Community Health Screenings
The Henry County Medical Center staff
members will be offering community
health screening and educational materials Tuesday, May 3rd from 10am-12pm
at Wesley Pine Ridge, 119 Wesley Pine
Drive. The following screenings will be
offered: Blood Pressure, Blood Sugar,
and the Dexa Heel Scan are free, with a
Total Cholesterol costing $3 and a Lipid
Panel costing $10. There is no appointment necessary for the community health
screenings, but fasting is required for the
Blood Sugar, Total Cholesterol and Lipid

Rib-Eye Sandwich Sale At VFW
McKenzie Veterans of Foreign Wars,
Post 4939 will be hosting a Rib-eye
Sandwich and Hotdog sale on Saturday
April 30th beginning at 11am. For $5.00
you can get a delicious rib-eye sandwich
and for $2.00 more chips and a drink.
Hotdogs will also be available for $1.00
for a complete meal, add $2.00 for chips
and a drink. The VFW Post is located at
9750 Cherrywood Avenue in McKenzie,
and all funds raised help with projects in

The Fish Fry kicking off is full of events
and activities throughout the week and
through the weekend. City Hall will be
closed Friday, April 29th; all emergency
services will be on regular schedule. The
City of Paris Public Works Department
will be closed Friday, April 29th. The
Landfill will be closed Friday, April 29th
and Saturday, April 30th. It will reopen
at 7am Monday, May 2nd.The Animal
Shelter will be closed Friday, April 29th
and Saturday April 30th. It will reopen at 11:30am Monday,
May 2nd. The Paris Civic Center will be closed Friday, April
29th; it will reopen at 8am on Saturday, April 30th.
Teachers Invited To Free Workshops On Classroom
Organization And Management
West Tennessee teachers in grades PK-12 can register for one
of three workshop sessions on classroom organization and
management to be held in June at the University of Tennessee
at Martin. There is no charge to attend these sessions, which
are sponsored by UT Martin’s Teacher Quality Partnership
Grant through the U.S. Department of Education. Each workshop session includes three initial days in June and a half-day
session in October. Districts can choose to grant professional
development points for participation. Teachers can choose to
attend session one June 7-9, session two June 14-16 or session three June 21-23. All three sessions will be held from
8:30 a.m.-4:30 p.m. All attendees are also required to attend
a follow-up session from 8:30 a.m.-noon, Oct. 1. Participants
can register online by visiting www.eventbrite.com and searching UT Martin classroom management.Registration ends May

Homemade Vanilla
Pudding
original recipe makes 5 servings
2 cups milk
1/2 cup white sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon butter
In medium saucepan over medium heat, heat milk until bubbles form at
edges. In a bowl, combine sugar, cornstarch and salt. Pour into hot milk, a
little at a time, stirring to dissolve. Continue to cook and stir until mixture
thickens enough to coat the back of a metal spoon. Do not boil. Remove
from heat, stir in vanilla and butter. Pour into serving dishes. Chill before
serving.
Mozzarella Puffs
original recipe makes 10 biscuits
1 (7.5 oz) package refrigerated
buttermilk biscuit dough
1 teaspoon dried oregano
3 ounces mozzarella cheese,
cut into 3/4 inch cubes
2 tablespoons pizza sauce
Preheat oven to 375 degrees F.Make an indentation in the top of each uncooked biscuit. Fill indentations with oregano and a mozzarella cube. Pinch
the dough around the mozzarella cubes. Place the biscuits, pinched side
down, on a medium, ungreased baking sheet. Cover with pizza sauce. Bake in
the preheated oven 10 to 12 minutes, or until golden brown.

Chicken Spaghetti
original recipe makes 6 servings
1 (12 oz) package angel hair pasta
1 (10 oz) can diced tomatoes with
green chile peppers
1 (10.75 oz) can condensed
cream of chicken soup
3/4 (8 oz) package processed cheese, cubed
2 cups chopped cooked chicken breast
1/2 (4 oz) jar sliced mushrooms, drained
salt and pepper to taste
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes
or until al dente; drain and return to pot. To the pasta add the diced tomatoes with green
chile peppers, cream of chicken soup, processed cheese, chopped chicken, mushrooms,
salt and pepper. Cook and stir over low heat until cheese is melted and mixture is heated
through.
Sweet Dinner Rolls
Original recipe makes 16 rolls
1/2 cup warm water (110 degrees F)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 teaspoon salt
3 3/4 cups all-purpose flour
1 (.25 oz) package active dry yeast
1/4 cup butter, softened
Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread
machine in the order recommended by the manufacturer. Select Dough/Knead and
First Rise Cycle; press Start. When cycle finishes, turn dough out onto a lightly floured
surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at
wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat
oven to 400 degrees F. Bake in preheated oven for 10 to 15 minutes, until golden.
