It’s the end of winter, friend. And it’s coming sooner than you think to an area near you...
I
n the West Texas Hill Country outside of Austin, spring means traffic
jams that have nothing to do with the daily commute. The
Bluebonnets are out. So are the Mexican Hats and the Indian
Paint Brush. As wildflowers take over the countryside and amateur
photographers contort from the back seat for a shot, another tourist
attraction starts to form in the city center. More than a million Mexican
bats migrate here, to hang from the underside of Austin’s Congress
Avenue Bridge, which just happens to house the largest (and most
entertaining) bat colony in North America. It’s a spring only Texas
could orchestrate.
Stay at Barton Creek Resort & Spa to appreciate Austin’s bumper crop
of outdoor bistro tables at Austin cafes. Antiques fill the wall-to-wall
vintage and specialty shops of South Congress (“SoCo”), and the
largest collection of farmers’ markets in the state opens crates of citrus,
peaches and herbs – early crops that inspire both our kitchen and spa.
Golf descends on Texas as well; the courses are both fresh and
ripe, which is why all of Texas’ top PGA tour events take place in
spring. Barton Creek’s multiple courses (two by Tom Fazio, one by
Arnold Palmer, and one by Ben Crenshaw) provide a variety of risks
and rewards.
Back east, on the Appalachian hillsides of Virginia, spring creeps down
the slopes like a shadow, following the gradual penetration of the light as
the sun climbs higher and higher into the sky each day. As the Virginia
Nightingale builds nests into local orchards, and the mountain laurel
slowly comes into bloom, thermal springs warm the locals with the steady
heat of Mother Earth.
The Homestead, our Hot Springs, Virginia resort, is home to the
Jefferson Pools, famous for their soothing effects and perfect following
a day of spring pursuits – antiquing, hiking, fly-fishing, horseback
riding, bird watching, falconry, mountain biking, hay-riding, and so
much more. If winter has you feeling cooped up, nothing will get you
back outdoors faster and with more variety and satisfaction than a
spring stay at the Homestead.
In Southern California, it is another story. Residents need a calendar
to sense the seasons are changing; but offshore the whales know it.
Migrating from Baja to Alaska, they pass right by, and whale watching
tours are a big local event. At the San Diego Zoo, spring brings a
figurative stork who in turn delivers baby chimps or emus or tapirs –
one never really knows much in advance what surprise is in store.
Everything is a surprise this spring at the Hotel del Coronado,
where Beach Village, the Sunset Bar at 1500 OCEAN (the signature
restaurant), the incredible Spa, Fitness Center, and Windsor Club
Cottage are all new or entirely renovated. To top it off, there’s a

Up the road at La Costa Resort, “birdie” may not mean what you
think. Chicks, goslings, and ducklings poke their beaks between the
tall grasses that line course creeks as their mothers try to protect
them from hooks and slices. Young gulls practice gliding on the
warming air currents, while beside the whitewashed buildings
bougainvillea twists to catch the light. This is the quintessential
Southern California spring – golf, followed by spa, followed by
golf, followed by spa, with garden-fresh organics and regional
wines as a fine-dining intermezzo.
Meanwhile, in the California desert, the Greater Roadrunner appears
a little cuckoo and the smaller Cactus Wren comes out to broadcast its
big voice, but the real star of spring is above it all – the ever-lengthening
sunset, streaked with high intensity watercolors half-painted, halfsplashed across an endless sky. Winter’s end turns into spring’s infinity.

to Visit Austin, Texas This Spring
1. SXSW Festival. Every spring, top music industry execs descend on Austin’s “South by
Southwest” festival to harvest the newest crop of future stars. Musical inspiration is richly
served across fifty stages between March 6 and 17, when visitors are the first to hear what
the nation will be listening to by the end of summer. There’s a companion film festival in
town at the same time.
2. Wildflowers. The Texas Hill Country erupts in color every spring, graced by gentle
Bluebonnets and fiery Mexican Hats. Bring your video cam to capture your sweetheart (or
kids and dog) in a classic fantasy romp through romantic fields.
3. Wine Trail. Unless you’re a local, it might seem odd that a Texas restaurant such as our
Barton Creek Resort Hill Country dining room should focus so obsessively on its cellar, to the
point of being singled out by Wine Spectator magazine; but the mystery is solved when you
discover the twenty-odd wineries nearby. Come sample them during the Texas Hill Country
“Wine and Wildflowers” event April 4-6 and April 11-13, 2008, or at the three-day Austin
Wine Festival May 24-26, 2008.
4. South Congress Avenue, or “So-Co” to Austinites, is home to antiques dealers, bistros,
quirky shops, mid-century furniture replicators, and just about anything that’s in the current
consciousness of décor- or collection-minded visitors. A must-stroll venue for those seeking a
sense of place (or in need of something special for the living room back home).
5. Performing Arts. It’s all the music you can imagine! Here, in the nation’s “live music
capital,” musical choices range from Baroque to Country to Cuban (and everything in
between), while ballet and touring Broadway shows provide additional dimension to the
city’s sophisticated yet casual cultural buffet.
6. Shopping. Where to begin? If you’re visiting from out of state, don’t miss the final markdowns on high-end Neiman Marcus fashions at Last Call. Want more? There are a dozenplus quality malls within easy reach. Foodies can take the daily tour at home-town Whole
Foods; and outdoor enthusiasts should check out the giant new Cabela’s just outside of town.
Above all, make time to shop for boots.
7. Art Galleries. Numbering more than you can count, local galleries feature paintings,
sculpture, regional pottery, glass, photography, jewelry, and folk art. On the weekends, start
at the Artists’ Market, a juried, ever-changing, outdoor event held each Saturday on West
6th Street.
8. Texas State Capitol and Grounds. It’s no surprise that Texas’ Renaissance Revival
structure is the largest state capitol in the country, a massive structure of red granite, all
quarried locally. The capitol staff offers daily 45-minute tours just a block from the state’s
notable history museum, which also offers tours as well as an IMAX theater.
9. Biking. Abundant bike trails make Austin accessible and fun. (This is where home-town
hero Lance Armstrong used to ride.) Beyond the city limits there is a network of mountain
bike trails in the surrounding Hill Country, just right for independent adventures.
10. Lyndon Baines Johnson National Historical Park. Less than an hour from Austin
one finds Johnson City, boyhood home of the larger-than-life 36th President. There you
can tour the collection that commemorates Johnson’s presidency during the tumultuous Civil
Rights and Vietnam era, visit his boyhood home, and even see the cabin his grandparents
lived in during the 1860s. From the visitor’s center, bus tours take guests to the LBJ Ranch,
once known prominently as the “Texas White House,” and since bequeathed by the Johnsons
to the American public and the national parks system.

Mountain Man
As a boy, Ralph Green never saw himself
training for competition in Vail. Raised is New
York’s tough Bedford-Stuyvesant area, football
was Ralph’s ticket to a future. At just 15, he was
captain of his high school football team when, in
a random act of violence, he became a shooting
victim in an attack that cost him a leg and nearly
cost his life.
Today, Ralph is a champion skier, competing on
the U.S. Paralympics team, racing downhill at
90 miles an hour with a smile on his face. An
inspiring leader of others and a subject of media
attention, Ralph lives and trains in Vail, where he
spends a lot of time speaking about what he has
gained rather than what he has lost.
Ralph is just one of the local personalities who
give a warm and vibrant sense of community

Salmon, scallops, sea bass, free-range chicken, moscovy duck, osso buco,
and angus beef cuts are also featured entrees, accented by roasted squash,

Strawberries with Aged Balsamic Syrup
At La Costa Resort and Spa in Carlsbad, California, our chef celebrates late spring by taking advantage of the prized local strawberries in a
dessert that has become a favorite of our guests. The ingredients create an unusual round of flavor sensations that draw attention to the berries’
luscious qualities, yet doesn’t overpower them. (For ease, we suggest you purchase the gelato and shortbread cookies ahead of time.)
The Plate
4 oz. sliced fresh strawberries
2 oz. strawberry balsamic syrup
1 ea. almond shortbread cookie
3 oz. Tahitian vanilla bean gelato
Pinch cracked black pepper
1 mint sprig
Place the sliced strawberries in a mixing bowl. Add
the balsamic syrup and the pepper. Toss. Place in
the center of a serving bowl. Scoop the gelato on
the strawberries. Garnish with cookie and mint.
Strawberry Balsamic Syrup
1 lb. fresh or frozen strawberries
4 cups water
2 cups sugar
4 oz. aged balsamic vinegar
Combine the strawberries and the water and
sugar in a sauce pan reduce by half.
Strain and add the balsamic vinegar let simmer
for five minutes cool before serving.

Honestly, we could probably serve microwave corn dogs in that setting and
have a hit on our hands. But what a waste that would be of our chef and
kitchen staff, who bring artistry and invention to a new level with dishes
such as the appetizer gnudi – Asian water buffalo ricotta gnudi, to be
exact – which Bon Appetit magazine called its “dish of the year.” Essentially
dumplings, they are reminiscent of ravioli without the pasta carrier, a
lighter-than-air morsel paired with a brilliant sauce.
