Chicago, IL - Multiconcept operators, those companies that own and
operate at least three unique restaurant
concepts with annual sales of $10 million or more, find themselves in a bestof-both-worlds scenario. These companies are able to take advantage of the
economies of scale and efficiencies
characteristic of chain restaurants,
while also enjoying the local patronage
and menu flexibility of independent
restaurant operators.
Such operators run the gamut
from industry giants like Lettuce
Entertain You, Levy Restaurants and
Wolfgang Puck Companies, to smaller
operations such as Kalamazoo's
Millennium Restaurant Group (6 concepts), Cincinnati's Tavern Restaurant
Group (5 concepts and 15 units), and
Denver's Sage Restaurant Group (9
concepts).
While the companies may not command market share comparable to the
country's largest chains, they do occupy
a potentially important niche for foodservice suppliers and distributors, with
116 of the top 200 Multiconcept
Operators (MCOs) having annual sales
of at least $30 million. Overall, the top
200 MCO companies represent 1,448
concepts, 2,367 units and over $5 billion
in annual sales.
"There are a number of trends contributing to multiconcept operators'

current success," says Technomic
Director Mary Chapman. "The Food
Network has given a number of chefs
celebrity status, and that has provided
an eager customer base for their concepts. These concepts are more easily

able to offer seasonal menus and
focus on local relationships that
make the experience feel unique to
diners. Many customers may not
even be aware of the relationships
between concepts and think of these
restaurants in the same way they view
other local independent restaurants
in their area."
Chapman also points out that these
companies can quickly rebrand units,
utilize unused space within a particular
concept to introduce a new brand, or
easily change the allocation of
resources between brands in order to
stay ahead of the curve when it comes
to industry trends.
In order to help operators and suppliers better understand this vital
restaurant segment, Technomic introduced The Top 200 Leading
Multiconcepts Operators Restaurant
Report, which includes rankings and
detailed profiles for 200 of the nation's
leading multiconcept operators. The
report is based on Technomic's ongoing
tracking of chain and independent
restaurant operators, as well as interviews with operators. In addition, the
report draws from a number of recent

the brand’s restaurants operate in 13
states, with its most prominent presence in the Midwest

carving out a new niche in the casualdining segment. It’s a fresh approach to
dining that restaurant operators can
grab hold of now and grow it in their
home markets,” said Tom Ragan, Vice

Appell Pie
The oldest form of business
SEPTEMBER 2011

FLORIDA
From the dawn of civilization man
has been doing business in one form or
another. Business was conducted in it’s
purest form. I want your goat and I am
willing to give you three pieces of pottery and an axe. Currency did not come
into use for many years after.
In today’s economy currency or
money is again in short supply and
many people have been going back to
the original way of buying a goat but
with a modern twist. Today we know this
method of shopping and paying for
goods and services with other goods
and services as Barter.
◆
Barter works
if you can find the
products you need
within the barter
system you join.

MARSAL IS NOW REPRESENTED IN FLORIDA BY:
There are thousands of barter companies around the country and they all
work on the same premise. Businesses
join the group and offer their products
for sale. You can purchase a goat that
another member is offering for a dollar
value and pay for it with an equal value
of your products. Let’s look at how it
works in today’s economy.
John’s Restaurant needs a new fryer.
John would contact a barter company
and join the group. A one time membership fee is usually paid to the barter
company. Once John is a member he
will have access to the other members of
the group and the information about
the products they are selling. Most

barter groups have websites that allow
John to view the offerings and purchase
items. After investigating all of the members in the group John finds a used fryer
that Michael’s Restaurant Supply is selling for $400.00.
In ancient times John and Michael
would exchange their offerings and the
deal would be completed. In the new
barter world Michael and John would
agree on a price and would submit
information back to the barter company
who maintain the balance of trade dollars in each one of their accounts. Let’s
assume both John and Michael have
established accounts with 1,000 barter
dollars in each one of their accounts.
John would transfer 400 of his dollars to
Michael’s account and Michael would
provide John with the fryer. John’s
account is now 600 and Michael’s is now
1400. Just like a checkbook transaction.
The barter company charges a fee for
the transaction either to the buyer or the
seller depending on company policy.
How did John get the 1,000 barter
dollars in his account? Steve, Mary, Bill,
and many more members came to his
restaurant to eat and paid John with
their barter dollars which were credited
to John’s account. John actually paid for
the fryer with his food but did not hand
it to Michael directly.
Barter works for companies that
have a low cost for their products and
for selling excess space like a hotel room
or seats at a show that hasn’t sold out.
Barter works if you can find the
products you need within the barter
system you join. You don’t want to do
more than about 10 percent of your
daily business in barter unless you can
spend an equal amount.
Check on barter companies in your
area and the next time you need to buy
a goat you’ll be all set up.

The Best Filtration Matters in your Operation
The benefits water treatment delivers to a foodservice operation affect the
success of your business every single day. It keeps your equipment running
smoothly and maximizes its efficiency. Water treatment improves the taste
of the foods and drinks you serve, and delivers consistent results every time.
Water treatment provides operators with the peace of mind that their water
is the best it can be. But when it comes to the important task of maintaining
and servicing filters and their replacement cartridges, operators unfortunately
have little time to think about it.

Florida’s second Energy Kitchen
restaurant is slated to open in
November in Ft. Lauderdale and will be
located downtown at the corner of
Broward Boulevard and Federal
Highway (35 Federal Highway). Tony
Lord, a former regional sales manager
for Glaceau, the maker of Vitaminwater,
will own and operate this location, as
well as two others in the area. While leases have not been signed, the other locations will be in Boca Raton and
Plantation. Energy Kitchen plans to
open a total of 25 restaurants throughout Florida in the next five years.
Founded by Anthony Leone and
partner Randy Schechter in 2003,
Manhattan-based Energy Kitchen www.energykitchen.com - is a healthy,
fast-casual restaurant that provides
nutritious and convenient meal choices by offering low-calorie, low-fat,
burgers, wraps, salads, and smoothies.
Everything on the menu is 500 calories
or less and is grilled, baked or steamed,
never fried, and cooked to order.
Energy Kitchen has already grown the
concept to 10 restaurants throughout
the greater New York metropolitan
area and recently launched a national
expansion plan calling for 1,000 locations in the next 10 years.
LAND-O-LAKES CULINARY ARTS SCHOOL
New York, NY – For those looking to
maintain a healthy lifestyle, finding
acceptable fast food options can be a
daunting task. The offerings are minimal, with temptations abundant at
every turn.
But who says fast food has to be
fatty? Not Energy Kitchen.
The healthy fast-casual chain –
founded in New York and backed by
multi-millionaire co-founder of
Vitaminwater Mike Repole – recently opened its first Florida restaurant
in Pinecrest, hawking a health-centric menu featuring nothing over
500 calories.
“It’s an exciting time for us as we
continue to strengthen our footprint
in the healthy, fast-casual dining
industry and grow our brand nationwide,” said company founder and
president Anthony Leone, whose
Manhattan-based chain plans to open
a total of 25 locations throughout
Florida in the next five years. “As more
and more consumers begin to realize
that fast food doesn’t have to be fat
food, we look forward to providing
them with a healthy, delicious alternative to their dining options.”
Energy Kitchen caters to the
health-conscious consumer, serving
low-calorie, low-fat items such as
muffins, wraps, salads, soups, burgers
and sandwiches, as well as entrees
such as chicken marinara, yellowfin
tuna steak and turkey meatloaf. The
brand pairs meals with a varied list of
nutritional sides, such as fresh vegetables, baked homestyle potatoes or
creamed spinach, and also offers
smoothies and healthy snacks for
those on the go.
Nothing on the menu is over 500
calories, everything is grilled, baked or
steamed, and full-calorie sodas aren’t
even an option.
Located at 11421 South Dixie
Highway, the new restaurant, which
opened in August, is owned and operated by Justo Luis Pozo III, a Miami
native who has worked as a personal
trainer and wrestling coach for the
past four years. Anchored by his extensive knowledge of personal wellness
and nutrition, Pozo is committed to
opening at least five additional locations throughout Miami-Dade County
and has his eyes on South Miami,
Coral Gables, Midtown, Aventura and
Bal Harbour, among others.

Seven easy marketing steps for
the chef / owner / entrepreneur
Get endless referrals and everything you need to know to keep new customers
The secret recipe to successful marketing is to use your regular customer base
and a fully functional in-house guest
Referral system to utilize these present
guests as your un-paid sales force to generate trackable referrals, awesome ROI,
return on investment, and take back control of your traffic generation, your business and your life.
Part one
Guest Referral Specialist

“Unsustainable business model” …
The PEW research center found that
on average each guest is the hub of her
own sphere of influence and that
spheres potentials is immense. The
study found that the average guest
knows 250 people. Add it all up and the
total sphere of influence comes to about
62,500 people for each guest dining in
your restaurant.
who made it. You are doing your fair
share of “Giving Back” fund raisers for
your community. Too many tables are
empty during the week, why?
Unfortunately, you are in an industry
where the only viable way to grow is to
steal market shares from rivals. To do
that, you need all the help you can get.
Upscale dinner-house chains and new
restaurants openings by the dozens are
stealing market shares from independents like you.
Imagine turning 100’s then 1000’s of
your highly satisfied patrons into your
un-paid sales force, giving you gold
plated referrals by bringing in their personal friends for dinner in your restaurant. Tell your patrons (in writing) that
you know they love your restaurant and
ask if they would consider bringing in
their friends, so more people can experience your restaurant. Tell them,
(again in writing) that as an independent chef-owner-entrepreneur you need
their help to prevail and grow your
business in this economy.
Do you want to know the best way to
motivate referrals? If you have been
around quality independent restaurants for any length of time, you properly realized that’s it not money, newspaper ads with coupons, Killer Tactics
Groupon or Two for One or for that matter, direct compensations of any form.

Unfortunately, you
are in an industry
where the only
viable way to grow
is to steal market
shares from rivals.
You know you are successful. Yes,
you’re packed every weekend. Yet you
know you could do more business. Your
kitchen is committed to innovation
even as it celebrates the past of a mostly
solid farm to-table menu. Your reviews
are right up there among the best. A
meal in your restaurant is about your
guest and their interest, not of those
And by now you also know that it’s not
social media. The perfect referral motivator lies in our deep-seated human
need for community.
Most talked about restaurants rely
on a story that reveals the essence of
what they stand for and how they are
different, fun and not boring. It has a
soul and you can feel the ‘beat’ the
minute you walk in. Their core story is
compelling, captivating and easy to
retell. It is attractive to the guests, attractive to journalists and attractive to your
staff. Restaurants that get talked about
are driven by a higher purpose, one
formed by a passionate chef-owner /
entrepreneur. It’s more about energy
and creating something the guest want
to connect with. It’s honesty that is hard
to define, but can’t be faked. You usually
know you come across a restaurant
that’s in touch with a higher purpose
simply by the way your guest reacts to
your story. It’s not really what you do as
much as why you do it that must be captured and defined as part of a truly captivating purpose.
Once implemented, it will generate instant and endless referrals for
qualified independent chef-owners/
restaurateurs.

All things being equal, people will do
business with, and refer business to
those people they like, they know and
they trust. Practical implementation of
an in-house systematic referral system
will work without Killer Tactics, Open
Table ‘Marketing’, social media, newspapers, bring coupon deals, reward cards
and more than a dozen online coupon
‘marketing’ sites. It seems like there is
another dozen sites opening every
month, that all claim to be the answer to
selling your empty seats. But after taking
a 50 % cut on top and another 15-25 %
cut on the button line sales, the restaurateur is left with a negative cash flow,
hoping that their new ‘guests’ will return
as regular paying customers! It will
never happen. CBS Evening News

The foodservice industry has lost
almost $1B in value since 2006.
Although the National Restaurant
Association has seen its Restaurant
Performance Index (RPI)--which measures same stores and store traffic--at its
highest level in three years, the NPD
predicts same store restaurant traffic to
increase modestly in 2011. The poor
economy and unemployment, that is
nearly into the double digits, has led to
a number of trends that have increased
pressure on foodservice operations
including value menus, bundling promotions, smaller portions and
Groupon. Mintel predicts that consumers
will
continue
to
demand price deals
everywhere they eat.
Consumers are also
trading down, with
QSRs and C-stores
continuing to encroach on other foodservice segments. According to
Technomic, full service restaurants
resulted in a 1% decline in 2010, from a
2009 decline of 8%. Non-commercial
experienced a 0.7% increase in 2010,
after a 9% fall in 2009.

U.S.-grown rice is an economical
choice for chefs and operators as
commodity prices continue to

Despite rising costs in

one of the most cost-effective
ingredients in the foodservice pantry,
making it an ideal choice to optimize
menus and increase profit-per-plate.

Epcot International Food & Wine Festival
VooDoo BBQ & Grill, a Louisianabased barbecue restaurant franchisor, is
expanding nationally after nearly a
decade of successful growth in
Louisiana, propelled by an avid customer base hungry for its competitionstyle barbecue.
The New Orleans-themed chain is in
negotiations with potential franchisees
to start large multi-unit expansions in
Florida, Texas and in the Northeast. Last
month, VooDoo signed a deal with a
Greenville, S.C., company to open eight
restaurants in the Carolinas and plans to
open another location on the
Mississippi Gulf Coast.
These expansions will at least triple
the size of the chain and set the table
for further expansion into markets
outside the south, such as the Midwest
and Northeast.
“People love New Orleans style
food,” said Tony Avila, VooDoo BBQ’s
CEO. “We’ve created a popular niche
with our unique approach to fastcasual barbeque and we expect that it
will be very popular in other parts of
the country.”

meat is served without sauce, which
customers can add to taste and enjoy
along with VooDoo’s award-winning

are as good as the BBQ.
VooDoo opened its first location on
St. Charles Avenue in New Orleans, a city
renowned for its native cuisine but not
known for barbecue, on Mardi Gras
weekend 2002. Since then, VooDoo has
carefully built its brand and franchise
system to encompass 12 locations
throughout South Louisiana.
New Orleans-themed franchise
restaurants have historically done well
on a national scale, and VooDoo BBQ
and Grill expects to tap into the nation’s
fascination with New Orleans and its
cuisine.
“Many Southerners already eat barbecue regularly,” Avila said. “We think
customers in the south will love our New
Orleans twist on a food they already
love, but we have a tremendous opportunity in places like the Midwest and
Northeast as well. Barbecue is one of our
national foods. It has universal appeal.
Everybody loves barbecue.”

“We are proud to bring our distinctive and flavorful food — choice
meats and seafood, fresh vegetables,
crisp salads, and flavor-packed
sauces and spices prepared by
expert grillers on a 600-degree, 7foot grill — to the new communities,” Ragan added.
Born out of the ancient
Mongolian tradition of "hunt, gather, cook, feast," bd's Mongolian
Grill’s unique experience comes
from its guests’ ability to create their
own "feast" and watch it cook before
their eyes (Mongolian-style) on a
large, flat grill.
bd’s Mongolian Grill has proven
itself to be an attractive opportunity for franchisees and area develop-
ers from several other restaurant
systems. “We’ve become a preferred
investment for multi-unit and
multi-brand franchisees that want
to diversify their portfolio,” noted
Ragan “While our recipe for success is deeply rooted in food quality and innovative store design, it is
our proven operational processes
and systems that make bd’s
Mongolian Grill such an attractive
franchise opportunity.”
bd’s Mongolian Grill, where guests “rule
the experience,” first opened in 1992 in Royal
Oak, Mich. bd's unique fun comes from its
guests’ ability to create their own "feast" from
a variety of choice meats and seafood, fresh
veggies & flavor-packed sauces, freshly cooked
(Mongolian-style) on a large, flat top grill. The
chain has grown to 35 restaurants. Thirtyfour locations are based domestically in 13
states, including 15 company-owned and 20

gluten-free diet by necessity or as a

that removing gluten from their diet

New Planet Beer Company was

my diet I was amazed how many products contained the gluten, and ended
up with very restricted food choices.
But after a period of time, new glutenfree products started popping up. I

drinking gluten- free beer, but I couldn’t find a brand that truly satisfied my

Adriatico Trattoria
Born in the city of Ortona, Italy, on
the Adriatic Sea, Chef /owner Marco
Cudazzo knows cuisine. Through his
many years of culinary experience, he
brings true Italian, time inspired
recipes and traditions to his restaurant. Old world cuisine demands the
best ingredients available ... the finest
cuts of meat, the freshest seafood, and
in-season vegetables are chosen for
freshness and flavor. Each entree is
individually prepared with the unique
touch of this refined chef.
Cudazzo, a native of Abruzzo Italy,
brings his culinary passion to Orlando,
Fl. Leaving Ortona, a city in the
Provence of Chieti on the Adriatic
coast, for Rio de Jenairo, Brazil in the
‘80s and then relocating to Central
Florida in the mid 90’s.
Within six months in Orlando, he
obtained a position at one of
Orlando’s legendary Italian restaurants - Antonio’s La Fiama. Antonio’s
has two floors to their restaurant - the
first floor is a deli/pizza/wine shop,
with a casual atmosphere; the second
floor is the fine dining Italian restaurant. Chef Marco soon became the
Executive Chef upstairs. This was
where he sharpen his skills for the
next five years.
After leaving Antonio’s, he went to
Miami, to assist in the planning and
opening of a new Italian restaurant.
Bertolini’s opened at the Towers
Condominiums on Key Biscayne.
Chef Marco designed the kitchen
space, planned the menu and trained
the culinary staff. Bertolini’s is still
operating today with the original Chef
Marco menu.
After a year he was homesick for
Orlando so returned. In Orlando, he
decided he wanted to ‘strike it alone’.
Within a short time, his vision of what
an authentic Italian restaurant should
◆
Orlando
be was realized. Adriatico Trattoria
Italiana quickly gained a reputation in
the College Park/Winter Park areas of
Orlando, second to none. Chef Marco,
through determination, hard work,
and many sacrifices, realized his
dream and true passion.
Abruzzese are masters at turning
simple ingredients (perhaps a handful
of freshly plucked beans from the garden plot, gleaming black mussels,
golden noodles) into glorious feasts.
Chef Marco remains true to this cuisine - fresh, good quality, simple ingredients, make up the menu at Adriatico
Trattoria Italiana. House specialties
include the Pesce del Giorno, Zuppa di
Pesce, homemade gnocchi, osso buco,
veal chops and lamb dishes.

with Mama Angelina. To this day, he
recalls the wonderful aromas of fresh
tomato sauce simmering, wonderful
soups, homemade pastas, and of
course, Mama’s lemon cello for special occasions!
Chef Marco Cudazzo and his wife
Rosetta take great pride in their quaint
dining establishment. “Our entire staff
welcomes you to Adriatico Trattoria
Italiana! The philosophy of our service is
to exceed the guest"s expectations each
visit. “This a not a goal we take lightly
and is one that could never be accomplished without hard work from our
exceptional staff, from the kitchen to the
dining room!” said Cudazzo.
