GREATER SAN MARCOS PARTNERSHIP
The Greater San Marcos Partnership is a 501(c)6 nonprofit regional partnership of public and private investors
focused on directing future growth and positioning the
San Marcos region for a wider diversity of quality jobs
with higher wages. The organization is charged with
implementation of a 5-year comprehensive economic
development strategic plan developed by Market Street
Services, an Atlanta-based community meconomic development firm. The organization has recently completed
a fund-raising campaign to raise $800,000 annually, or $4
million total for the 5-year implementation plan.
The mission of the Greater San Marcos Partnership is to
enhance and support job creation. The Partnership also
aims to recruit, retain and support the expansion of companies and industries in the San Marcos, Texas area.

HISTORY OF CENTRAL TEXAS bbq
The history of Texas barbecue, particularly central Texas barbecue, is as rich in lore and tale as it is in tradition and flavor.
Texas barbecue goes back to German butchers who settled in
central Texas during the mid-1800s. They took a hint from
Mexican vaqueros and emphasized beef, not pork in their barbecue. They hand-rubbed the meat with salt, pepper and spices
and cooked it at a distance of three feet from the fire in pits
filled with available hardwoods,
including oak, hickory, pecan
and mesquite. The taste was as
distinctive as it was delicious.
Central Texas is by and large considered the mecca for barbecue
in the state of Texas. And in the
central Texas region there are a
handful of barbecue restaurants
that stand head and shoulders
above the rest. Located in two
historic communities that date
as far back as 1840 reside what
many consider to be the best of
the best: barbecue so good that eating it can almost be considered a religious experience. These communities are San Marcos, Lockhart and Luling, Texas.
Some of the most famous barbecue restaurants in these cities are Black’s, Chisholm Trail, Kreuz, and Smitty’s. They have
been recognized by media outlets such as Southern Living,
Texas Monthly Magazine, The Food Network, and The Travel
Channel.
Charles Kreuz (pronounced ‘krites’) established Kreuz Market
in 1900 as a meat market and grocery store. The market was
bought by a long-time employee, Edgar Schmidt, in 1948, and
converted into a barbeque restaurant. Schmidt’s sons bought
the restaurant in 1984, and moved to a larger facility in 1999,
just down the street from the original location.
Nina Schmidt-Sells followed in her father, Edgar Schmidt’s
footsteps and opened Smitty’s Market in 1999 at the former
Kreuz Market location. Served on brown paper, Smitty’s barbecue is accompanied by Grandpa
Smitty’s beans, a secret family
recipe.
Black’s Barbecue was established
in 1932 and is still owned and operated by the same family. Edgar
Black, Jr. was the first barbecue
proprietor to use the brisket cut
of beef, and in the 1960’s former
President Lyndon B. Johnson selected Black’s to represent Texas
barbecue at the Smithsonian Institute in Washington, D.C.
Chisholm Trail Barbecue opened
in 1978 when Floyd Wilhelm sold his fishing boat and opened
the restaurant. A fairly new establishment compared to its
Lockhart neighbors, Chisholm Trail offers a large selection of
side dishes to complement their sausage, brisket, turkey, chicken, and other staples of Texas barbecue.
Luling City Market was founded in 1958, and like any Texas
barbecue restaurant true to its heritage, they instruct their hungry customers to “use your fingers, no forks.”
Luling Bar-B-Q was established in 1986 near downtown Luling
and was named one of the top 50 barbecue joints in Texas, by
Texas Monthly Magazine.
