With all the diversity of crayfish around the world,
Cherax quadricarinatus is among the most remarkable
species.
Nobility is something the red claw shares with the
other members of the crayfish family. However,
this extraordinary crayfish is especially appreciated
for its size and its remarkable tail. This is why it is
also known as langosta de agua dulce or “freshwater
lobster”.
It is widely known as the red claw crayfish, because
of the eye-catching red patches on the male’s imposing
pincers. Apart from this flamboyant detail, the red claw
is a natural beauty, with a smooth shiny shell with tints
of deep blue to dark green, and at times with a superb
purple sheen.
The red claw’s succulent meat is both firm and delicate
with a slightly sweet touch, an inspiration for the most
mouth-watering dishes. There is no doubt that this crayfish
will soon be one of your favourites.
When cooked, the red claw turns golden-brown to ginger,
a characteristic that connoisseurs of first-class shellfish
appreciate.

As with many crayfish, Cherax quadricarinatus is an
adventurer and has travelled a long way from its original
home in Australia. Our red claw crayfish is caught in the
lakes of Ecuador, right where Northern and Southern
hemispheres meet.
As with all ALFOCAN
products, our know-how and
commitment guarantees the strictest food safety and the
highest culinary quality of our crayfish. The entire production
process follows stringent rules, and our teams perform regular
quality checks on both raw material and finished products.
Far from its native continent – where it is mainly
commercially farmed – the Ecuadorian red claw is
sustainably wild-caught in spectacular natural landscapes.
The live crayfish arrive directly from the lakes in which they are caught.
In no time at all, they are carefully graded and washed. We then cook them
with all the necessary care to preserve their wonderful flavour and consistency.
Here, the local fishermen
use catangas, traditional
traps made of bamboo
canes that allow juvenile
crayfish to escape,
which helps guarantee
sustainability.
Fishing regulations and
access and navigation
restrictions provide
environmental protection
for the lakes, which the
fishermen roam from
shore to shore on their
coloured wooden pirogues.
After cooking, they are immediately cooled before being prepared and deep frozen,
thus guaranteeing the freshness and quality that will satisfy the requirements of the most
discerning consumer – without any additives or preserving agents.
