Annual Children’s Hope Benefit a Roaring Success!

On October 2nd, 10 local bands were rocking the
neighbourhood with music, as the 2nd Annual Children’s
Hope Benefit was held at DJ’s Pub and Eatery on Victoria Avenue.
It ran from noon until 2 am, with a great line up of local bands.
Entry to the event, was a mandatory donation of clothing, money
or food for charities.
The band line up included: Training Camp Sessions, The “Kac” himself, On Tic, Out of Exile, Mule Skinner, Battered Egos, Live Bait,
Black Flies, Anti-Social and She King.
Jay and Kris, owners of DJ’s Pub, feel it is very important for the community to give to others with deeper need than most of us. Both
have ties to The Boys and Girls Clubs and are tired of the drug scene and fighting usually associated with bars. Thus, they started this
business with the goal of having a friendly and clean location, to give local bands a chance to be heard. Also, they would also use their
community ties to raise donations for the children.
Last year, the event raised $10,000.00 in clothing and money donations. This year, with more exposure, they hope to raise much more!
The drive continues until December 15th, just call either Jay or Kris @ 905-356-3529, to arrange for pick up of your donations.
The list of this year’s Charities are: Niagara Falls Big Brother and Sisters, Boys and Girls Club of Niagara, The Hannah House, Women’s
Place South Niagara and Ronald McDonald House.
Jay stated: larger organizations have yearly corporate donations, these small Charities need our support locally. They depend on the
smaller drives from all local stores and businesses, the local people and groups, to meet the demand of the children and families.
They choose to support the groups close to their hearts, the neglected charities. Proceeds from the day’s event, would be donated by
DJ’s:10% of drink sales and 50% of food sales.
Bernie Visca, owner of Dawg Pound Tattoos (which has the adjacent parking lot), was donating portions of their day’s sales and the
use of their parking lot for the stage. It was a very co-operative event, with both businesses looking forward to next year’s drive!
The bands were great, playing on a stage and using equipment, donated by Rob Robbins from Live On Request. Rob stated: this is a
great way to give back to the community, both giving the local bands a venue to get exposure and to raise needed funds and clothing
for the children. Winter is fast approaching, the children need warm clothes!
Christie Hails, from the band Battered Egos, was my gracious guide for the evening. She led me around, introducing me to key
people and explaining who each band was. I did not get to hear her singing, as she had already performed her set; but, I look forward
to catching Christie sing at other events, as she is my “insider” to all upcoming events in Niagara! I enjoyed the lively and talented
sounds of The Black Flies, they were playing while I was there. Great guys, the Black Flies! They also
consented to do a little video, which will be hosted on What’s Up Niagara’s web site.
Remember, the Children’s Hope Benefit continues to take donation until December 15th!

The Animals Say Thank you!

Recently, I visited the Welland Humane Society, at the 60 Provincial Street address.
What I found was astonishing! Did you realize that almost all of the necessities to care
for these “lost” animals, if funded by public donations?
Tammy kindly answered my questions and showed me the tenants at the shelter. She
was a great source of information, helping me to understand, why it is important to
consider this subject. Right now, the cat population is overcrowded at the Shelter and the
dogs are one per pen, with no pens unfilled. They have some gerbils and a budgie as well, staying warm in the building. There are
more dogs and cats in other locations around the Region, waiting for their “forever homes”.
The process of rescuing an animal, involves a visit from the Humane staff to the reported location. The costs of pursuing any abuse
or cruelty charges, are not funded by any Governmental departments.It must come out of the publicly donated funds. The Region
has a contract to pay for shelter and care of each animal for only 3 days time. After that, the animal has no funds to provide for it's
care.
When the Humane Society staff visit a location, all animals are taken for rescue, whether they be feathered, scaly or furry. The
Society has housed even lizards, goats and a pot bellied pig! Our animal friends depend on us for food and warmth, everyday.
They need us until they are adopted by a family. Summer does not take away their needs, as the Society can not just let them out
and forget them! The animals are there because they need help, sometimes with Veterinary care and medications. These charges
get very expensive, as anyone that has a pet can attest to.
This is where you and I come into the picture, with donations and caring. The Society needs our help non stop. This summer, there
have been some pretty special children in the community, that raised funds or asked for money and donations for the Shelter, in lieu
of birthday presents, etc. The Society appreciates these little acts of kindness. Without them, they would not be able to show loving
care for the animals! All year long, the Society takes Memberships from us, including businesses and lifetime memberships; which
range from $25-$1,000. These memberships help pay for the balance of caring for animals, including office costs and transportation,
In May each year, the Society holds their Golf fundraiser event. In June, it is the PAWSitive Action Walkathon, gathering donations
for the Emergency Animal Relief Fund. They also hold the Lady and the Tramp event, which raised $4,100.00 this summer for cat
adoption and neutering services. Coming up, is the Christmas Dinner and Auction, on November 13
The Society also holds “sales” on fees required, to adopt an animal friend. For October, the price of adoption of dogs, has been put
on special for $170.00. They have 14 dogs in the Welland shelter and 5 more for adoption in the Port Colborne shelter.
The Humane Society wishes to thank you, for all your caring donations and for all the little ones that are taking their time to help out.

Quick Recipes for the Winter Season
Microwave Garlic Risotto with Spinach and Shrimp
4Tbs. butter
1 cup Italian or superfine rice
1 cup sliced mushrooms
1 cup peeled and deveined shrimp
1 cup chopped fresh spinach
1 onion, chopped
2 cups chicken broth
3 cloves garlic chopped
freshly grated black pepper to taste
Combine 3 Tbs. butter, rice, mushrooms
and ½ onion in an 8 cup microwave
casserole dish. Microwave on high for 3-5
minutes or until onion is soft - stir once.
Stir in broth, cover & microwave on high
for 5 minutes, then at medium for 8 - 12 minutes or
until most of liquid is absorbed. Sauté shrimp, garlic,
½ onion, and 1Tbs. Butter Stir in spinach & pepper to taste.
Serve immediately - Serves 4 Fast and Easy and delicious
German Stollen
1pkg active dry yeast 1 cup seedless raisins
¼ cup water
¼ cup currants
1 cup milk scalded ¼ cup chopped mixed candied fruits
½ cup butter
2 tbls grated orange peel
¼ cup sugar
1 tbls grated lemon peel
1 tsp salt
¼ cup blanched chopped almonds
1 tsp ground cardamom
4 to 4and
½ cups sifted all purpose flour
1 slightly beaten egg
Soften active dry yeast in ¼ cup warm water.
Combine milk, butter, sugar, salt and cardamom:
cool to lukewarm. Stir in 2 cups of flour, beat well.
Add yeast and egg, beat well. Stir in fruits, peels and nuts. Add enough remaining flour to make a
soft dough. Turn out on lightly floured surface.
Knead until smooth and elastic, about 8 to 10 minutes. Place in a greased bowl and turn once to
grease surface. Cover; let rise till double, about 1 hour and 45 minutes.
Punch down; turn out on lightly floured surface; divide into 3 equal parts.
Cover and let rest for 10 minutes.
Roll each part into a 10x6 inch rectangle. Without stretching, fold long side over to within 1 inch of
opposite side. Seal, place on greased baking sheet. Cover, let rise until almost double, about 1 hour.
Bake in a moderate oven 375 degrees for 15 to 20 minutes until golden brown. While warm, brush
with glaze.
GLAZE: Combine 1 cup sifted confectioners’ sugar, 2 tbls hot water and ½ tsp butter. Brush over
stollen while still warm
Mushroom Soup
1 lb mushrooms
¼ cup butter
½ cup onions
1 cup diced potatoes
1 cup finely chopped celery
¼ cup parmesan cheese
½ cup carrots (diced)
1 ¾ tsp salt
¼ tsp pepper
1 Tbs flour
1 cup milk or cream
Rinse, pat dry, and slice mushrooms, set aside.
Heat butter, sauté onions.
Add mushrooms, potatoes, carrots, celery, salt and pepper.
Cover and simmer for 15 to 20 minutes,
Combine flour with 2 tbls cold water and stir into the vegetable mix.
Add3 cups of boiling water.
Simmer for 10 more minutes.
Just before serving add milk or cream.
Sprinkle each serving with parmesan cheese.
(Serves 4)

Painting from My Perspective
My name is Jaswinder Singh and I am a 27 years old paraplegic. I
never thought I would be able to reach that age
considering having 10 operations, and a Doctor with little
confidence I would survive.
Over the years I have tried and struggled to find my place in
today’s world which is designed for the walking and talking
individual. Overcoming some of my accessibility challenges I have
been involved in the day to day business of running our Motel in
Niagara Falls on Lundy’s Lane I graduated from Stamford
Collegiate High School. After high school I worked with
agencies such as Niagara Centre for Independent Living by being
a contributor and I was involved with their youth group for about
ten years.
Working daily at the motel I take breaks and seek the solitude of
my easel and paints. Drawing and painting is what really brings
me joy. Art is a way for me to get away from day to day
responsibilities and to come to peace with my disabilities. I post
my work on social network sites and have received numerous
comments on my work. In doing so I was able to make one of the
most inspiring connections that have made a profound change
in my life. The organizers of TASC Niagara, a non- profit group
that provides drama, music and art programs in Niagara worked
with me to find an art class that was nearby and accessible. They
searched out a local Niagara Artist, Douglas Vaneselstine who
offered me time in his studio and art classes along with his praise
and support. His words and talent have given me the confidence
to paint my images and offer my vision to the world. I was able to
host my own art exhibition at the library and with the March of
Dimes at the Kiwanis location.
Having the opportunity to showcase my work in these venues
was like a dream come true and thanks to Tasc Niagara and
Douglas for their support and guidance I will continue to paint
and explore my emotions and abilities through art.

St Catharine’s Major Atom First Ontario Credit Union Warriors Take Home
the Hardware at Bradford Tournament
The St Catharine’s Major Atom Warriors capped off their first tournament of the year by taking home the Championship Trophy
as well as the Tournament MVP Award to Jake “The Tank” Orr at the Bradford, Ontario Blue and Gold Tournament this past
weekend. The tournament final game victory was a perfect finish for a strong weekend of hockey for the team. The Warriors
started the tournament with a 2-2 tie against the West London with a strong performance in net and first star of
the game the “Rookie” Brennan Gersoile. St Catharine’s were not kind guests to the Bradford Bulldogs in their second game
beating the hosts 2-0. Nathan “Gabby”
Chapman recorded his first career shutout
saving 20 Bulldog shots and being named
the game’s first star. The Warriors played a
strong all around game against the
Bulldogs outplaying them on both ends
of the ice. The Warrior’s defence squad
played solid supporting their goaltender
the whole way. Following the game
Chapman celebrated his shutout with the
team as well as with his mother and father.
Gabby was heard to be saying,
“that’s only the first one” During this game
Zane “the Male Model” Favell took a bad
fall into the boards following a Bulldog
check and left the game with bruised ribs
and forcing him out of the line-up for the
next game against the Aurora Tigers.
Favell’s presence was missed in game 3 as
the Warriors lost to the Tigers 2-1 in a hard
fought battle.
The Warriors had 2 goals disallowed by Ben
“the Reader” Borysko in this game. The
team made it to Super Sunday morning and
faced off against the Bradford Bulldogs again for the second time. The Bulldogs were on the board first but the Warriors countered with a goal in the second and another in the third to take a 2-1 Championship victory home with them! Goal scorers in
the Championship game were Orr and Josh “the Playmaker” Holjak. Holjak ended the tournament with 2 goals as did forward
Brendan “the Natural” Guignard. Orr had 2 goals and 1 assist in the four tournament games to lead the Warriors scoring
attack. It was good to see Favell back in the line-up for the final game, playing with bruised ribs. Favell picked up an assist
on the second goal of the Championship game. Following the game Coach Orr said he was very proud of the effort
throughout the tournament by the team. Once again, the never give up attitude is paying off for the Warriors, as most games they
were behind in goals and came back to tie or win. The Warriors now have a few days off before they start their regular season
campaign this Saturday when Dunnville comes to town at the Bill Burgoyne Arena in St Catharine’s

scale model railroad, the Fenwick Central, is located in

We currently hold Open Houses 4 times a year (November

December 4, 2010, Port Colbourne Santa Clause Parade - The Port Colborne Santa
Claus Parade starts at 6:30 pm in front of Port Colborne High School at the corner of
Steele and Elgin Sts. The parade travels along Steele Street to Clarence; along Clarence
to West Street; West Street to Charlotte Street, turning right on Charlotte St. and ending
at City Hall. After the parade a reception will be held at City Hall giving the children

Port Colborne Museum's Grand Old Christmas Festival
Roasting chestnuts, a carriage ride, Christmas Carols and
a photo with Santa are just some of the popular highlights
of the day at Port Colborne Museum's Grand Old Christmas Festival Sunday December 5th 2010 from Noon4:00pm. While admission is free to the event, donations
supporting the museum are appreciated. The event also
features live blacksmith displays, candle dipping, and

Insider Truths: Sustainability, GMO, Local Food Sourcing, Meat Quality and History

In today’s society, there is a lot of concerns being voiced, on the subject of Local Foods, GMO foods, Hormone Growth Antibiotics in our meats,
etc. I decided to write on this subject, as it truly is worth our investigation and consideration. in light of rises of disease and allergies reported.
I decided to have a chat with a local butcher, Homer Van Dermeer, owner of Homer’s Meats in Stevensville. Homer is a local source for burgers
without fillers, meats without additives, etc. I met Homer when I was sourcing out my own meat supplier, since I can not touch salt, my
youngest can not eat soya and my oldest can not eat MSG. If you have read any labels of late, you will have noticed that even chicken breasts are
laced with Soy Protein Isolates!
Being a “local” for over 36 years, Homer is very familiar with the local Farmer’s Auctions around the Region, such as the Wainfleet Farmer’s Auction Barns and the Hagersville Farmer’s Auction on Highway 6, Hagersville. I can occasionally be found there, purchasing potatoes, squash, apples,
tomatoes and the occasional animal like bunnies. It was of great concern to me, when the Wainfleet Auction shut down last fall, watching to see if
it is re-opened. During the time they were closed, the crowds to buy and sell swelled in Hagersville’s Auction Barn, which illustrated that there is a
local desire for this service. It crossed my mind that it is like a country version of Networking and the Network sudden was cut off without notice.
Homer made it very clear that the way I am viewing the local Auctions, is with my country-raised thoughts, not the reality that is found today.
Long gone are the little reliable local farmers, that provided quality produce, animals and meats! “In today’s small Auctions, you will find “wheelers
& dealers” that shuffle between the Auctions, dragging the same sickly animals back and forth until they are sold. They have no
desire to sell healthy animals, whether for raising stock or for consumption. They do not care about the individual, that wishes to start their own
little mini farm, by buying a few animals as pets or to eat. In today’s reality, the farmers that raise cattle, pigs and chickens, do it on a larger scale to
survive financially. These same farmers, almost extinct in the Region, will not waste time taking their livestock to the local sales. They will head out
to a number of larger Auctions located in: Ancaster, Kitchener, Cook’s Town (near Barrie), Listowell and Brussels. There, the animals being sold are
top quality and no one is playing the “wheeler and dealer” game”.
Homer stated that if someone asks him about buying a cow to raise, he will question their reasons. He stated that he gets calls, from Senior women
and retired Factory workers, that want to raise their own meat in their backyards. Another type of caller, is the ones that go and buy a couple of
acres, in hopes of raising their own foods. He always counsels them “to not do it, they do not realize the work that goes into raising a healthy and
nutritionally sound animal. Having an animal that looks ready for butchering, usually means they are nutritionally lacking, fed only on a bit of hay.
The animals need variety and sound fields to be pastured in, with supplemental grains, etc., for them to meet our nutrition needs. It takes lots of
time, devotion and knowledge to do it right.”
Contrary to being negative on healthy meat issues, Homer stated that “he himself will not eat meats loaded with Implants, Hormones, drugged
or heavily GMO fed animals. He does not know how much influences the GMO foods will make to our bodies, stating it is up to the Scientists to
ensure our safety.” But, Homer can spot animals that are being raised in these manners. He refuses to purchase them and remembers who is the
Farmer selling this type of animal. He stated, “that it is this forced fed type of animal, that is behind the rise in allergies to foods in the population”.
Homer has many years of experience, we do not; making it hard for us to identify issues, if we were to attend a local market.
Next, Homer shared his mind on why the meats in the grocery stores are sold cheap, as well as why there are so many additives in them. Homer
said: “have you ever noticed that fully cooked meats are less expensive than uncooked ones? This should raise red flags in your brain, as any
processing incurs costs. The major meat plants have new ways of preparing meats, it involves cooling the carcasses with water. The water is usually
laced with Salts, Sodium, Carageenan, Phosphates and Proteins like Soya. The reason behind this is: the consumer demand for cheaper meat. When
the animal is “treated” with these solutions, the meat absorbs the water and additives, swelling, to make it weigh heavier than it was upon butchering. When I butcher an animal, it always weighs less”.
This truly is a math equation, as “logic dictates if you take a whole and remove portions of it, you end up with less than a whole, correct? An animal
has many parts that are not used for food: some bones, blood, skin, etc. Taking this away, makes the animal weigh less when processed. The new
methods of processing meat, is ALL about making money and stretching costs, to lower the price of meats as we demand. There is no reason why
they can not process meat in the old ways”. Homer stated they used to use the old ways, when the plants first started up. “It is all about making
money and profits. But, our nutritional health issue are related to these simple changes, showing the results over time.” We have the choice of
making changes for the better, but it will not be found at the grocery store, nor the local Farmer’s Market Auctions.
Homer also stated: “there is no butcher in the world, that has not been accused of “switching” someone’s local grown animal, for a leaner
animal they had. This all is based on the diet of the animal being raised.” To protect himself, Homer now takes pictures of the animals brought in
by locals. In fact, if he has a chance, he will take the person into the cooler to show them a good/health carcass, verses the one they brought. “He
always hopes to get the point across that what you feed the animal, always shows results, upon butchering. If a person was to grow their animal
properly, with space, well tended fields, grains and knowledge, they would be able to enjoy their own meats.” The key, is also directly related to the
amount of room you have to grow them on and also the soil quality that the grasses are grown in. In Port Colborne and
Stevensville areas, you will find a heavy, poor quality clay , which is very hard to grow anything with nutritional value! In Wainfleet, there is
beautiful black sandy loam, from the past peat marshes. “In Wainfleet, you have a chance to raise healthy crops and healthy animals..
Location matters, if you want nutritional foods, when growing or sourcing your local foods.”
I support local food co-ops, community growing farms, etc. But, the points stated by Homer, are all very valid reasons why this latest movement
can not be successful. It takes going back in time to an easier lifestyle and the ways around that time period, to be successful in this movement.
I want to see this work and to be able to find local farmers, willing to sell to me top quality and nutritional produce. Homer brought out many
thoughts and factors, which need to be considered, during any attempts to make this
movement soar! No matter where the foods are grown, the soil must be cared for correctly,
the seeds must be safe from possibly causing disease and allergies and knowledge and devotion
must be acquired. The idea is sound, the logic is great, the desire is awakening... Let’s get the local
consumers’ tongues, asking the right questions and considering the truly important issues.
Then we can proudly say: “it was grown in the Niagara Region”!

The Third Annual Winter Celebration and Holiday House Tour
will take place in Port Colborne on Sunday, November 28, 2010
from noon to 5 pm.
The focus of the event is to raise money for Youth Programs at the
Guild Hall. Last year’s event raised $8,853 and enabled a part time youth co-coordinator to be hired to provide
programs, supervision and an after school for youth.
The main event of the Winter Celebration is the Holiday House Tour!
This year we are happy to feature the Oskam Family Home (formerly Ingleside Bed & Breakfast, across from the
library) along with four other houses throughout the city.
Tickets for the Holiday House Tour are $15.00 per person and will be on sale in Port Colborne on November 3rd
2010.

exchanged for advance purchased tickets (some tickets may still be available at the door).

Local artisans and crafters will be selling and displaying their wares on the upper level of the Guild Hall this year.
