Nancy teaches cooking systems that

Nancy loves inspiring people from 9 to 90 develop
nourishing life skills and cooking creativity, as they
learn where their food comes from. She teaches her
cooking systems through five outlets: online cooking
coaching at Tree House Kitchen (in development!); as a
creative producer and on-camera host with
WestWind Pictures, developing children’s programming featuring the beauty of sustainable local farms,
their produce and how to cook; the Institute for
Hormonal Health’s integrative wellness cooking
coaching; the City of Hamilton’s Public Health food
literacy advisory committee; and through the bounty
of online food inspiration on her website and social
sites. Fresh ways of nourishing mind, body, and senses
are offered to those who are in line to taste!
Not only does Nancy teach families and food lovers
how to cook, she also trains apprentice chefs. By
encouraging the process of thinking like a chef and
eating as naturally as possible, Nancy brings to the
table her chef’s sensibilities, her mom-of-three skills,
and her focus on sustainable and healthy living. She
offers fresh ways to engage with food for all. Nancy’s
ideas and systems are health-, time- and
family-tested; they reveal efficient, fun, delicious
and sustainable ways to bring everyone together
around the kitchen counter or the dining table.

As your chef skills improve and your lifestyle changes,
Nancy will "boil down” recipes to your taste and needs
– she can work with any recipe and also writes her
own. She can adapt to your specific flavour-forward
mindset as she highlights the practicalities of
food-sourcing, kitchen organization and cooking skills.
Nancy crafts her unique philosophy and teaching style
through her cooking systems, breaking down recipes
into an explore-versus-chore mindset, sharing as many
secrets as she can. There is an “inner chef” in
everyone. Nancy helps you explore your cooking style
as it is now and as you would like or need it to be, with
practical tips, skills and artistry. Nancy encourages
hands-on exploration in the market and the kitchen, as
she develops your neural pathways and fosters muscle
memory – connecting you to joy through your hands
and making your subsequent kitchen forays easier.

Nancy has more than 25 years of experience in the
business and pleasure of food in Ontario and abroad.
Chef Nancy Henley has a Bachelor of Commerce
degree in Hotel and Food Administration from University
of Guelph, and a diploma from George Brown College
Chef School. Nancy has also completed the chef
apprenticeship program with an Interprovincial Red
Seal Standard in Canada, under renowned European
chef Josef Vonlanthen. She’s taken her chef knife to
open-air farmers‘ markets throughout Europe and has
taught her internationally inspired lessons in many GTA
teaching kitchens, including those of LCBO.
Nancy has hosted alongside GTA celebrity chef guest
hosts such as Michael Stadtlander, Naomi Duguid and
Anna and Michael Olson, and has been a guest chef on
CFTO television, CHCH-TV and CBC radio. Her
recipes and cooking philosophy have been featured in
high-profile publications including Chatelaine, the
Toronto Star, Hamilton Magazine, the Hamilton
Spectator and the Globe and Mail. Nancy is the
proprietor of Tree House Kitchen cooking school,
which she built on a sustainable property in farm
country in Dundas, Ont.
Nancy also volunteers her time in Greater Hamilton,
acting as a community ambassador for food literacy
and food access causes in schools, hospitals, clubs,
foundations and green spaces, as she connects
administrators to a nourishing foods-sustainable
living approach that dovetails with her activities that
support the stewardship of our collective watershed.
