HIGHLAND SCOTCH
GLENFIDDICH 50 YEAR OLD
“Fresh barley, freshly peeled grape and honey on the nose, this is perfection; this is nectar.
A silky delivery: barley with watered down maple syrup. The middle is filled with soft, grassy
barley and a hint of a smoke spice; a distant puff of peat reek carried off on the speyside
winds, then a winding – down of vanillas, dropping through the gears of sweetness until the
very last traces are chalky dry.”

ABERFELDY 16 YEAR OLD
Aberfeldy, known as the “Golden Dram,” draws its water
from the Pitilie Burn. Pure and fresh, its waters are famed for
containing deposits of alluvial gold. The dram is much admired
for its honey notes, displaying a classic Central Highland style
rarely tasted in single malts today.

ANCNOC 16 YEAR OLD
“Sharp, pithy, salty...those salts crash headlong into the
tastebuds and then give way to massive spice and barley;
soft sugars and vanilla follow at a distance, salted mocha and
spice. Unquestionably the spiciest AnCnoc of all time.”

BALVENIE 21 YEAR OLD PORT WOOD
“Chocolate marzipan with a soft sugar-plum centre; deft,
clean and delicate; hard to imagine a delivery more perfectly
weighted: a rich tapestry of fruit and nut plus malt melts on
the palate with a welter of drier, pithy, grape skin balancing
the vanillas and barley oils; delicately dry with the vanilla and
buttered fruitcake ensuring balance; what a magnificently
improved malt. Last time out I struggled to find fruit. Here,
there’s no escaping.”

and ripe bananna dusted with Demerara sugar. Delicate,
rounded peat smoke combines with gentle, sweet oak spices.
The palate reveals dramatic peat smoke and barley that
complement the crisp citrus zest, white pepper and fresh
ginger. Caramelized orchard fruits and dried apricots develop
to a rich, grassy wood smoke finish.

BENRIACH 35 YEAR OLD
Barley and sherry notes open the nose and give way to rich
malt, some cider apple aromas, chocolate, coffee and vanilla.
Incredibly smooth entry into the mouth with a super smooth
texture carries rich, mature flavours to every taste bud. Old
spice and golden syrup come into full play and sherry shows
well in the long, mellow finish.

BRORA 35 YEAR OLD
“Maturation of this 1978 distillate has taken place in European
oak and refill American oak casks. Fresh and fruity on the early,
herbal nose; a hint of wax, plus brine, developing walnut fudge,
with an underlying wisp of smoke. The palate is very fruity,
with mixed spices, then plain chocolate, damp undergrowth,
gentle peat smoke, and finally coal. Mildly medicinal. Ashy peat
and aniseed linger in the long, slowly drying finish. Brora at its
very best.”

GLENDRONACH RECHERCHE 44 YEAR OLD 1968 CASK #5
“Unsubtle with in-your-face grape, so thick you can hardly breathe; the sugars are not less
loutish and spices are pure thugs. And you know what? I bloodly love it ...! You expect spices
and you get spices. Here though, the fruit is more temperate and even a little ulmo honey
kisses and seduces... I have come to look at this style of malt beyond fondly. A real once in a
lifetime treat for most.”

CRAGGANMORE 25 YEAR OLD
“This shows mature distillery character with that discreet
meaty undertow bedding down exuberant top notes: icing
sugar on rhum baba, preserved lime, crystallized fruits, honey,
pecan, fig, and scented woods. Typical of Cragganmore
in its constantly shape-shifting character. The palate is
concentrated orchard fruits, dried fruits, light spice, chestnut
puree, and a little smoke. So yes, in the same league.”

GLENGLASSAUGH 51 YEAR OLD
This complex and sophisticated dram is an extremely rare, one-off whisky. Bottled at cask
strength on May 14 this year, non-chill filtered and with no colour added, this is truly an
exceptional dram.
Specially selected by Master Distiller Billy Walker, the rich and flavoursome whisky is from
1963 cask 3301 and has been maturing in the coastal warehouses at Portsoy for over 51 years.
Distilled and filled to cask on February 15 1963, it is one of the oldest casks in inventory and
brilliantly captures Glenglassaugh’s unique Highland coastal character.
The exclusive mellow yet full-bodied character gives a rich, complex symphony of red
fruit preserve, touches of treacle and the slightest mountain herb influence. Gentle clove
oil, distant sour cherries and the softest peppery oak add a memorable sophistication to
this rare vintage.

GLENFIDDICH 1963 ORIGINAL
This historic expression is a recreation of the original 1963
Glenfiddich Straight Malt that started the single malt category.
the Malt Master, Brian Kinsman, recreated the Original 1963
with the recipe uncovered from the Glenfiddich family archives.
The result, then and now, is a spirit contrasting many of our
other expressions. The aroma is floral with the hallmark
Glenfiddich pear, followed by lively fruit notes, biscuity with a
soft vanilla oakiness and deliciously dry finish.

GLENFIDDICH 26 YEAR OLD EXCELLENCE
A rare and aged single malt Scotch whisky that has spent
26 long years carefully maturing in American Oak ex-bourbon
casks. This expression was created to honour Glenfiddich’s line
of continuous family ownership since William Grant founded
our distillery in 1887. This creation is a vibrant yet soft and
delicate expression, with a deep and complex balance of
sweetness and dry oak tannin. Bound to excite the palate and
awaken the nose.

GLENFIDDICH 40 YEAR OLD
“It’s the spices which win hands down here. All kinds of juicy,
voluptuous fruit…this nose is dripping with it. But the spices
are the rudder steering a path through spectacular scenery;
bringing the most from the oak and allowing a juicy degree
of salt to enliven things further; sublime traces of muscovado
sugars appear to bring the fat sultanas to bursting; now we
get to the burnt raisin bit of the fruit cake effect.”

“Not stinting on the phenols; the peat appears to have been
shovelled into the furnace like a fireman feeding coals to the

smoke layering. Some Parma Violet candy nuzzles alongside
the treacle-coconut; good phenolic grist fade; appears happy
and well suited in its new smoky incarnation.”

such novelty in the typically staid world of Scotch whisky. This

ARDBEG PERPETUUM
Matured in a combination of former bourbon and sherry casks,
it bears a nose slightly less smoky than the distillery’s flagship
10-year-old. On the palate, it’s creamier, too, with luscious
notes of pear, honey, nutty oak and a character that put me
in mind of dark chocolate wrapped in smoky bacon drizzled
with a dollop of vanilla. As it moves toward the long finish,
Perpetuum’s peaty campfire and creosote builds force, with
peppery spice and a salty tang giving it further lift.

malt with enough personality to still get its character across
after 25 years. Who could ask for more...?”

“More smoke than is common from this distillery and age. The
aromas are food-related: initially roast ham with caramelized

palate is refined and mature, but with fresh fruits retained,
with oak and smoke beautifully integrated. A mature Caol Ila in

SCOTCH FROM OTHER REGIONS
JURA 1984
ISLE OF JURA
Every good malt whisky has a story to tell – even if some are just a little more well-known
than others. Intense and completely uncensored, the Jura 1984 Vintage pays homage to the
history between the island of Jura and its most distinguished guest, George Orwell, who wrote
dystopian classic Nineteen Eighty-Four, right here on Jura. And with only 1,984 individually
numbered bottles of this uncompromising edition ever made, we like to think we’ve added our
own revolutionary chapter to the tale. Well, as long as Big Brother doesn’t get hold of them.
Thirty years in the making, this exquisite limited edition single malt is all about taking things
slow, aged in American white oak, Amoroso and Apostoles Oloroso sherry butts casks. Some
say patience is rewarded hints of honey and vanilla, while others enjoy ripe pineapple, bitter
chocolate and Morello cherries – after all, who says there’s only one version of the truth?

COMPASS BOX SPICE TREE BLENDED MALT
Having initially been chopped down by the Scotch Whisky Association, who
were indignant that extra staves had been inserted into the casks, The Spice

COMPASS BOX HEDONISM QUINDECIMUS
“How time flies! This eloquent blended grain marks CBWC’s
15th anniversary and the combination of these aged grains is
idiosyncratic of whisky auteur John Glaser’s distinctive taste.
Rich honey, apricot stone, crisp spices, vanilla custard, gentle
oak char, and tropical fruits promise a real reward. Succulently
juicy, with melon, apple, and caramel, subtly with chocolate
and dark fruit infiltrating. Slowly the sweetness depletes to
black pepper and spiced roast meats. Defer swallowing for as
long as possible.”

JAPANESE WHISKY
NIKKA TSURU 17 YEAR OLD DECANTER
Firm and lively aroma, with a mixture of almond paste, iris,
honeysuckle, citrus and salt, it is particularly powerful. It
develops with vanilla, new oak, menthol and tobacco notes.
The taste is sweet, balanced, spicy (clove, nutmeg), growing
in intensity. Praline and almond calm the harsh flavours. This
gives way to ripe pear and apple, vanilla and exotic tropical
fruits. The citrus flavours are full of sweetness. The finish
languishes on star anise, and green licorice. The peat is all but
a memory. It continues with mocha, acacia honey and green
menthol. It’s salty character grows in intensity.

HIBIKI HARMONY
Amber in colour with a nose of rose, lychee, a hint of rosemary,

Mizunara (Japanese oak).

NIKKA TAKETSURU PURE MALT
Fresh and fruity, it progressively opens with decadent pastry
notes of biscuits. The malted barley grows more present and
plays off of the citrus aromas. A touch of oak, verbena and
chamomile notes bring it all together. Flavours of coffee,
licorice, toasted oak and a cigar slowly burning out. Finishes
with licorice candy all the way. A refined bitterness quickly
gives way to more integrated, medicinal aromas.

E H TAYLOR STRAIGHT RYE
An altogether different recipe and profile than Sazerac Rye,
this recipe contains just rye and malted barley, no corn. The
result is an aroma full of dried fruit, black pepper, and touch
of fresh dill. A small sip brings an array of flavours both sweet
and savoury with a terrific balance of dark spices and subtle
caramel overtones. The finish is especially pleasing with an
oaky dryness that lingers just long enough.

with notes of oak, leather, and molasses. Enormous in every
respect, from its thick, chewy texture to its unbelievably spicy
and very powerful flavors. The long, warm finish is preceded
by notes of mint, eucalyptus, cinnamon, vanilla, molasses, oak,
leather, and lingering pepper. For all who can’t get enough
flavors and intensity in your whiskey, your search has ended.”

SAZERAC THOMAS H HANDY STRAIGHT RYE
“It has taken me over three hours to taste this. Were all
whiskies and whiskeys like this, the Bible, quite simply, would
never see the light of day. Beyond enormous. A whiskey which
located taste buds I had no idea I actually possessed… Just like
his near namesake, Thomas Handy. Thomas Handy has come
up with a rambling, immortal classic.”

E H TAYLOR SMALL BATCH
A layering of crisp sugars and spice as well as a thin hint of
mint; the natural vanillas are out in force too; pretty perfect
weight; the oils have just enough clout to ensure the sugars
remain in check, the small grains do stir, and herald the arrival
of the toastier elements; with the sweetness in harmony with
the butterscotch tart and late peppery bite; the exemplary
high quality of this bourbon is not for a second in dispute.

Wonderful chocolate fudge; thick and toasty; ker-pow! By far
and away the biggest landing by this rare Eagle for quite some
time. Almost aggressive in its bite, which entirely suits the
intensity of the spice which sits pretty with the manuka honey
and treacle; tones down quite quickly and we are back to the
lovely chocolate fudge found on the nose.

OLD RIP VAN WINKLE 10 YEAR OLD
This wonderful bourbon is bottled as close to barrel proof as
possible. We add just a splash of our Kentucky limestone wellwater when we empty the barrels for bottling. Thus, this whiskey
is as smooth as any you will find. The more water you add to
whiskey from its natural barrel proof to its bottle proof, the
harsher it becomes. This 107 barrel proof seems to be just right.
