For National Nutrition Month, Experiment with Herbs and
Spices to Savor the Flavor of Eating Right
Discover new and exciting tastes while trimming fat and sodium from your cooking. For National Nutrition
Month, the Academy of Nutrition and Dietetics encourages everyone to experiment with new combinations of
herbs and spices as you "Savor the Flavor of Eating Right."
"Today's popular cuisine embraces a wide world of flavors that you can enjoy
in all sorts of combinations, while still following a healthful eating pattern,"
says registered dietitian nutritionist and Academy Spokesperson Libby Mills.
It's worthwhile to note the difference between herbs and spices, Mills says.
"Herbs, like basil and oregano, grow in temperate climates and are the fragrant
leaves of plants. Spices, like cumin and paprika, grow in tropical areas and
come from the bark, buds, fruit, roots, seeds and stems of plants and trees." (Continued on page 2)

Innovative use of herbs and spices offers a real flavor advantage, especially if your goal is to cook with less fat
and sodium. "While the exact types of herbs and spices depends on the cuisine, every culture has its traditional
favorites," Mills says.
Mills offers a top ten list of popular ethnic cuisines and the flavors associated with them:

China: Low-sodium soy sauce, rice wine, ginger
•
France: Thyme, rosemary, sage, marjoram, lavender, tomato
•
Greece: Olive oil, lemon, oregano
•
Hungary: Onion, paprika
•
India: Curry, cumin, ginger, garlic
•
Italy: Tomato, olive oil, garlic, basil, marjoram
•
Mexico: Tomato, chili, paprika
•
Middle East: Olive oil, lemon, parsley
•
Morocco/North Africa: Cinnamon, cumin, coriander, ginger
•
West Africa: Tomato, peanut, chili
In addition, Mills recommends keeping a basic assortment of dried herbs and spices on hand for all types of
cooking: oregano, garlic powder, thyme, paprika, cinnamon, nutmeg, chili powder, Italian herb seasoning
blend, thyme and rosemary.
"Then, explore new flavors beyond these basics with curry powder, turmeric, cumin, clove and bay leaf and
experiment with new flavor combinations. Remember to store dried herbs and spices in airtight containers in a
cool, dark cupboard or pantry," Mills says. (eatrightpro.org)
Tax Assistance

970-947-8462. They have trained volunteers who can help you with your taxes free of charge.
After failed attempts to get additional tax help scheduled in Eagle County, we are recommending
High Country for this service this year. It is always the intent to offer this service to seniors in
Eagle County, so we will try again next year and hopefully have more options for you.

Aging Well Initiative Update
The Aging Well Initiative is a project of Eagle County Public Health that has been in progress in the
Eagle River Valley side of Eagle County since March of 2015.
Recognizing the growing older adult population in Eagle County,
and the need to identify current assets which exist, and gaps which
need to be addressed to support a thriving community for aging
well, Eagle County Public Health and community partners have
lead an effort to create a long-term community-wide plan that
addresses the priorities identified by the community. This plan
will include goals, objectives and action steps as determined by a
steering committee and greater community to address the needs of
our older adult community. Thus far, the areas that were chosen
to be tackled first are older adult housing options, specialty
healthcare opportunities, connection to resources and social and
community engagement. Action teams have been formed to work on each area and great progress has

Be Social…It Can Help You Live Longer
How social are you? Keeping buddies or making new ones as we age is more important than just bragging
about how many likes or friends you might have on Facebook. Turns out, social ties are just as important to a
healthy lifestyle as diet and fitness. The more social ties people have, the better their health is at the
beginnings and ends of their lives, according to a new study from the University of North Carolina at Chapel
Hill. The study is the first to definitively link social relationships with concrete measures of physical wellbeing such as abdominal obesity, inflammation, and high blood pressure, all of which can lead to long-term
health problems, including heart disease, stroke and cancer.
Study results
Specifically, the team found that the sheer size of a person’s social network was important for health in early
and late adulthood. In adolescence, social isolation increased risk of inflammation by the same amount as
physical inactivity while social integration protected against abdominal obesity. In old age, social isolation
was actually more harmful to health than diabetes on developing and controlling hypertension.
In middle adulthood, it wasn’t the number of social connections that mattered, but what those connections
provided in terms of social support or strain. “The relationship between health and the degree to which people
are integrated in large social networks is strongest at the beginning and at the end of life, and not so important
in middle adulthood, when the quality, not the quantity, of social relationships matters”.
The takeaway from this study is to try to either keep existing friendships going or
make a concerted effort to create new ones. This is not as easy as it was in younger
years when school, clubs and sports teams created a framework for socializing, but

Flexibility Exercise - Shoulder Stretch
1. Stand back against a wall, feet shoulder-width apart and arms at
shoulder height.
2. Bend your elbows so your fingertips point toward the ceiling and
touch the wall behind you. Stop when you feel a stretch or slight
discomfort, and stop immediately if you feel sharp pain.
3. Hold position for 10 to 30 seconds.
4. Let your arms slowly roll forward, remaining bent at the elbows,
to point toward the floor and touch the wall again, if possible.

Alpine Area Agency on Aging Surveys
The Alpine Area Agency on Aging is mailing surveys to some seniors in the
region who have received meal or transportation services in the past six
month. The customer satisfaction survey will help them to better track
performance outcomes, so your input is helpful and needed. If you receive a
survey, it will have a green NWCCOG logo:
on the top left of the envelope and a self-addressed, stamped envelope to
return the survey by April 1st. If you have any questions, please call

Reservations are requested for lunch by 12:00 pm the day BEFORE the meal is served
(24 hour advance notice is requested please).

Eagle Senior Center, 715 Broadway in Eagle. We deliver meals to homebound seniors in the mid
and lower Eagle Valley (Eagle, Gypsum )
El Jebel: Please call 379-0020. Lunches are served at noon on Tuesday and Thursday at the
Eagle County Annex Building, 0020 Eagle County Dr. in El Jebel (just off Hwy 82 at Crown
Mountain Park). We deliver meals to homebound seniors in the Roaring Fork Mid-Valley.
Minturn-Vail: Please call 328-8831 or 328-2812. Lunches are served at 11:30 a.m. on
Wednesday and Friday at Maloit Park Senior Center inside Vail Ski and Snowboard Academy in
Minturn, 1951 Hwy. 24 in Minturn. We deliver meals to homebound seniors in the upper Eagle
Valley (Edwards to Vail)
All meals are funded by the Older Americans Act and Eagle County Govt. Anyone over 60:
suggested anonymous donation of $3.00 All Guests under 60 must pay $8.00.

Cook’s Corner: Irish Colcannon
Try this fun traditional Irish side dish mainly consisting
of mashed potatoes with kale or cabbage
Directions:
Ingredients:
1. In a large saucepan, boil cabbage until tender; remove and chop or blend well. Set aside
and keep warm. Boil potatoes until tender. Remove from heat and drain.
1 pound cabbage or kale
1 pound potatoes
2 leeks
1 cup milk
salt and pepper to taste
1 pinch ground nutmeg
1/2 cup butter
2. Chop leeks, green parts as well as white, and
simmer them in just enough milk to cover, until
they are soft.
3. Season and mash potatoes well. Stir in
cooked leeks and milk. Blend in the kale or cabbage and heat until the whole is a pale green
fluff. Make a well in the center and pour in the
melted butter. Mix well. (allrecipes.com)
