Named for one of our loyal guests who helped us
create the recipe, our signature top shelf margarita is
made with premium, fresh ingredients. Featuring
Patron Silver tequila, Patron Citrónge orange liqueur
and our house-made fresh agave sour.

Ingredients:
2 oz. Agave Sour
1.5 oz. Patron Silver Tequila
0.5 oz. Patron Citrónge
Salt half of the rim. Combine all ingredients into mixing glass
with ice. Shake vigorously. Strain into glass over fresh ice.

Ingredients:

0.5 oz. Monin Coconut
1 oz. Fresh Sour

1.5 oz. Bacardi Superior Rum
0.25 oz. Pomegranate Syrup
Rim glass with toasted coconut. Combine ingredients 1-2 in
mixing glass then muddle. Combine ingredients 3-5 in mixing
glass with ice. Shake vigorously. Strain loosely into glass over

microwavable safe bowl. Microwave High for 3 minutes.
Allow to cool and pour both the syrup and the sprigs into a
small squeeze bottle. Shelf life is 4 days.

Ingredients: ½ Cup Lime Juice
1 Cup Simple Syrup
Combine ingredients and whisk to mix

Fresh Mixes
Lemon Ginger Sugar Rim
Ingredients:
¼ Cup Sugar
¼ tsp. Lemon zest (finely grated)
¼ tsp. Ground Ginger Powder
Wash lemon thoroughly and dry with a paper towel before zesting. Using a
microplane, carefully zest only the rind and not the white layer underneath. Mix
lemon zest with sugar thoroughly using the muddler to incorporate the essential oils
throughout. Add ground ginger and mix well. Store at room temperature in an airtight
container. Shelf life is 4 days.
Ginger Basil Syrup
Ingredients: 1 Cup Monin Ginger Syrup
½ Cup Fresh Basil (loosely packed)
Microwave Monin syrup for 3 minutes. Macerate (Steep) the basil leaves for 2 hours
covered at room temperature. Strain, bottle and refrigerate. Shelf life is 4 days.
Thyme Infused Simple Syrup
Ingredients:
2 Cups Simple Syrup
5 Thyme Sprigs
Microwave syrup for 3 minutes. Macerate (Steep) the thyme sprigs for 30 minutes,
covered at room temperature. Strain, bottle and refrigerate. Shelf life is 4 days.
Fresh Mixes
Mellow Meringue
Ingredients:
1 Cup Pasteurized Egg Whites
3 oz. Sugar
¼ tsp. White Vinegar
Combine ingredients and whisk to mix completely. Shelf life is 2 days
Toasted Coconut Rim
The coconut must be toasted either in the convection
oven or the pizza oven and stirred frequently until it is
an even golden brown. Store at room temperature in an
air tight container. Shelf life is 8 Shifts/4 Days. Also, in
order to make the coconut stick, you will need to take
your simple syrup and place it in the microwave for 2-5
minutes (depending on the microwave) so that it
thickens as it cools.
