,
Carl blurted out, “You’re up, shoot Dolly.”
“Kelly” my wife corrected him. She lined up
her shot and crushed one down the middle.
Carl winced, “Big hitter the Dolly.” “Kelly”, I
replied but I’m not sure it registered with
Carl. Colby also hit a good drive and found
the fairway.
Carl lined up his drive, mumbled a bunch of
syllables (gunga galunga I think it was) and
hit a short ground ball slice off to the right.
The ball landed on a dirt pile made from a
gopher hole and rolled a couple yards into
the rough. I pumped my tee shot into the
lumber yard and was out of the hole.
Carl found a ball in the rough where he
thought his shot should be, but the ball was
completely covered in mud from the dirt pile.
He announced that he was going to clean off
his ball to identify it. Kelly told him to go
ahead. “I like you Betty” said Carl. Kelly
just shook her head. Carl wiped the ball
completely clean, said it was his and put it
back in its spot. He was still 355 yards
away. He pulled out a 2 iron, did a little
waggle, mumbled something about
Cinderella and took a mighty swipe at it.
What I saw next defied all logic. The ball
took off and flew majestically towards the
green. The rest of us went deadly silent as
we watched in awe. Carl raised his arms
and blurted, “It’s in the hole!” And sure
enough that’s where it ended up. The greatest shot I’ve ever seen!
Colby then sauntered over and said that Carl
had to add a penalty shot. “What for” Carl
replied. Colby recited Rule 21b Cleaning
Ball – a ball not on the putting green may be
cleaned when lifted and cleaned only to the
extent necessary for identification. Since
Carl cleaned the entire ball off he incurs a
penalty of one stroke. Carl was not very
pleased with his little guest. However, he
still made a 3 and we won that hole.
Carl wasn’t very talkative the rest of the
round, although he maintained total consciousness. Colby and Kelly won the match
easily. We paid off our bet with cheeseburgers (ironically at Carl’s Jr. burger joint).
Colby then asked Carl, “How about a
Fresca?” Carl turned to Colby and said,
“You’ll get nothing, and like it!” Au revoir,
Bushwood!

The One Day Golf School is a new addition to the schedule for 2016. The
school will offer instruction and how to develop practice habits to see your
game flourish. The One Day Golf School will take place at the Golf Academy
and all technologies will be used during the school. All areas of the game will
be covered including but not limited to putting, chipping, bunker, trouble
shots, mental approach, and full swing. The cost for the One Day Golf
School is $250 per person. School will be limited to 4 people.

Build Abs Without
Breaking Your Back
Are your sit-ups and crunches actually doing you more harm than good?
Try these to work your core and protect your back.

Reverse Curl Up:
Legs Passing:
1. Find a comfortable flat surface and lie down on your
back, with arms placed to the sides of your body and
palms facing the floor.
2. Raise both legs, in a bent position, towards your face
and, by engaging the core, raise your lower body up and
off the floor.
3. After each movement, allow your legs to slowly float
away from your face, keeping the thighs and calves firmly
touching one another, and back to the starting bent position.
Perform 25 to 30 reverse curl ups during each exercise
session.
1. Find a comfortable flat surface and lie down on your
back with knees bent, feet flat on the floor, and the whole
of your lower back pressed into the floor.
2. While keeping your lower back firmly on the floor, raise
one leg towards the face in a slightly bent position.
3. Finish the exercise by releasing the leg slowly back to
the floor, keeping it partially bent until it reaches the
ground. Repeat with the opposite leg.
Perform 15 passes on each side following the oblique
twists.
Oblique Twist: (targets internal obligues)
1. Find a flat surface and lie down on your back with arms
positioned away from your body at shoulder level, palms
facing the floor.
2. Bend both legs and pull them into your body with the
thighs and calves firmly touching.
3. Slowly lower both legs to the right and hover about an
inch off the ground before slowly coming back to center.
4. Slowly lower both legs, in the same position, to the left,
and return, slowly, to center.
Try integrating these 3 abdominal exercises into your fitness routine –because building your mid-section should
never compromise the health of your back.
