The sounds of black-power rifles will soon
echo off the limestone bluffs along historic
Walnut Creek, just like the days when Texas
was a Republic.
On Saturday and Sunday, March 7-8, our
Tonkawa Encampment — an authentic site
from the days of the Republic — will play
host to a special program celebrating Texas
Independence Day: Return to the Republic.
Special demonstrations and an exhibit of
black-powder rifles, the type used in the days
of Stephen F. Austin and Sam Houston, will
be featured in the two-day event.
There will also be Native Texan displays and
demonstrations, and a special afternoon class
for Cub Scouts who want to earn the special
Texas Badge.

to carry water in buckets from the creek, how
to clean rugs by beating them in the yard and
how to do other chores on the Texas frontier.
Longhorn cattle roam the Blackland Prairie
once again.
Our special Spring Stampede Days on
Friday-Sunday, March 20-22, will make
visitors feel like they’re living in “Little
House on the Prairie,” the quintessential story
of pioneer life.
On Friday, the last day of Spring Break and
the first day of Spring, admission will be $3 a
person. On Saturday and Sunday, March 2122, a variety of historical activities, horsedrawn wagon rides, music in our dance hall,
and more. Regular admission will be charged.

ABOUT PIONEER FARMS.
Texas Ranger Lt. James O. Rice, an original Austin settler,
laid claim to 1,280 acres at the northward crossing of
Walnut Creek in the fall of 1844 — including the site of
Pioneer Farms. Eight years later, in 1852, Frederick and
Harriet B. Jourdan settled on the site with eight children,
and eventually amassed a 2,000-acre farm. In 1956, the
Jourdan grandchildren, Laura and Eugene Giles, donated
the core of their grandparents’ property to the Heritage
Society of Austin (now Preservation Austin) for a park to
honor early-day settlers. Staffed by volunteers, our living
history museum is managed by a Board of Governors that
oversees operations as the Jourdan-Bachman Pioneer Farms
Foundation.

From the Modern Homestead Companion,
1899: “For a winter cold, press a clove of one
garlic into a cup of hot water, add the juice of
a lemon, mix in a teaspoon of honey and drink
it down. This will surely help you to get rid of
the cold faster . . . For congestion in the lungs
and throat, chop up a handful of mint finely,
put it in a cup, and then pour boiling water
over it. Let it steep for about five minutes.
Strain it, and a little honey to sweeten the
taste. It will open up your breathing passages .
. . For joints that become stiff during winter
cold, mix two parts pure olive oil and one part
kerosene to make a liniment to bathe the
afflicted joints.

GARDENS: WINTER TILLING & MORE.

From the Guide to Farming, 1892: “With
February comes the time to pull away the
layer of leaves and begin working the wet soil
beneath in preparation for spring planting.
Wait a week after lifting the leaves to allow
the worms to relocate deeper into the soil.
Work some of the lead leaves into the soil,
with manure from the barnyard that should be
incrementally tilled into the soil in small
measure with dried leaves and hay. The
worked soil should be allowed to life fallow
until after the last frost, before planting is
commenced . . . Onions and peas can be
planted soon after the month begins, potatoes,
carrots and squash after the mid-month, and
corn, beans, summer squash and peppers
should wait until month’s end . . . Herbs
should be planted only after the last frost, and
with time given to allow the soil to warm up
sufficiently, where they will the best . . .
Remember that haste in the garden goes for
naught.”

sent along this month’s recipe — a hand-medown, she says, “from my great-great
grandmother. As the story goes, my
grandfather brought this recipe home after he
worked on the cattle drives, and cooked for the
men. It’s delicious.”
Delicious “Prairie Picnic” box lunches are
now available for school groups and other
visitors to enjoy while exploring history.
The handcrafted lunches feature a pork loin
sandwich, 2 cheeses, grapes and a cracker for
$6 each. A smaller cheese-cracker-and-grape
lunch sells for $4.50.

Ingredients
•
2 1/2 lb beef cubes (5 cups)
•
2 Tablespoon All-purpose flour
•
1 Tablespoon Watkins paprika
•
1 Teaspoon Watkins chili powder
•
2 Teaspoon Salt
•
3 Tablespoon Lard
•
2 Sliced onions
•
1 Clove garlic, minced
•
28 oz Can tomatoes
•
3 Tablespoon Chili powder
•
1 Tablespoon Cinnamon
•
1 Teaspoon Ground cloves
•
1/2 Teaspoon Dry crushed red peppers
•
2 cups Chopped potatoes
•
2 cups Chopped carrots
Directions
Coat beef in a mixture of flour, paprika, 1
Teaspoon chili powder and salt. Brown in hot
fat in a large Dutch oven. Add onion and
garlic and cook until soft. Then add tomatoes,
chili powder, cinnamon, cloves and peppers.
Cover and simmer for two hours. Add
potatoes and carrots and cook until vegetables
are done, about 45 minutes.
