Since July last year, Springboard and the BHA have spearheaded a vital new
initiative has got influential industry leaders and young people together to have a
Big Conversation about the challenges young people face getting work and the
opportunities leaders have in Hospitality. It is proving to be inspiring and making a
real difference because more young people are entering our industry as a result.
The Big Conversation focuses on
the importance of work experience,
apprenticeships and employing
local talent. The purpose being to
understand, the business case for
each; the drivers for young people;
the opportunities and barriers; how to
make introductions to the workplace
meaningful, relevant and inspiring;
and, most importantly, prospects for
employment.

It’s important because youth
unemployment is at its highest for
decades, yet there is a wealth of
talent and potential waiting to
be tapped; the UK Government is
looking to industry to drive economic
recovery and the hospitality industry
is in a position to be a key player to
stimulate growth, but hitherto has
not capitalised as much as it could
on attracting domestic talent. Work
experience, apprenticeships and
initiatives to support unemployed
people into jobs are critical to
cementing a talent pipeline but all
three are often misunderstood or
underrated.

Michel Roux Jr, Life Patron
Michel Roux Jr’s earliest food memories are the smells of the
kitchen – pastry, sugar caramelising, stews – where he played
under the table while his father and mother prepared the
meals.
This inspired Michel Roux Jr to take over the helm at the world
famous Michelin starred Le Gavroche in 1991. Since then, he
has won numerous awards for his cuisine and has continued
to set the standard for classical French fine dining in London.
Michel is a judge and presenter on the BBC’s popular prime time
show MasterChef: The Professionals.
I am thrilled to have become a patron of Springboard, a charity which
does incredible work on behalf of many disadvantaged young people,
helping the next generation to achieve its full potential. Encouraging
the pursuit of careers in the hospitality industry is a cause close to my
heart, and one which I am so proud to be affiliated with.

TEACHERS ACCESS ALL NEW
RESOURCE-GATEWAY TEACHER WEBSITE
Springboard’s revamped educational support
website www.resource-gateway.co.uk has proven
a real hit with teachers of food technology and the
GCSE in Hospitality and Catering as the number of
users almost doubled to 1,548 teachers.
We have also added a Level 3 Nutrition and
Food Science on-line resource which is endorsed
by Awarding Body WJEC (Welsh Joint Education
Committee). Content is media rich with video,
PowerPoint, Interactive materials and has been well
received by schools.
Particularly popular is the Learning Bites area with a
brand new ‘Big Bites’ series including: Contemporary
World Food; Food Presentation; Fibre; and Fats
& Sugars. All are interactive and matched to the
GCSE Hospitality & Catering and BTEC Hospitality
qualification. These units have also been endorsed by
the WJEC as a useful revision format for Key Stage 3 &4.
Virtual Hotel ‘Pops-up’ To Excite
300 Students At Larbet High School
For the 3rd year running, Springboard organised a ‘pop-up hotel –
Hospitality Skills Challenge’ experience at Larbert High School with
Gleneagles, Apex Hotels and City of Glasgow College. The day saw
the entire S3 year group of 300 pupils engaged in a series of hands-on
activities and a Q&A for both teachers and pupils with the hotel staff.
Youth Programmes
Summer School to be
given a KickStart
The 2012 Summer School transition programme for
school & college leavers who ‘don’t know what
they want to do’ when they leave, were run in eight
major cities throughout the country. Of the 145 who
completed the intensive programme of training,
development and structured work placement, 64%
went into employment, further education or training in
the industry. Despite this success, our evaluation told us
that we would attract more people if we rebranded,
changed the name, and gave it a facelift. Put simply,
young people didn’t want to leave school to go
to a Summer School! But they did want to kickstart
their careers with a programme that gave them a
structured and ‘try before you buy’ process. We’ve
listened, redeveloped the content and are launching
KickStart to help nurture more undecided young talent
into our industry.
Summer School acts as a transition programme
from school or some college programmes into
apprenticeships or first jobs and as such is an effective
feeder programme. However, the evaluation of this
year’s programmes with young people, teachers
and college lecturers suggested its appeal might
be greater if it were renamed and rebranded. The
general consensus was that the name put people off –
they did not want to leave school to go to a Summer
School. Focus groups with young people have
concluded that a better identity would be KickStart
and as a result, rebranding is currently underway.
KickStart – like Summer School - will continue to
attract school/college leavers who have not secured
employment, education or training opportunities
–that is they simply don’t know what to do when
they leave education. KickStart will be redeveloped
to include pre-placement training; CV & interview
practice, careers advice and guidance, and a two
week INSPIRE structured work placement tailored
to the needs of the individual. Business Partners will
be encouraged to provide the work placement
following the quality standard and ensuring that they
identify the opportunity that awaits the participant –
apprenticeship programmes, entry level employment
or relevant training opportunities.

FutureChef
FutureChef Cooks Up
Recipe for Success
A record 8,768 12-16 year old pupils took part in the
2012/13 FutureChef Competition – up from 7,411 on the
previous year. The final 12 battle it out for the coveted
title of FutureChef Winner 2013 at The National Final
on 18th March 2013 at Westminster Kingsway College.
Parents, teachers, mentor chefs and sponsors will join
the 12 young finalists at an exclusive pre-final dinner at
the Hyatt Regency London The Churchill on 17 March,
before the 12 open up their basket of ingredients for
the final tense cook-off. FutureChef’s unique ability
to team up mentor Chefs from sponsor organisations
undoubtedly plays its part in inspiring and nurturing a
solid talent pipeline into the Industry. This year 276 chefs
from FutureChef sponsor organisations were involved
either as judges or mentors in the competition phase.

FutureChef Programme Provides
Schools with Year Round Support
The FutureChef Programme provides year long support to
FutureChef registered schools and students with a series
of ‘Look & Learn’ Have a Go’ and ‘Learning Bite’ modules
supporting the food technology, home economics and
GCSE Hospitality and Catering curricula. Last year, over 4,000
students benefited from the programme which is delivered by
professional chefs, nominated as FutureChef Champions.

Luke Thomas
Steffan Davies
Luke Thomas won FutureChef
2009, coming top against 7,500
competitors aged just 15, and
has gone on to work with some
of the UK’s top chefs, including
Heston Blumenthal, Gary Rhodes,
Brian Turner CBE and Simon Radley.
Luke has appeared on Market Kitchen (UKTV
Food) and is regularly seen on BBC Wales and S4C
through event coverage. Luke has impressed the
public with his passion for food. He has taken part
in many cookery demonstrations; these include the
Royal Welsh Show, Llangollen Food Festival, Conwy
Feast, Liverpool Food Festival, the Welsh Food Festival
and the Wirral Food Festival.
Steffan won the Welsh
Regional Final of
FutureChef in 2011. Prior to
completing his ‘A’ Levels, he
applied for an apprenticeship
at Gidleigh Park and was
fortunate to be offered the position.
The experience he is gaining working
alongside Executive Head Chef Michael Caines
is very valuable and enjoyable.
Through his participation with FutureChef, Steffan
has gained valuable work experience in various
restaurants including Gidleigh Park, Guernsey’ Y
Polyn and many more. He has also worked at a
number of events including RHS Hampton Court
Palace Flower Show National, Big Welsh Bite
and recently at the ExpoWest Festival in Exeter.
Whatsmore he has also appeared as a chef on
the Welsh TV programme ‘Pynhawn Da’.
Luke has now launched Luke’s Dining Room, at
Sanctum on the Green, making him England’s
youngest head chef at just 19 years old.
Conor McClean
Conor was Runner Up at the FutureChef National Final in 2010 where he competed
against 7,864 competitors. After Conor competed at the National Final, his momentum
to become a chef continued to flourish and he competed in ITV’s Britain’s Best Dish in
2011 and was crowned overall winner - a remarkable achievement for one so young.
The Savoy realised Conor’s potential and offered him an apprenticeship in September
2011. Over the past 18 months Conor has been rotating through the kitchens at The
Savoy Hotel learning and developing his culinary skills.
Kieran Paterson
The Introduction to Hospitality
programmes Springboard
runs are designed for young
people who are lacking support
and direction in life. The purpose
is to open participant’s minds to
the potential of hospitality as a career
and support them into the next steps. This
pipeline approach to providing advice guidance
and training could be not be more evident than
in the case of Kieran Paterson, 16, from Lockerbie
Academy, who was drifting along with no
motivation. After the introductory programme, he
was so inspired he went on to win the 2013 South
Scotland Regional final of Springboard’s FutureChef
competition and was runner up in the National
Final on March 18th 2013.
Leo Hacker
Thanks to FutureChef, Leo
managed to secure an
Apprenticeship at the Royal Garden
Hotel in Kensington after meeting a
judge at the final. He has since judged at
the Wales regional final and will be a participant at
Cardiff’s Big Conversation.

be associated with the organisation when the
rewards, experience and offers of further work
placements are more than plentiful.

Leo said he wouldn’t have had such opportunities
had it not been for FutureChef, not only has it given
him the confidence to pursue his dream but the
support and contacts to make it achievable.

Into Work: London
Galvin’s
Chance
Springboard’s partnership with Hilton in the
Community Foundation and Galvin’s at Windows has
provided opportunities for another 20 young people
in London at risk of gang culture, gun and knife crime.
This year’s programme was the most successful yet
with 17 completing the work placement and, already,
14 have been placed into employment with a further
two awaiting outcomes. There is also the opportunity
to commence an apprenticeship scheme.
Prince Annan

At only 20 years’ old, Prince came to Springboard
with a prison record and lack of any real work
experience. Determined to turn his life around, he
needed help with his confidence and skills.
Being part of the group training, Prince felt he was
a world away from the life he’d known before and,
following the completion of his work placement at
the Royal Automobile Club, he was offered a full time
commis waiter position.

outside. Now I feel part of
something. If I hadn’t done it
I’d be dead – I really believe
that, ten of my friends have
died. I’m now a stronger
person with something to live
for, thanks to Springboard.
The Clink
“

”
The Clink Charity is doing amazing work to rehabilitate
offenders and give them training, qualifications and
real experience of serving real customers through The
Clink Restaurant. The first training restaurant at HMP
High Down in Sutton was the brainchild of Alberto Crisci
and he is now spearheading with Chief Executive, Chris
Moore, the expansion in Cardiff, Brixton and Sodexorun Bronzefield. Springboard’s partnership with The
Clink Charity contributes the vital mentoring services
to graduates starting 12 weeks prior to release and
continuing beyond the prison gate. The ultimate aim is
to reduce reoffending rates from the current 49% who
reoffend within a year of release and 62% when the time
served was less than a year. Springboard is currently
supporting 15 graduates, with 3 securing employment
since December 2012 and no re-offending during
this period. It is anticipated that 50 graduates will be
released between January and December 2013.
Michael Tanner
Michael was released from prison after graduating from The Clink restaurant within HMP High
Down. Serving his second sentence, Michael blamed his lack of education and offences
on his unstable upbringing. Upon his release, Springboard provided support and mentoring,
arranging a trial shift at the Grosvenor Victoria Thistle Hotel for a Meetings and Events position.

Michael has since started work full time and is loving every minute of it, as he turns his life
around for him and his young family.
Accor Foundation Funds Hospitality Futures Programme
Last year, the new Hospitality Futures
programme was launched by Springboard
in partnership with Accor and its Foundation.
This programme aimed at disaffected young
people involved a 5 week training programme
which
included
motivation,
interview
techniques, team building activities, and in
depth preparation for various roles in hospitality.
In the first year, 20 young people started the
programme with 15 making it through to
successfully complete their work placement
and, so far, 11 have secured employment.
The programme has been so successful, that
Accor are considering funding it again and in
future looking to expand to other areas.

Hotel GB
“
Televised last Autumn on Channel 4, Hotel GB saw 14 young trainees
from disadvantaged backgrounds, put through their paces by Gordon
Ramsay and Mary Portas at the specially converted Bermondsey
Hotel. As the beneficiary Charity, Springboard has been providing
support and mentoring for the trainees involved to help them benefit
from their experience and continue to progress in the industry. It has
not been easy for them, but we have succeeded in securing great
opportunities for eight of them, with another person about to accept
a job and are working hard to engage with the rest to support them
too.

Philip had a difficult childhood and, after falling out with his family, left home to stay on friends’ floors. At 16 he
was selected to take part in Hotel GB and underwent a week of intensive work experience with Gordon Ramsay.
This experience gave him the focus to want to be a chef and, with Springboard’s help, Thistle Hotels have offered
him an apprenticeship. Keen to develop his skills as a Springboard Ambassador, Philip has already presented on
stage at the Big Conversation!
Helping Homeless People into Work
With funding from the Sleepsmart/
Streetsmart ‘£ on a bill’ Charity,
Springboard is helping people
who are either homeless or at
risk of homelessness into work
and financial stability. Working
with Crisis and New Horizons,
Springboard has supported
15 people this year and got
nine of them into sustainable
employment.

Morgan Lee
Morgan was homeless and jobless until he was referred to Springboard from
New Horizons Youth Centre.
We provided mentoring and organised an interview with Premier Inn where
Morgan was offered the role of a Food & Beverage Assistant.
”
Funds raised through SleepSmart will allow Springboard to continue to offer
mentoring and support.

I would just like to thank Springboard for the opportunity, I don’t
think you understand how much of an impact you made on my life.

Mario was interested in becoming a chef but had no qualifications or experience in this field. He just knew that he
loved cooking and wanted to learn. He needed help and Springboard created an Individual Learning plan for him
to help him understand the realities of working in a kitchen.
Via taster days and trials – Springboard worked with him to increase his confidence and improve his skills. As a result
of this 1-2-1 training, Mario has started work as a chef apprentice at Zaika in Mayfair and will be undertaking an
apprentice in professional cookery.

South Scotland
IWiSH Perth
Perth will play host to 13 candidates recruited from
a Hospitality Showcase Day on 4th March at Perth’s
Salutation Hotel. The programme will start on 25th
March and provides participants with certificated
qualifications in Basic First Aid, Elementary Food
Hygiene, Customer Care, Health & Safety and Staff
Working in Scottish Licensed Premises.
The programme will be funded by Perth and Kinross
council and Jobcentre Plus. Springboard meet all the
candidate’s costs including travel and any special
clothing requirements. Employers have no extra cost
and gain the advantage of having potential new
staff members on a four week trial.
Highlands & Islands
Springboard’s IWISH programme, (Into Work in Scottish
Hospitality), is a flexible programme which introduces, trains
and inspires new staff to find careers in hospitality, tourism
and leisure.
The Scottish Highlands & Islands have a dynamic tourism
industry which often struggles to recruit the best staff.
There is also a high proportion of unemployment, many of
them young, who have simply never considered working
in hospitality, tourism or leisure. Springboard continues to
bridge the gap by introducing the unemployed to career
opportunities in the sector and supporting them as they
find their way to a new career and life. Businesses gain
appropriately trained staff through offering supported, work
placement opportunities. Everybody wins!

Upon completing the IWiSH programme one beneficiary
and single parent Steven gave a speech on behalf of the
group at a celebratory lunch attended by prospective
employers. He impressed so much that the GM of Smiths
Hotel approached him with the offer of a role as part time
night porter.
Hospitality Works initiative
with Fife Jobcentre Plus
The New initiative aims to better connect Jobcentre staff,
claimants and employers to Hospitality – showcasing
opportunities through a two-week themed Hospitality
Framework. The programme:
• Gives JCP staff insight into the Hospitality Sector and
the excellent opportunities it has to offer.
• Gives claimants access to jobs, training or other
opportunities within the Hospitality Sector.
• Challenges misconceptions about the Hospitality
Sector.
• So far, Springboard has delivered hospitality
presentations to 40 advisers within Fife and organised
interactive industry visits for JCP staff including visits to
The Seafood restaurant, St Andrews University, Fisher
and Donaldson’s the bakers and the Old Course Hotel.

Natalie MacKenzie
Natalie had never been employed since leaving school at
14 years old and was residing in homeless accommodation
in Inverness.

Thanks to the progress she has made through the IWiSH
programme Natalie is relocating and has gained part time
work at the Caledonia Bare where she is thoroughly enjoying
her new role.
Skills Development Scotland
Supports Into Work Activity
Springboard Scotland has secured funding from the
SDS Challenge Fund to run a pipeline of activity which is
already having a significant impact.
Hospitality Showcase Programmes
An interactive short programme to open people’s eyes
to the variety of opportunity in the industry. So far, 86
people have benefited from programmes in Glasgow,
Dumfries & Galloway, North and South Ayrshire – with
more to benefit from similar programmes in Edinburgh,
Glasgow and Fife. Many of the participants have gone
on to join the Hospitality Futures, FutureChef or Our
Restaurant Programmes. The pipeline in Action!
Our Restaurant
This innovative programme is aimed at disaffected
young people and is specifically designed to use
techniques that are immersive and bonding and
stimulate interest. Our Restaurant focuses on self–
development, self-belief, celebrates progression, yet is
flexible enough to allow participants to undertake all
or any part of the programme. An aftercare service
offers individual support to any of the young people for
up to 3 months post programme. Three programmes
are currently running with 12-15 people on each. If
the success of previous Our Restaurant programmes is
repeated we can expect to see more people benefit
from employment opportunities.
Hospitality Futures
A development programme that provides a stepping
stone to employment. Each programme helps 15 people
progress into the industry – Springboard is currently
running programmes in Edinburgh, Dumfries & Galloway,
North and South Ayrshire with Glasgow just about to start.
Let’s Cook
Let’s Cook is funded by the Big Lottery Young Start
Fund and targets young people with no meaningful
connection with their local communities and who
are disengaged from school. In short, they lack
direction, lack good role models, and tend to come
from a background of poverty and deprivation
which has exacerbated their isolation and the
chances of employment are extremely low.
Let’s Cook runs over a 10 week period and is
practical, engaging, interactive and combines
skills development with experience in professional
kitchens as well as ‘soft skill’ development. The
programme culminates in the team hosting a
celebration reception for guests – where they are
presented with their Certificates of Achievement.
It doesn’t stop there, as Springboard is on hand to
help participants use the skills they have learned to
get jobs.

career I have never had trainees who are so
enthusiastic about a programme or course!
Into Work Summary
”
Fife
The programme ran in partnership with Adam Smith College,
with weekly involvement from one of their top chefs Scott Lyle
and Chef Demos by Joe Queen. Industry involvement includes
Fisher and Donaldson’s the bakers, The Seafood restaurant in
St Andrews, the Fairmont Hotel, Rufflets and Prestonfield House
in Edinburgh. Five of the eight have applied to Adam Smith to
continue their newly found love of the world of hospitality.
Irvine
Ran in partnership with North Ayrshire Council and Chefs from

Nationally, there has been considerable growth with our Into Work programmes and outstanding conversion
rates, but given the cohorts we are supporting, the programmes have not been without their challenges. Some
of the candidates have multiple and serious issues to deal with which mean that we are now having to review
the training, development and support we give our teams as well as expanding the number and type of partners
we work with. In particular, we need to build stronger links with bodies that support alcohol, drug and substance
abuse; anger management & other behavioural challenges; those who have more serious criminal convictions.

Trekking for Charity
Peru Trek 2012
In October 2012, Springboard’s Chief Executive, Anne Pierce,
embarked on a challenge to travel to deepest darkest Peru,
and trek the remote Lares Trial to Machu Picchu. Alongside
11 other trekkers from organisations including Sodexo,
Compass Group, Nestlé Professional and Venners, the group
together successfully reached the summit, all in aid of raising
vital funds for the charity’s Into Work programmes!
Faced with an unpredictable climate, this gruelling trek
involved climbing three mountains to heights in excess of
4000m and camping in remote Peruvian villages to finally
reach the summit of Machu Picchu.
David Fitzgerald, Director of Business Development at
Venners described the experience as an “amazing, life
changing adventure that I will never forget” and gave
praise not only for the chance to give something back to
the hospitality industry, but for the opportunity to meet and
network with other industry professionals. This intrepid group
should be very proud of themselves for raising £48,276.
Nepal Trek 2014 1st - 11th March 2014
Building on the tremendous success of the 2012 Springboard Trek to Peru, a
tenacious group of Springboard supporters will embark on a philanthropic
challenge to Nepal in March 2014. Trekking through the Annapurna region of
Nepal, the group will climb the 10th highest peak in the world. Not content with
pushing themselves to the limit physically, the team will spend their final three
days volunteering with Global Action Nepal in a local school to leave a lasting
legacy.
Keen to utilise the skills of the participants we will be developing and delivering
a training programme that will help guide pupils for years to come! To make a
difference to young lives both here and abroad, enrol today for the adventure of

Fly with the Lancaster Bees!
In June last year the Lancaster London played host to the daredevils of the hospitality industry and allowed sixty
adrenalin seekers the chance to ‘Fly With the Bees’, by abseiling down the side of the 200ft high hotel, all in support
of The Springboard Charity!
The challenge caught the attention of industry with entries from the likes of The Brookwood Partnership, Caterer.com,
BHA and Talkington Bates who raised a grand total of £14,552 for Springboard’s Kickstart programme. If you missed

A Night to Dine For
Annual Fundraiser 15th July 2013
Following the record-breaking success of our 21st Anniversary celebration in 2011,
Springboard is delighted to confirm that the Annual Major Fundraiser will take
place on Monday 15th July at Park Plaza Westminster Bridge. This unique event will
have everyone talking!
Follow the clues for more information on this mysterious event, which boasts a
number of surprises and isn’t for the faint-hearted! Springboard presents “A Night to
Dine For” – which is sure to set pulses racing and shock waves around the industry.
Team Velo Challenge
19th - 21st September 2013
Following on from the success of their London to Paris
Cycle Ride last year – Genuine Dining Company have
initiated the ‘Team Velo’ Challenge. The aim is to
attract teams of 4 cyclists to compete in this cycling
competition from London to Paris. Accor Hotels are
supporting the event through their Pullman brand
(Pullman Euston to Pullman Eiffel Tower) and will host
the reception to present prizes to the winners in Paris.
Budding cyclists should get in touch to enter their team
and start fundraising for Springboard. We suspect that
this could get very competitive.
Hospitality Industry Regatta
2nd & 3rd September 2013
Teams from top industry organisations are again urged
to compete for the coveted 2013 Profile Sailing Cup.
Last year, light winds and beautiful sunshine on the
Solent gave for relaxing racing and Small Luxury Hotels
took the top spot after finishing first in two out of three
races. The accompanying dinner and auction at The
Royal Yacht Squadron raised over £10,000 for The
Springboard Charity and Sail 4 Cancer.
The Hospitality Sailing Regatta is a unique and
valuable team building, morale boosting, effective
networking and fun event. There are benefits all round
as Jurgen Sutherland, General Manager and Area
General Manager, Heathrow Hilton attests:

Funding Springboard
Springboard derives its income from a portfolio of
income streams:

The funding strategy needs to generate sufficient funds
to more than cover the cost of delivery of each element
of the business plan as well as contributing sums to
the organisation’s reserves. The Business Plan aims to
generate £500K reserves within its three year cycle and
at year ended 2012/13, the Balance Sheet will show the
Charity is on target with reserves estimated to be £240K.
In addition, in kind support is vital to the funding mix
as it provides a means to raise additional income or a
means to reducing cost.
