shores and it is a wonderful day out.
As the Minister for Fisheries, Member for Bundaberg
and someone who lives a stone’s throw from
the shoreline, I understand the enthusiasm our
commercial seafood producers have for their
industry and the great fresh food it puts on our plates.
The festival is not only a showcase for beautiful
Hervey Bay and its ocean fare, it’s a great opportunity
to meet those passionate people. Today’s event is a
great credit to them.

Barcelona born, Javier Codina has worked in some of the world’s
finest dining rooms, including the San Francisco Ritz Carlton.
Javier’s inspired, inventive dishes capture his cultural influences
- Catalan, French and Italian - meshed with his professional
expertise and the freshest local produce. Moda Restaurant
Brisbane has won a swag of awards and “Hats” since 2009.
Javier is a dedicated supporter and contributor to numerous
charities including OzHarvest, Cystic Fibrosis Foundation, – and
was an instigator of the Next Generation Chefs Charity Lunch.
HAJIME HORIGUCHI
TANTO RESTAURANT SCARNESS
Kyoto born Hajime Horiguchi he began his formal training,
working at both his father's restaurant at night and during the day
the iconic Iduu (a traditional saba zushi restaurant established in
1781.)
Hajime joined Noosa Wasabi Restaurant and later as Head Chef
– winning two hats, Best Regional Restaurant, and later joined
Minamishima as Head Chef (Two hats, Best Restaurant of the year
VIC)
Now Hervey Bay seafood has lured to its shores with the first
Japanese restaurant for the Fraser Coast with Tanto at Scarness.
In 2001 Nick began work with the seafood master, Rick Stein at
‘The Seafood Restaurant’ in Cornwall.
After meeting wife Krista (COAST Pastry Chef) while working in
England, the couple decided to move to Krista’s home of Brisbane,
Australia.
Nick secured a position at Thomas Keller's, New York, a three star
Michelin restaurant.
On Nick’s return he began at Brisbane's landmark restaurant,
e’cco. Now Nick calls Hervey Bay home – and as Head Chef of the
multiple award winning COAST his philosophy is simple - let the
produce speak for itself.

ABOUT THE HERVEY BAY SEAFOOD FESTIVAL ASSOCIATION
The NFP Hervey Bay Seafood Festival Association Inc
was formed in 1998 to promote the local wild catch
seafood harvested from the waters of the greater
Wide Bay – Great Sandy region.
Association members are often asked why we hold
the festival – The answer is simple – We are proud
of our seafood industry and support the local
community we live in.
The Association is 100% managed by volunteers and
each festival the volunteer army grows to stage the
event. These thousands of volunteer hours are a vital
contribution to the success of the festival.
The funds raised by the gate entry fee are directed to
expenses of the festival. We shop local and support
fellow community groups at the festival and during
the year.

The regions vibrant and
prosperous
seafood
industry
owes
much
to
the resilience and
vision of the early fishing
families. The Wide Bay
– Great Sandy region
has been professionally
and commercially fished for over 150 years.
We are extremely proud of the early fishers who have
been proactive to protect the marine environment.
The early efforts of the Mary River net fishers
pioneered the barramundi breeding and restocking
in the Mary and Burrum Rivers which continues to
produce exceptional barramundi and king threadfins.
The regions fishers from Tin Can Bay to Burrum
Heads developed the early dugong protection
plan which was later adopted by the Great Barrier
Reef Marine Park Authority. Some of these fishers
are here today and are always happy to talk fish.
The seafood today has been harvested by these local
seafood producers based in Urangan, Maryborough
and the villages of the Sandy Straits. We take great
pride in bringing you the best seafood in the world,
today and throughout the year. We believe that locals
and visitors should never lose their right to choose
local seafood – and the seafood producers are proud to
provide this fresh local product for you. Thank you for
coming along and please do always ask “ is it local? ".
