Chef Victor Barry, the wellknown owner of Splendido
restaurant in Toronto and
the co-host of Cottage Life’s new television
series, Dining INNvasion, let’s you in on the
secrets he used to makeover the menus of
some of cottage country’s most enduring
inns, lodges, and resorts. His co-host,
Rebecca Wise, is a stylist and designer
who transforms the dining rooms of these
landmarks into updated spaces designed to
accommodate today’s travellers. Find out
how their authentic, stylish menu and decor
changes in cottage country can work for you
when you entertain a crowd at your own
retreat.
Also in the Cottage Kitchen, the everaffable Tony Armstrong of Headwaters Farm
pairs up with Outdoor Canada magazine’s
associate editor Scott Gardner. This tag team
will show you how to prepare your cottage
catch: Scott will demonstrate how to clean
the fish, and Tony will turn it into simply
delicious fish tacos. Jane Rodmell, Cottage
Life’s food columnist and author of countless
cookbooks, takes to the Cottage Kitchen
stage to make lemongrass chicken soup.
And Tawfik Shehata, executive chef of The
International Centre, shares his food journey
from farm to plate as he demonstrates
locally sourced winter salads such as shaved
golden beet, soy bean, and walnut salad.

Director of FOCA (the Federation of Ontario
Cottagers’ Associations) takes a look at

goes! Chris Winney, a realtor from the Land
’O Lakes region, northwest of Kingston,
examines why fall is the right time to consider adding a cottage to your investment
portfolio. James Pitropov, a Muskoka-based
architect, shares advice on building by the
water in his seminar, “Between a Rock and a
Wet Place: Making Sense of Boathouse, Cottage, and Shoreline Construction.” And if you
are thinking of building or renovating your
cottage, don’t miss free expert advice from
a panel discussion featuring three exhibitors
from the log home, timber frame, and conventional building industries.
