In a dry frypan, gently toast a handful of breadcrumbs. Once golden, tip onto a plate but keep the frypan going and add a splash of olive oil. Add bitesized pieces of pancetta or bacon, and cook for a few minutes before adding a splash of white wine. Simmer until the wine has reduced. Add uncooked broccoli florets and toss until the florets are drenched in the pancettawine liquid and just cooked. Throw in a handful of capers, anchovies and black olives. Keep the contents of the pan moving for a few minutes. Add cooked pasta and mix, so that all the strands of pasta are coated evenly in the mixture. To serve, sprinkle with the toasted breadcrumbs and grate over some fresh parmesan. Enjoy a break from shopping with a coffee at the Market. Sushi Kissaten Hungry for Lemons Like a big warm hug, this simple recipe for lemon delicious pudding will go down a treat on a cold winter night. Cream 60 grams of butter with the grated rind of 1 lemon and 1½ cups of caster sugar, then add 2 egg yolks (reserve whites). Stir in 3 tablespoons of self-raising flour and 1½ cups of milk. Beat the 2 egg whites until stiff and fold into the mixture, with the juice of 1 lemon. Pour into a buttered dish and bake at 180°C for 45 minutes. Serve hot out of the oven. Parsnips Honey-roasted parsnips are the perfect side dish for any roast meat. Quarter and core parsnips before placing on a roasting tray. Sprinkle with salt and pepper and drizzle with olive oil. Roast in a 210°C oven for 30 minutes or until the parsnips are cooked through when tested with a fork. Drizzle over some honey and sprinkle with sesame seeds before placing on the table. Jerusalem Artichokes Grab a crusty loaf of bread and try this filling soup for a quick winter supper. Heat olive oil in a large saucepan and add 800 grams of peeled and chopped Jerusalem artichokes, 500 grams of peeled and chopped potatoes, 2 finely chopped rashers of bacon, 2 bay leaves and some fresh thyme sprigs, then cook over a medium heat, stirring occasionally, for 5 minutes. Add 1 litre of chicken stock and 3 cups of water, reduce heat and cook uncovered for 30 minutes. Before serving, discard the bay leaves and thyme, and season with salt and freshly ground pepper. Pink Lady Apples A piping hot apple crumble is a delicious winter warmer. Peel and core 5 apples, then roughly cut into bite-sized cubes and toss through ½ cup of caster sugar combined with 1 teaspoon of cinnamon, before placing in a buttered serving dish. To make the crumble, combine 1 cup of plain flour with ¾ of a cup of brown sugar, ¾ of a cup of oats, 1 tablespoon of cinnamon, 1 teaspoon of ground nutmeg and 3 cloves in a bowl and mix well. Melt 150 grams of butter and stir through the crumble mixture before evenly spreading over the apples. Bake at 180°C for 35 minutes. Serve with a scoop of vanilla ice cream or a dollop of fresh cream. Warming winter soups to keep you going this winter. You’ll be spoilt for choice thanks to a range that includes new-season Pink Lady, Royal Gala, Golden Delicious, Fuji and Granny Smith apples. Sit down to a steaming pot of juicy mussels from Limnos Seafood (Map #12; Shop 32, Meat Hall). Scrub and de-beard a bag of green mussels before throwing them in a pot with a chopped onion, two minced garlic cloves, a handful of chopped parsley, a bay leaf, two cups of white wine and a generous knob of butter. Cook on a low heat for five minutes before giving the pot a good shake and cooking for a further minute. Ladle mussels and broth into individual bowls and serve with crusty bread. For a quick and easy casserole, head to Jago’s Quality Meats (Map #8; Shop 19, Meat Hall) and get some of their best thick sausages. Perfect with root vegetables and plenty of gravy. Unwind after the perfect winter meal with a glass of liquor from Vital Wine Direct (Map #26; Stall 89–90, I Shed). Place the butter and a drizzle of olive oil in a saucepan over a medium heat. Add the onion and garlic, put the lid on and cook until the onions are soft and translucent. Add the pumpkin and stir to combine. Pour in enough stock to just cover the pumpkin by about 1.5 centimetres. Season well with salt and pepper. Cook at a simmer for 15 to 20 minutes, or until the pumpkin is very tender. Allow the soup to cool slightly, then blend to a purée using a stick blender (if the soup is too thick add a little more stock or water). Taste, and season with more salt and pepper if necessary. Stir in the cream, if using.
