Spring Luncheon
Back by popular demand, we will hold our spring luncheon at the Lakeview Inn on Lakeview Road (turn across
from Leptondale Deli on Route 300), in Newburgh on Wednesday, May 11th. There is no set price. You will
order off the menu and pay only for what you order (plus tax and an 18% gratuity).
We are seeing a few more secondary colleagues, but it sure would be nice to have a presence from the high
school! The setting is lovely and the company is fun so mark your calendars and join us!
Drinks will be available at 11:30am and a sit down lunch (of your choice) will follow at noon.
Looking forward to seeing our regulars as well as some new faces! It’s not too late! You still have time! Come on!

ZIKA VIRUS!
We’ve written about protecting yourself against lyme disease, being on
the lookout for brown recluse spiders, and considering possible vaccines to
keep you extra safe when traveling. And just when we thought it was safe
to venture out… the Center for Disease Control and Prevention (CDC)
sends out an alert on the Zika virus!
The disease is caused by the Zika virus and is spread through daytimeactive Aedes mosquitos. (The name Zika comes from the Zika Forest of
Uganda where the virus was first isolated). Like the spread of most
diseases, travel and global trade have spread the virus to many countries
including the United States.
In many cases there are no symptoms or very mild symptoms such as
fever, rash, joint pain and red eyes, and may last a week.
There is some evidence that once you have been infected, it can be
spread sexually by the male partner. In January 2016, the US CDC issued a
travel guidance on affected countries, including guidelines for pregnant
women including consideration of postponing travel. In 2015, there was
some evidence of birth defects in pregnant women who were infected with
the Zika virus indicating that the virus had crossed the placenta and could
have caused the infection (“Possible Association Between Zika Virus
Infection and Microcephaly,” Morbidity and Mortality Weekly Report,
January 29, 2016). As of March 2016, the CDC updated its
recommendations about the length of precautions for couples with men
who have confirmed Zika fever or symptoms of Zika; couples should
consider the use of condoms for at least 6 months after symptoms begin.
This includes men who live in or travel to areas with Zika (“Update:
Interim Guidance for Health Care Providers Caring for Women of
Reproductive Age with Possible Zika Virus Exposure,” Morbidity and
Mortality Weekly Report, March 25, 2016).
Although researchers are working on creating a vaccine to protect us
from the Zika virus, there is no vaccine available at this time.
This all sounds a bit unnerving. However, the above information may not
apply to everyone infected by the virus. This is NOT medical advice! If
you have any questions about any medical condition, including
precautionary measures you might take when traveling in foreign
countries, you should seek medical advice from your health care provider.

Reflections: Doobie

His name was Waldo Dubberstein, but we called him Doobie. He was on leave from the University of Chicago where he had
specialized in Libya. During the time I worked for the US Army Security Agency, he was the supervisor of the Japanese code I
worked on.
Our unit was isolated in a long wing of a temporary building in Arlington, Virginia. Within that space, there were no walls.
Except for the cryptographers and translators, we worked at long tables along the walls separated by a wide middle aisle for
traffic. As supervisor, Doobie roamed around this space. Ever the professor, he spent a lot of time talking to the older girls who
had started with him at the Pentagon.
One day we had a party, and I was one of four younger girls who formed a chorus, and, with arms interlocked behind our
backs, we rocked and sang to the tune of the current war song, "Bell Bottom Trousers" (http://youtu.be/Sy7mwe7VOeM). The
older girls had added the words:
"I am here to tell you,
If you want to catch a man,
You must all be thinner,
and you really can."
Men like women thinner,
Doobie says it’s so.
And he really is one,
So he oughta know.”
One day, Doobie was talking near me about a current news article. The parents of a very sick child were refusing medical care
because of their religious belief. I heard Doobie comment: "All religions are fairy tales." A recent graduate of Catholic schools,
you can imagine how shocked I was.
When the war ended, I returned to New York. Not long afterward, I received a telegram from Doobie, inviting me to return and
work on the Russian code, but I wasn't interested.
Many, many years later, I was vacuuming the parlor rug and the evening news was on. I thought I heard the words, "Waldo
Dubberstein." No two people could have that name!!! Quickly, turning off the vacuum cleaner, I heard the shocking news.
Wadlo Dubberstein was dead. That morning he had been due in court to be arraigned for crimes linked to an infamous spy,
Edwin Wilson. When he did not appear, the judge sent deputies to get him. They found him dead in the garage, a shot gun at his
side. He had left his wife of many years and was living with a 32 year old East German woman who once worked in Iran's
diplomatic mission at the time of his death.
Over the years many stories of Waldo Dubberstein have been added to the internet, as well as several of his treatises (available
to read if you are interested). But
this may be the only story of
“Doobie" - and only Wallkill
Retired Teachers have read it.

Defensive Driving This Spring!
It’s back! A spring WTA Benefit Trust Defensive Driving course will be offered at the WTA building on Route
44-55 on TUESDAY, May 31st and THURSDAY, June 2nd. The cost is $40/person which is fully refundable
to our retirees and their qualified dependents upon completion of the course. A light dinner will be offered
from 5:00-5:30 and the course will run from 5:30 to 8:30 both nights. Checks should be payable to: WTA
BENEFIT TRUST. $40/person must accompany the registration. Refunds will be given for cancellations up to
five days prior to the course. After this date (May 26th) refunds will be given only if the seat can be filled. Space is
limited. Seats will be filled on a first come, first served basis. Registration confirmation will follow as I receive

the Classic Movie Series on MAY 7th at the Historic
Paramount Theater on North Street in Middletown,
NY. It will be played for 40 minutes before the movie,
The Wizard of Oz, is presented at 1:00 pm. The person
playing will be our very own, Lowell Sanders! Many
people may know that Lowell’s volunteer project for
the last 30 years has been installing, maintaining,
tuning, and even playing this incredible theater pipe
organ. Most of the time, professionals are paid to play
formal programs. But for movie “play-ins,” lay people
are asked to play. “The instrument has a real beautiful
orchestral sound in this setting,” says Lowell. If you
want to hear it played by Lowell, come alone or bring
the family and have fun! “The music will be mostly
popular songs from Broadway musicals and
Hollywood movies including The Wizard of Oz,” says
Lowell. Tickets are $5, and you can get fresh made
pop corn too! A fun afternoon for all.

Some Favorite “Facts” That Are False!
(Taken from Reader’s Digest, September 2015, by David
McCandleuss from INFORMATIONISBEAUTIFUL.NET)
1. Don’t Eat and Swim: This doesn’t increase the risk of
cramps; alcohol is the biggest risk increaser. But a full
stomach will make you short of breath.
2. Oil Stops Stuck Pasta: Nope; it’ll only make it greasy.
Stirring prevents sticking.
3. Three Wise Men: Nowhere in the Bible does it specify
that there were three.
4. MSG=Headaches: There’s no scientific proof— just
anecdotal evidence implicating monosodium glutamate.

6. Vaccines Cause Autism: Groundless fears based on

warmth. It can actually drop core body temperature.

Poor or rowdy behaviors still occur in children with
sugar-free diets.
13. Shaving Thickens Hair: Regrown hair isn’t thicker,
coarser, or darker; it just appears so because it grows
back with a blunt tip.
14. Caffeine Dehydrates You: Not really. The diuretic
effect of caffeine is offset by the amount of water in a
caffeinated drink.

Recipes From Me to You
Poor Man's Beef Wellington
Apple Pie Roll-Ups

Serves:
12 to 14 servings
Ingredients
1 pound ground beef
2 Tbsp. unsalted butter
1 ½ c chopped yellow onions ½ lb mushrooms,chopped
2 Tbsp. minced garlic
¼ tsp. dried thyme
2 tsp. Essence, (recipe follows) 1 large egg
1 Tbsp. Worcestershire sauce
½ tsp. salt
½ tsp crushed red pepper flakes 2 Tbsp. water
2Tbsp tomato paste
Mashed potatoes, (recipe follows)
1/4 cup heavy cream
¾ c diced smoked Gouda
2 sheets puff pastry
1 c grated sharp cheddar
Directions
Preheat the oven to 400 degrees F.
In a large skillet, cook the beef, stirring, over high heat until no
longer pink, about 5 minutes. Add the onions, garlic, Essence,
crushed red pepper and 1/4 teaspoon of the salt and cook,
stirring, until the onions are soft and lightly caramelized, about
7 minutes. Add the tomato paste and heavy cream and cook
until the cream is evaporated, 1 to 2 minutes. Remove from the
heat and spread on a plate to cool.
In a large skillet, melt the butter over medium-high heat. Add
the mushrooms, thyme, Worcestershire and remaining 1/4
teaspoon salt and cook, stirring often, until most of the liquid
has evaporated, 8 to 10 minutes. Remove from the heat and
spread on a plate to cool.In a small bowl, beat the egg and
water to make an egg wash.
On a lightly floured surface, 1 at a time, roll the puff pastry
sheets to an 1/8-inch thickness, about 11 inches square. Cut
each sheet into 2 rectangles. Spread 1/4 of the cooled mashed
potatoes along the lower third of the pastry, leaving a 1-inch
border on 3 sides. Top with the beef and the mushrooms, then
sprinkle the Gouda cubes over the top. Brush the sides with
egg wash and fold the pastry over the filling to completely
enclose. Press to seal the edges and with the tines of a fork,
press to seal tightly. Transfer to a large baking sheet and paint
with the egg wash. Cut 5 small steam vents in the top of the
pastry. Repeat with remaining ingredients.
Bake until starting to turn golden brown, 15 to 16 minutes.
Sprinkle the top with the cheese and bake until the pastry is
golden brown and the cheese is melted, about 4 minutes.
Remove from the oven and let rest for 5 minutes. Transfer to a
large serving platter, slice and serve hot.

(Preheat over to 375. Line a baking sheet with parchment
paper).
1 package Pillsbury Crescent Dinner Rolls
1 Granny Smith apple, peeled, cored, sliced into 8 (½ inch)
pieces
3 T butter, melted
⅓ cup packed,
brown sugar
1 tsp. apple pie spice or cinnamon
⅓ cup chopped walnuts (optional)
1. Combine brown sugar and apple pie spice.
2. Place sliced apples into melted butter, coating all sides.
3. Open crescent rolls, separate, and lay flat.
4. Sprinkle sugar mixture over each triangle. Add chopped
walnuts if desired.
5. Place one apple slice at wide end of triangle and roll up.
Brush with remaining melted butter and sprinkle a little
sugar mixture on top.
6. Place on parchment lined baking sheet. Repeat with each
crescent roll.
7. Bake 10-12 minutes until rolls are a deep golden brown
and apples are soft. Cool 5 minutes on wire rack and serve.
This recipe is easily doubled and delicious served warm!

Glazed Pecans by Kathleen Conner
(Not only are they delicious, but they make a great gift)!
4 cups pecan nuts
1 egg white, beaten
½ cup sugar
1 ½ Tbsp. cinnamon
¼ tsp. salt
1. Mix nuts with egg white.
2. Mix last three ingredients together in a plastic bag and
shake.
3. Place coated pecans in bag and shake.
4. Heat oven to 300 degrees.
5. Place coated nuts on a baking sheet, preferably one
covered with baked parchment.
6. Place in oven, and stir every 10 minutes (or more
often) Total cooking time: approximately 30 minutes.
7. Cool and store in a tin or plastic bag.

Recipes From Me to You
Mashed Potatoes:
3-4 lbs. Idaho potatoes, peeled and cut into large dice
3/4 tsp. salt
6 T heavy cream
2 T. unsalted butter
1/8 tsp. white pepper
1 T. minced fresh parsley
In a medium saucepan, combine the potatoes, 1/2
teaspoon of salt, and enough water to cover by 1 inch.
Bring to a boil and cook until just fork tender, about 12
minutes. Remove from the heat and drain. Return to the
pan and cook for 1 minute, mashing with a potato masher
or heavy whisk over medium heat. Add the cream, butter,
remaining 1/4 teaspoon salt, and pepper and mash until
smooth. Mix in the parsley.
Remove from the heat and spread on a plate to cool for
the Wellingtons. (Note: the potatoes can be made in
advance and refrigerated until ready to use in the
Wellington recipe.)

Pineapple Upside Down Cake
1 tsp. melted butter
1 to 2 T. brown sugar
1 pineapple ring
1 maraschino cherry
6 T. BASIC Mug Cake Mix*
4 T. pineapple juice or water

Spray measuring cup with nonstick
cooking spray.
Place butter in mug and top with brown
sugar. Place pineapple ring over sugar
and place cherry in center.
Stir cake mix and juice until blended.
Carefully pour over pineapple.
Microwave on HIGH 1 minute or until
toothpick inserted into center comes out
clean. Add time of necessary. Let stand 1
minute before inverting onto a plate.
EDITOR’S NOTE: T.= tablespoon

Emeril’s Essence:
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 T. black pepper
1 T. onion powder
1 T. cayenne pepper
1 T. dried leaf oregano
1 T. dried thyme
Combine all ingredients thoroughly and store in an
airtight jar or container.
Yields: about 2/3 cup
Chocolate Chip Cookie in a Mug
1 T. melted butter
1 T. sugar
3 drops vanilla
1 egg yolk
2 T. chocolate chip
1 T. brown sugar
pinch of salt
¼ c. flour
Combine all ingredients, top with chocolate
chips. Cook in Microwave 40-60 seconds.
Enjoy!

*Basic Mug Cake Mix
1 pkg. (about 15 oz.) cake mix, any flavor
1 pkg. (16 oz.) Angel Food mix
• Combine dry cake mixes and put in
air tight canister with a lid.
To make cake:
Combine 3 T. dry mix and 2 T. water and mix
well.
Microwave on HIGH 1 minute. (This might
have to be adjusted based on your
microwave.)
Variations:
-Add
1 tsp. unsweetened cocoa powder for
chocolate cake.
-Substitute cold coffee or fruit juice for water
