Summer
It’s natural to eat lighter in the summer and
finding fresh fruits and vegetables is the benefit
of the season. When I see the first signs of
spring in my local natural foods store, my entire
body relaxes as I breathe deeper, enjoying the
promises of warmth and daydreaming of my
many, many, upcoming picnics by the lake.
During the month of July our gardens are in
full swing, tomatoes are ripening and peas are
climbing and flowering. So which fruits and
vegetables are best in July and why should we
consume them?
• Cantaloupe can help control your blood
pressure. Packed with potassium, 1 cup meets
about 10% of your daily potassium needs.
(Watermelon contains about half that of
cantaloupe.)
• Peaches are originally a product of China
and are still a sign of immortality. They can help
fight diabetes and cardiovascular disease and
are often used in moisturizers and other skin
care products because of their high Vitamin A &
C content, which helps skin revitalization.
• Summer Squash can improve your vision.
Really? I thought that was carrots. Actually
summer squash has high concentrations of
beta-carotene and lutein and lutein is what
assists in preventing cataracts and vision
degeneration.
• Kiwi is a lower glycemic fruit and because
of this diabetics safely consume it. In addition,
kiwi is high in fiber, aiding in natural digestive
health.
• Tomatoes are filled with lycopene, a nutrient
known to be a powerful antioxidant that
protects against heart disease.

Mildly sweet grain-free muffins make for a
great breakfast or snack.

Prep Time: 10 minutes • Cook Time: 18 - 20 minutes
Yield: 12 servings
• 4 cups (442g) Bob’s Red Mill®
Almond Meal Flour
• 1-1/4 tsp (7.5g) Baking Soda
• 1/4 tsp (1g) Salt
• 2/3 cup (90g) diced, dried Apricots
• 1 Tbsp (8g) Orange Zest, from
about 1 large orange
• 5 (250g) Eggs
• 1/3 cup (80 mL) melted Coconut Oil
or Butter
• 1/3 cup (80 mL) Honey or Maple Syrup
• 1 tsp Almond Extract
Step 1
Preheat oven to 350°F. Line a standard muffin tin with paper liners
and spray with pan spray.

Combine the Bob’s Red Mill® Almond Meal, baking soda, salt,
diced apricots and orange zest.
Step 3
In a large bowl, whisk together the eggs, coconut oil, honey and
almond extract. Add the dry ingredients to the wet and mix well.

Portion batter into prepared muffin tin and bake until golden and
the tops spring back when lightly touched, about 18 – 20 minutes.

Gingered Quinoa Salad
• 3/4 cup dried quinoa
• 1 1/2 cups boiling water
• 1 cup chopped flat leaf parsley
• sections of 1 blood orange, chopped
• grated zest of 1 blood orange
• grated zest of 1 lemon
• 1 tbsp lemon juice
• 2 tbsp The Ginger People® Organic Grated Ginger
• 1 tbsp The Ginger People® Organic Ginger Juice
• 1 tbsp olive oil
• 1 tsp kosher salt
• 2 tbsp toasted pine nuts
Directions: Add quinoa to a medium pot and cover with water. Bring to
a boil, cover, reduce heat to medium-low and simmer until the water is
absorbed, about 15-20 minutes. Let quinoa come to room temperature.
Meanwhile, in a large bowl, combine parsley, chopped orange, orange and
lemon zests, lemon juice, scallion, grated ginger, ginger juice, olive oil, and
salt. Toss to combine. Add the cooked quinoa to the dressing and mix well.
Toss in pine nuts. Serve chilled or at room temperature.

Pain affects more than 30% of people in the U.S., which is more than heart disease, diabetes
and cancer combined. The most common types of pain includes joint, muscle and back pain.
If you suffer from back, joint or muscle pain, take note. Due to the risks associated with
common pain relief treatments – including over-the-counter NSAIDs like ibuprofen, which
can put patients at a higher risk for drug interactions and complications – natural medicines
and therapies are becoming more widely used to treat common forms of pain. In fact, nearly
40 percent of adults use these types of natural medicines and alternative remedies, and more
doctors are using them too, by combining them with traditional treatments for pain, as part of
