Oils and greases separator (FOG = fats / oils / greases):

Separation of oils and greases that float, by slowing down the flow rate.

Only 1 tank or unit with pre-separation. Units with several tanks also exist.
The solution leaving a restaurant kitchen contains
Water + food residue + detergents + greases
Drain pipe wall surfaces provide a support for the
micro-biological development and storage of organic
matter (greases – food)

Solution: colonize the upstream pipes and the tank.

Dosing
– Start application after a scraping
– Application: with a dosing pump, upstream of the tank
– Initial dose: 1.5 l/m3 of tank
– Continuous dosing from 10 to 20 ml/m3, as a function of incoming flow rate
– Or dosing at intervals (if regular disinfections):
