BOOK OF DRINKS
Our small collection of booze is geared towards the Iberian Peninsula with a strong focus on Spain,
without neglecting close neighbours Portugal or failing to represent the local scene that produces some of
the best plonk in Oz.
We hope you like a drink as much as we do.

JEREZ-XÉRÈS-SHERRY
If there were justice in the world of wine, which there is not,
this national tipple of Spain may indeed garner
the same prestige as the finest Champagne Houses.
Whilst there are often parallels drawn between Sherry and Champagne,
(perhaps the two wines considered one subject viewed through
different ends of the binoculars)*
Andalusia’s proudest wine remains misunderstood, underappreciated and long forgotten,
considered only as the preferred libation of our beloved elders.
Well not here at Duendé, we’re bringin’ this baby back, showcasing its diversity, complexity
and downright sexiness.
You may need a few cracks to completely fall in love but we’re happy to convince you.
MANZANILLA granted its own classification due to its distinct sea spray aroma as influenced in the bodegas of DO
Sanlúcar de Barrameda on the West Coast. Manzanilla Pasada (aspoured here) spends more time in barrel, whilst
Manzanilla Fina is younger, fresher & lower in alcohol.

FINO elegant and sophisticated with a dry tang & blanched almond complexity that showcases Sherry at its peak of
refinement. Flor, the veil of yeast that forms atop the Sherry, allows a slow & desirable oxidative stay in barrel.
A rare import coming from Puerti de Santa Maria.

AMONTILLADO traditionally a dry style of fino that has been aged without the protection of flor , providing a gentle
richness and darker hue. Some are produced with the addition of a sweeter Sherry, as is the case here with this
example actually from DO Montilla Moriles, where the style takes its name.

OLOROSO literally translating to ‘fragrant’ your nose is filled with punchy aromatics. A wine where the flor has been
suppressed from the get-go. Brassy, complex, nutty density is what you’ll find here.

ALMACENISTA a dwindling breed of individuals with small, usually inherited, family soleras. Almacenistas do not actually
produce finished Sherries, but rather mature them in their soleras before selling them back to the bodegas for bottling where
both names appear on the label, showcasing their individuality.

EAST INDIA originally used on long sea voyages to stabilize the ships. Upon return the wine was discovered to develop a
desirable richness and smoothness. It is now a name owned by Lustau. after reviving the style blending soleras of up to 50
years of age.

CREAM originally created for the British export market (think Bristol’s). Blended to medium sweet with finished Pedro
Ximénez and Oloroso sherries.

MOSCATEL made from the Moscatel grape, a translation of Muscat, confusingly a name given to more than 200 distinct
varieties. This Sherry produces a rich style with noticeable levels of acid and a medium sweet finish, a good stepping stone
to the unctuous flavours of PX.

PEDRO XIMÉNEZ sweet wine made from the grape of the same name left to raisin in the sun and intensify its sugars.
Strangely enough not grown in Jerez but instead further inland in Montilla Morilles where the grapes are then shipped to
Jerez for pressing and ageing.

Each time Sherry is drawn off from the
bottom row (also known as the solera row
from ‘suelo’, Spanish for floor), each barrel is
replenished from the one above, and so on.
This ‘fractional blending’ of younger wine
into older wines means we never really know
just how old a Sherry is.
A Solera System is only ever stacked 4
butts high (butts are 600litre old
American Oak (heavy!).
Any higher crushes the bottom
row (learnt that the hard way !
Sherry will be drawn off from the solera row
and bottled for sale.
Only 30% is permitted to be drawn off each year .

Produced from Premier Cru vineyards in the Vallée de Marne, with the same vineyards actually rated
Grand Cru for red grapes. Over 50% of this blend is comprised of Chardonnay with none of the LP wines
using oak during vinification, maintaining finesse. Elegant, pure and made by a firm who have been doin it since 1812.

Our small collection aims to cover the five official regions of Champagne, representing both the :
RM’s - Récoltant Manipulants (grower producers) who stand at the forefront of artisanal Champagne production &
NM’s - Negociant Manipulants (the big-named houses) who have forged Champagne into the prestigious
powerhouse of fizz worldwide
CAVA
(& other worldly bubbles)
D.O. Cava is unique in its classification in that it is more concerned about how it is produced rather than limiting itself to just
one geographical zone. Penedès, just south of Barcelona, is the most important region for Cava production, however there are
also Cava DOs in other regions including Rioja, Navarra, Basque Country and Valencia.
All Cava is produced using the ‘traditional method’ as it is called in Spain, with secondary fermentation in bottle.
Macabeo, Xarel.lo and Parellada being the favoured grapes whilst a handful of others are also authorized.
