The Pilu at Freshwater wine list has been created to take you on an ‘adventure in wine’, and is designed to compliment our
chef/owner Giovanni Pilu’s Sardinian cuisine. We specialise in Italian wine and pay extra attention to the south of Italy,
due to its compatibility with our food - our extensive Sardinian selection being the highlight. We have a diverse range of
local wine too, largely from our own state of New South Wales, as we love to showcase local produce. We continue to offer
a range of Sardinian wine imported exclusively for us. This programme is made possible through our ongoing partnership
with importers Enoteca Sileno, Trembath and Taylor, Godot Group and Negociants, and we thank them for their continued
support. In 2015, we continue to offer a selection of rare wine from the cellar of a private collector - these wines have been
aged in a natural underground cellar and are in the very best condition possible. For a quicker selection, you can turn to the
Sardinian wine section, complete with maps and information on the history and varietals of each region. In the main list,
Italian and Australian wines are listed together, by varietal, to assist in navigating through the list more easily. We have a
large range of wine by the glass, as well as small and large bottles. If you require guidance, a member of our wine team will
be happy to assist.

Organic, Biodynamic and Natural Wines
As increasingly popular as they are controversial, organic, biodynamic and natural wines are now an important part of our wine culture
- here we offer a little information for those who may be curious about, or new to them. Although it may all seem a little new-age to
some, it is worth noting that many of the best wines in the world from some of the most prestigious estates are made using these
methods. Organic wines are produced from grapes grown without the use of chemical fertilizers, pesticides, fungicides and herbicides.
Biodynamic methods were developed by Austrian philosopher Rudolf Steiner and wines are made using a wholistic and sustainable
approach. Grapes are grown using the same core principle as organics, with the addition of special preparations added to the soil, which
improves soil structure, nutrient and mineral levels, as well as plant growth and development. Recycling of farm and wine residues back
into the vineyards improves overall sustainability of the land. Natural wines are more difficult to define, as there is no governing body
set up to control production methods, resulting in various interpretations. They are generally made with ‘minimal intervention’, using
natural yeasts, and minimal or no sulphur is added. Wine is often left on skins (both white and red) and there is no filtration, fining or
adjusting. Natural wines look and taste a little different to ‘conventional’ wines, they will be darker in colour and cloudy, and will evolve
dramatically in your glass. They are food friendly, vibrant and interesting though, so whilst not for everyone, they are worth trying.

Sardinia is the second largest island in the Mediterranean and is 200 kilometres off Italy’s west coast. It is a unique region that
has spent much of its history under Spanish rule - the Spanish influence remains in Sardinia’s food, culture and wine. The
Phoenicians were Sardinia’s first foreign invaders and introduced winemaking to the island, but it was the Spanish, controlling
the island from the 14th to 18th centuries, who contributed the most to Sardinia’s wine production. The climate is Mediterranean,
with short, mild, wet winters and long, hot, dry summers. With rugged mountains and dry plains, soil types vary from sandy clays
in the south, the granite of Gallura in the north, to alluvial, gravelly soils around Oristano in the west. Today Sardinia is home to
a unique range of grape varieties, predominantly of Spanish origin. Previously known for producing bulk, fortified and
‘Meditazione’ wines (including the famous Vernaccia di Oristano from the west coast), Sardinia is now known for its high quality
table wine from Vermentino, Cannonau and Carignano. Beyond these, lay an exciting range of lesser known varieties such as
Nuragus, Torbato, Monica and Bovale, adding diversity and interest to the Sardinian range.
Spumante e Frizzanti
Sparkling wines are produced from a variety of local and international grapes in Sardinia (if only in fairly small quantities) and
can be dry or sweet. Mesa, Vigne Surrau and Tenute Olbios both make a sparkling wine in the ‘Metodo Classico’ (Champagne
method) with Sella e Mosca using the Charmat (Tank) method.

Vermentino
Sardinia’s most important white varietal arrived on the island in the late 19 th century via Corsica. Thought to be a sub-variety of
Malvasia, it is grown widely throughout Sardinia. Flavour characteristics include citrus, melon, fennel, peach, herb and honey,
with floral notes and lemony acidity. The best examples are found in the granite soils of Gallura in the islands north-east, with

Nasco is an ancient Sardinian varietal, its name is derived from the Sardinian ‘nuscu’, meaning musk. Nasco is grown only in the
southern half of the island, and is usually made into sweet wine styles. It makes a robust and fruity dry wine, with musk, banana
and pineapple flavours. Dry versions can be consumed with rich fish and white meat dishes.

Semidano
Semidano is an ancient white grape of Sardinia which dates back to the 14 th Century BC. It is a unique varietal which grows
particularly well around the town of Mogoro, Oristano. Semidano is a lighter style wine whose aromatics evoke herbs such as
thyme, rosemary, chamomile and liquorice root. It has a characteristic savoury taste, with fresh acidity.

Torbato
Torbato is most likely a member of the Malvasia family and of Spanish origin; it is known as Tourbat in Southern France.
Traditionally grown only around Alghero, in chalk rich white soil, today it is only produced by the Sella e Mosca estate, who make
both sparkling and still versions. It makes a viscous and exotic wine, with creamy texture, pistachio and spicy fruit characters.
Consume with bottarga, sea urchin, seafood and spicy dishes.

Vernaccia di Oristano / Granazza
The name Vernaccia is derived from the Latin ‘Vernaculus’, which defines all that comes from a given place. Vernaccia di
Oristano is unique to Sardinia and unrelated to Italy’s other Vernaccia’s - it may be indigenous, or was introduced by the
Phoenecians. Vernaccia di Oristano is a historical wine, usually dry, made from over-ripe grapes in a similar style to Spanish
Sherry. Wines are aged in a system similar to Sherry’s ‘solera’ where the wines will develop ‘flor’, but Vernaccia di Oristano is
rarely fortified. These are complex wines, with deep colour and flavours of orange rind, dried apricot, roast hazelnut, tobacco, tea
and winter honey. Granazza is the local name for the same grape around the area of Nuoro in the centre of the island. Contini
‘Karmis’ is made in a dry table wine style and is great with rich fish and white meat dishes.

Known as Grenache in France and Garnacha in Spain, Sardinia’s most planted red varietal was brought to the island by the Spaniards in
the 15th century. Cannonau is grown all over the island, with the best examples coming from the area around Nuoro in central Sardinia.
Medium to full-bodied in weight, wines have juicy, sweet raspberry and blackberry fruit, with hints of chocolate, warm spice and earth
characters. With soft, fine tannins and low acidity, they can reach quite high levels of alcohol. Cannonau is great with suckling pig and
game dishes - styles range from medium-bodied and soft to rich, supple and powerful.

Bovale/Nieddera (also known as Muristellu or Muristeddu) is related to the French Mourvedre and Spanish Monastrell. In Sardinia there
are two distinct clones; Bovale Sardo (regarded as the superior clone), and Bovale Grande (or Nieddera), which is widely planted around
Oristano. Wines produced are medium to full bodied and supple, with earth, spice, and dried herb flavours. Drink with lamb, goat and

Santadi ‘Terre Brune’
Santadi began it’s Sardinian wine legacy in the 1960’s, first growing grapes for local wineries and then moving into producing their own
label in the 1980’s. Like Argiolas, they procured the wine making knowledge of Italy’s premier wine maker Giacomo Tachis and landed
themselves international fame along with exceptional quality wines. The ‘Terre Brune’ is their flagship red with 95% Carignano and 5%
Bovaleddu. The wine is bold and concentrated whilst showing finesse and restraint from the time spent in oak and in bottle. Dark fruits,
spicy notes and an alluring nose will ensure you never forget this wine.

Carignano
Carignano is known as Carignan in France and Carinena in Spain, and probably arrived in Sardinia from Spain during the 14th century.
Planted in the sandy clays of the Sulcis region in the south-western corner of the island, Carignano is deep garnet in colour, making
powerful and structured red wines with savoury dark berry fruit and earthy flavours. Wines made from Carignano are rich in tannin,
acidity, colour and palate weight. Drink with slow roasted lamb, goat and beef dishes.

This ever popular wine style is made using the ‘Tank’ or ‘Charmat’ method, where secondary fermentation takes place in stainless steel
tanks - preserving the delicate aromas and fruit flavours of the grapes. Until recent changes in Italian appellation law, Prosecco was the
name of the grape used, but as of 2010, the grape is called ‘Glera’ and the zones where it is grown are known as ‘Prosecco’. DOCG status
was awarded to the Valdobbiadene, Conegliano and Colli Asolani zones due to their superior quality. ‘Dry’, ‘Extra Dry’ and ‘Brut’ (the

Produced by the Antinori family in the Chianti Classico zone and only made in the best vintages from the vineyard of the same
name. Tignanello is the original ‘Super Tuscan’ wine, first produced in 1970 as a Chianti Classico Riserva (including white grapes
and Canaiolo in the blend) and aged in French barrique. In 1971 it became a VDT when Cabernet was added and the white grapes
were removed. Made from 85% Sangiovese, 10% Cabernet Sauvignon and 5% Cabernet Franc.

Tenuta dell’Ornellaia was founded in 1981, in the area of Bolgheri, along the coast of Tuscany. The first vintage of ‘Ornellaia’, the
flagship wine, was produced in 1985, and is made from a blend of Bordeaux grapes including Cabernet Sauvignon, Merlot,
Cabernet Franc and Petit Verdot.

Tenuta San Guido ‘Sassicaia’
Marchese Mario Incisa della Rocchetta was the first to plant Cabernet Sauvignon in Tuscany, and began planting vines on his Tenuta
San Guido estate from the early 194o’s. For years he produced wine only for the family, but in 1968 the wine was released commercially
under the VDT and then IGT regulation. In the late 1990’s it became the only wine in Italy to be awarded it’s own DOC. Made from 85%
Cabernet Sauvignon and 15% Cabernet Franc.
