The name Carl has a long tradition in the Jacob dynasty: The most famous bearer of the name was Carl Jacob, Louis
Carl Jacob to be precise, a grandson of the company’s founder Daniel Louis Jacques. He was considered to be a
thoroughbred gastronome, a man of action, a man with modern visions yet retaining a healthy link with tradition. It is
him “Jacob” thanks for the hotel’s first period of prosperity. Reason enough to take this successful ancestor as a role
model and dedicate the building in the HafenCity
HafenCity to him. With the addition of “at the Elbphilharmonie” it describes
CARLS’ close proximity to Hamburg’s soonsoon-toto-be largest concert hall. The gastronomic concept CARLS “at the
Elbphilharmonie” comprises three distinct areas of 1,500 square meters.

CARLS BRASSERIE
First class, lively and easy-going - the atmosphere is comparable to a typical Brasserie in France: Exuberant, striking
picture tiles line the entrance area and above
the open kitchen you can find equally
distinctive elements such as auberginecoloured leather bench seats, which form
separate seating niches on two levels. The
wheel-sized lamps are colourful and cheerful,
so are the menus, the wine lists are integrated
into musical scores. Hanseatic flair is enhanced
by ceiling-high glass surfaces which offer an
unspoilt view of the river Elbe and the
Elbphilharmonie.
CARLS BISTRO
BISTRO
The tempo in the bistro is somewhat more upbeat, here you can simply choose quick snacks
such as tarts, quiches etc. As an
accompaniment, traditional wines from Italy
and France selected by our Jacobs sommeliers.
High tables, a large wine cupboard and metrehigh shelvings – stacked with a selection of
goods from around the world – and a
generous use of wood, all lend to the bistro’s
charm.
CARLS SALON PRIVÉ & BAR
Situated in the lower area on the promenade,
the Salon Privé and bar can be hired for events
for both private and business occasions. Each
room offers seating for 40 people. An open
fireplace in the bar underlines the cosy
atmosphere. Once a month CARLS and Cultural
Events with different artists take place here.

Patron:
Patron: Francesco Potenza
Francesco Potenza gained valuable management expertise in previous years during
his time as restaurant manager at Munich’s “Eboli” restaurant. The 59 years old
gained further experience in the hotel business which later led him to luxury hotels
such as George V in Paris, Hotel Rafael and the Bayerischer Hof in Munich and Hotel
Vier Jahreszeiten in Hamburg. He has been linked to the “Jacob” since his time as
Reception Manager from 1996 to 2000. After leaving his previous position as
Assistant Manager at the Grand Hotel Elysee in Hamburg, he has now returned to his
former area of expertise.
Chef de Cuisine: Michel Rinkert
At the age of 42, Michel Rinkert can look back at a career both at home and abroad:
Positions at the star restaurant Pavillon Ledoyen, at Le Jardin du Royal Monceau and
at Maxim’s in Paris play just as an important role as his time as Chef de Cuisine at
Apples Restaurant & Bar at the Hamburger Park Hyatt Hotel. As Executive Chef at the
Hotel Kempinski in Gravenbruch near Frankfurt, Michel was responsible for a team of
25 cooks. 2008 the Frenchman and his family returned back to Hamburg.
Events: Jana Raths
Since June 2013, Jana Raths is responsible for the event sale at CARLS. She plans
with love and care celebrations, birthdays, weddings, meetings and events. The 28
years old started after her trainee in hotel management in the hotel Louis C. Jacob her
job at CARLS “at the Elbphilharmonie”.

CARLS and Cultural Events: AfterAfter-work Party and Cultural Salon
Inspired by its location directly opposite the Elbphilharmonie, CARLS has developed a variety of cultural projects
appealing to different target groups. They all have
have one element in common: the enjoyment of culinary delicacies, highhighclass programme highlights and fun in an informal setting.
Taking place on a Sunday evening once a month in our Salon Privé, this attractive event offers cultural highlights,
rounded off by a flying buffet from CARLS-kitchen. In the meantime CARLS can look back to over five years of Culture
Salon, which has developed from an insider tip to a well-known monthly gathering of neighbours, city dwellers, culture
vultures and students. It covers a wide spectrum from jazz to chansons to classical performers or readings. There are also
numerous projects planned for the future which will provide a variety of performers and formats with a semi-public stage
in a semi-private atmosphere. This year you can enjoy the Omer Klein Trio, Anna Depenbusch or Myra Maud.
