he Bull Ring has been a part
of Santa Fe’s culinary landscape

owning their flagship restaurant Clay’s
La Jolla in La Jolla, California, which

Artisan Cuisine, Chef Clay and Julie
fell in love with New Mexico and
purchased space within the historic
Hotel St. Francis. They soon embarked
on a new venture combining their

for fine cuisine with the exciting

“It’s a smaller but sophisticated
market, “Clay says. “It’s exciting for me
as a chef to create with chile and other
local produce you can only find fresh in

taken with their restaurant space,
which features a large stone and
marble fireplace, wrought iron lighting
fixtures, large plank wooden floor,
leather chairs, and large sheer covered
windows that allow in soft natural light
while still maintaining an intimate
atmosphere. The secluded brick patio
with an additional entrance on Water
Street has an adobe kiva fireplace, ivy
covered walls, and a three-tier fountain
that is thought to be the oldest in
Santa Fe. Using local produce and
ranches, Tabla de los Santos menu is
seasonal, ensuring new and exciting
offerings in tune with New Mexico.
