ChambellanProvincial.Therewillbeelectionsatthe
beginningoftheyearfor,notonlythisposition,butfor
allcurrently-servingBaillisandmanyNationalof-icers.
ChaînemembershipintheUnitedStateshasincreased
overlastyearandourregionwasnoexceptionthanksto
thehardworkofourBaillis,whoorganizedspectacular
events.
Beyondlocalevents,ourregionisactivelyinvolvedat
thenationallevel.TheNationalYoungSommeliers
CompetitionreturnedtoSantaRosawherewewere
joinedbymanymembersacrosstheUS.OurRegion
organizedapre-MondialedinneratJohnAshrestaurant
inSantaRosa,bringingtogether30membersfrom
HawaiiwiththosefromtheAspenBailliage.Jordan
Painter,fromKauai,wonourYoungSommelier
competitionandrepresentedourregionwell,butthe
competitionwasoutstanding.Sooutstanding,thatthe
Nationalwinner,MartinSheehan-StrossoftheSan
FranciscoBailliageandMichaelMinaRestaurant,was
namedthebestYoungSommelierintheWorldatthe
InternationalCompetitioninVaduz,Lichenstein.
Wearealsoproudoflastyear’scompetitor,Professionel
duVinChrisRamelb,whocouldnotcompetethisyear
sincethereisatwo-yeartermlimit.However,heshowed
hisprowessandpotentialbyplacing-irstatthe
AdvancedSommelierexaminDallas.Asthehighest
scoringcandidate,ChrisreceivedtheprestigiousRudd
Scholarship.Hedemonstratedmasteryineachofthe
exam’sthreeevaluationareas,earninghima$5,000
scholarshiptowardhisMaster’scourseworkandan
invitationtoattendtheRuddMaster’sRoundTablein
NapaValley,atwo-dayintensivetutorialaboutwine
theory,tastingandservice.Weexpecthemaywellbe
Hawaii’sfourthMasterSommeliersoon,thankstohis
talentandmentoringbyEchansonProvincialPatrick
Okubo,M.S.andChuckFuruya,M.S.
Thisyear’sYoungChefcompetitionandawardsdinner
wasorganizedbyCulinaireProvincialGrantSatoand
Kauai/OahuBailliKathrynNicholson.Five
competitorsfromOahuandMauidisplayedtheir
talentsattheCulinaryInstituteofthePaci-ic,withIan
Sagayagavictorious.Hewentontodistinguishhimself
withabronzemedalatthenationalcompetition,
indicatingthathehasabrightfutureintheculinary
industry.
OneofthegreatpleasuresoftheChaîneissupporting
theseyoungchefsandsommeliers.Thehostofthe
YoungChef’scompetitionisawardeda$5,000
scholarship
fromthe
Chaîne
Foundation.

OureffortstorevivetheDenverBailliagepaidoff!
AllisonAhrenswasinductedintotheChaîneand
elevatedtoBailliintheDenverMileHighchapter.Shehas
hadnumerousverysuccessfuleventsandherBailliage
hasavibrantmembershipof38,anincreaseofmorethan
400%inlessthanayear!
Weattendedthekick-offdinnertotheAspenFoodand
WineFestivalwithChaînemembersMikeandAida
Paulin,AlanCasupangandLisaGrininger.Afterabrief
returntoBoulder,wewerebackinAspenforBailliBarbi
Benton’sannualChaînedinnerattheCaribouClub,which
wascertainlyoneofthebestever,undoubtably
contributingtoitsgrowthto52members,nowwitha
waitlist.
Asforexcitingupcomingevents,theGrandChapîtrewill
beheldinLasVegasnextmonth,sothatreportwillbe
includedinnextyear’sNewsletter.
ThenextNationalMondialemeetingwillbeatTheNines
hotelinPortland,ORfromMay17–21,2017.Excursions
tonearbyWillametteValleyandon-sitetastingswillbe
provided.Weexpectgoodrepresentationfromthe
Hawaii/Paci-icregion,asusual.Iamveryhappytoreport
thatthepercentageofMondialemembersintheHawaii/
Paci-icIslandsregionisthehighestofallregions,at56%,
comparedto41%nationally,thankstotheeffortsofour
BaillisencouragingmemberstoalsojoinMondialewhen
theyapplyforChaînemembership.Aspecialshout-out
toBailliKathrynNicholsonwith100%participation.
Alsoofinterestonthenationalfront,atwo-dayBoardof
DirectorsmeetingwasheldinLosAngelesinJanuary.
Themostimportanttopicwastheproposedbylaw
amendments.ThesewerediscussedinLosAngelesand
followupphonemeetingsoftheBoardofDirectors.Iam
pleasedtosaythattheBoardoverwhelmingly
recommendedapprovaloftheserevisedamendmentsto
themembersoftheNationalCouncil(Baillisandabove).
ChaînerelatedSummerExcursions
AftertheYoungSommeliersCompetition,JudithandI
headedtoColoradotocontinueourusualsummerwith
friends,family,andincreasingnumbersofChaîne
members.Sadly,thiswasthe-irstsummerwithout
ChargéedePresseProvincialeHonoraireJulieHonda.
WehopeBailliProvincialHonoraireFredHondawill
returntoHonoluluinthenearfuture.
Ofcourse,wehopetoseemanyofyouattheGrand
ChapîtreinLasVegasinOctober.
Andwhataboutnextyear’sGrandChapître?TheBoard
hasapprovedreturningtoFrankSinatra’sfavoritetown
sometimebetweentheendofSeptemberandthe
beginningofNovember,2017.It’shardtobelieveitwill
havebeentenyearssincethelastGrandChapîtrein
Chicago,andforthoseofyouwhowerethere,you
rememberwhatagreattimewehad.Thisisacertain
sell-out,sosendinyourregistrationassoonasyou
receiveitnextsummer.

The Young Chefs competition
is always such a celebration of
youthful culinary passion and
energy. It reminds us that even
the world’s best chefs began
their culinary journeys fresh
and hopeful, with unique
stories to tell about what led
them down the culinary path.
The five competitors who vied
for Hawaii/Pacific regional
title on April 16 at The Culinary Institute of the Pacific at
Kapiolani Community College each discovered the kitchen
calling to them in unique ways.
For the competitors, the long day started at 6:00
a.m. when the group assembled, getting their marching
orders from the competition organizer, Culinaire Provincial
Grant Sato. The morning’s creations were assessed by an
all-star group of judges: Keoni Chang, Corporate Chef for
Sullivan Family of Companies; Justin Inagaki, Executive
Chef of Hy’s Waikiki; and Jeremy Shigekane, Banquet Chef
at the Royal Hawaiian Hotel. Chef David Marcelli served as
kitchen judge.
many chefs at all levels were involved! Each course of the
beautiful dinner was designed by a different Culinary
Institute of the Pacific instructor, with student chefs busy in
the kitchen cooking for one of their own, many no doubt with
aspirations to one day compete in this prestigious
competition. Last year’s winner, Melanie Tancino came to
cheer on her young colleagues, and Chaîne members were
privileged to enjoy the fruits of all this creative culinary
energy and to celebrate and honor the up and coming
generation.
Ian Sagayaga handily won the competition. He
knew he was destined for a culinary career even as a teenager

interestingdetourfrom
automotivetoculinary,

John’sinterestfrompursuingengineeringtoa
careerwhere,insteadofworkingwithphysical
structures,hecouldconstructcreativelyinthe
kitchen.Hewouldliketotraveltodifferent
countriestolearn,his-irstchoicebeingFrance.
Eventually,hewouldliketousehisexperienceto
fuseAsianwithothercuisines.

culinaryprogram,graduatinginMay.Comingto
MauibywayofSeattle,andworkingattheFour
Seasons’Spago,Steviedreamsbig.Hewantsto
beacelebritychef.Hisoriginalcareergoalwas
togetadegreeinaccountingandbecomeaCPA,
andhisexactingsidetransferswelltohiscareful
strategicplanning.HeplanstostudyinEurope,
getajobthereorintheU.S.inaMichelinstarred
restaurant,andcontinuetocompeteinculinary
competitions.Heespeciallylikesdoingpastry,
sinceitprovidessolidstructure,butisintrigued
bythemore-luidsidesoftheprofession,suchas
exploringcreativeplating.

Mavro’s-ivediamondrestaurant,soheknows
whatahighbarlookslike.Khanhaspiresto
